the gunk comes out so the soup will be more clear. It applies to other meats used in Chinese soup too. Most of the time we use pork spleen or pork bones. Always boil the meat first to let out all the gunk and blood. You will see the grey foam float to the top. You don't want that in your soup.Then wash it under cold water. Hope this helps

Yes you can use whatever herbs you have, its no problem. Tcm has so many Mix n match recipes. I add brazillan mushroom into my herbal soup last night and it was delicious.

We dont add shaoxing wine into herbal soup.

Not lotus seeds....they're fox nuts.
It's lotus seeds with skins. Fox nuts are different n smaller in size.
