This recipe will be perfect if dates are pitted and sugar and chicken flavor enhancer are skipped . Use good quality chicken. Tempering ginger and some green onion in very little oil at the beginning will give a refined flavor and fragrance to the soup. Adding chicken to it and stir frying will flavor the chicken pieces well before the water is added. Well seasoned Chinese woks are supper nonstick. You don’t need much oil to prevent sticking. You can skip these steps , bring water with flavorings to boiling point and then add the chicken, continue with the recipe.
I'll not fry the garlic & onions cos I like it smiply by boiling the whole thing but I'll wash the dried dates properly and the dried mushrooms before adding to the chicken soup. The taste is just as nice cos the chicken will also produce oil. # the less oil the better for our health.

大概各有不同吧。我们家的老火鸡汤喜欢放冬菇、桂圆、红枣、马蹄增加甜味。 红枣是要去核,不然易上火,也出不了味。
