    Serves 6 - 8 pax

    20g white peppercorns (crushed lightly)
    10g black peppercorns (crushed lightly)
    1kg chicken feet or bones
    4L water
    2 bulbs garlic (with skin on)
    1kg chicken
    15g rock sugar
    1 can button mushrooms
    4 teaspoon salt

    Hi, Chef Roland, I love all of your Recipes! They're all amazingly delicious! I would love to try this chicken soup too but I don't have white and Black peppercorns! What can I replace them with? Can I replace them with whitea and black pepper powders? Another thing is, could you please share some simple and delicious clear or Chinese herbal chicken soup recipe & video please? Thank you.

      Hi Cheryl. So sorry for our late reply. Whole peppercorns are better but if you really can’t get them, powder form is also okay. We have a herbal soup recipe made with pork. Not sure if that works for you. You can replace the pork with chicken th-cam.com/video/0me_6ErkT4s/w-d-xo.html

    Definitely not the chicken soup my mum would make for us as children, but that's the beauty of collecting these recipes from different cultures! My Chinese Mother-in-Law has a unique recipe as well and I am eager to add this particular rendition to my files... could be the new, 'Go-To' for those cold, sick-filled winter days! Yum!

    My wife hates pepper, but I think with her it's the "bits" she hates. I'm going to try this soup and I bet she likes it. Never thought to use a "teaball" for the pepper.

    This is a good soup it’s absolutely delicious and I love chicken feet I don’t put regular chicken in it I just put the feet because that’s my favorite part

    Just a quick question. I like the recipe, but I can not for the life of me obtain chicken feet in my local stores. Can I safely use bones from other parts of the chicken (like for example 1KG of wing flats and tips ) to obtain the same tasting soup?

    Great, now I want some chicken soup and I already made my weekly grocery store run. I might have to make an “emergency” store trip. 😉. Also, no ginger? Seems like that would be a good addition to Chinese chicken soup. What do you think?

    I think I would add green onions in large chunks for flavor and discard before eating. I would also add some celery, but I'm a white girl so what would I know about this? Ha ha. I bet it smelled so good though. My son always LOVES when I make any chicken soup dish, he will literally eat like 3 or 4 bowls (can you tell he is a teenage garbage disposal?).
