  • Many Asian soups are consumed as a partial restorative and linked with theories from traditional chinese medicine. They are many varieties of such tonic soups, ranging from pungent to light in flavor and from savory to sweet. Some soups of the same name may consist of different recipes due to regional preferences or differences. Such soups commonly contain one or more meats (typically pork or chicken ) and medicinal herbs.
This recipe contains the most commonly used herbs which are believed to be mildly invigorating, restorative or immune-stimulating in nature.
The chinese are especially known for their long - simmered soups as they often pair ingredients under chinese medicine concepts to enhance health- benefiting function of the soup.
    INGREDIENTS for the Recipe
    600g pork ribs/ bones
    2 chicken drumsticks
    1 pc dried abalone
    8 cups of water/ 2 liters
    1 handful solomon seal
    6 pieces huai shan
    5 pieces bei qi
    8 pieces dang Shen
    1/2 handful lotus seeds
    15 pieces dried longans
    1 tbsp goji berries
    1/2 handful dried lily bulbs
    1/2 piece tangerine peel
    Method:
Bring 2 liters water to boil. Washed herbs and soak for 5 mins. Parboil pork bones and chicken drumsticks to get rid of scum. When water boils , add all the herbs, pork bones and chicken drumsticks. Lastly add the dried abalone. Let water comes to a boil again for 5-10 mins. Lower to a gentle simmer for 2-21/2 hours. Add salt to taste. It’s ready.

You can think of it as chicken soup when you are sick but much more potent.
It adds vitality (chi) to the body as well and boosts immune system.

if we cook with chicken feet do we fry the feet before boiling or just boil would be fine no odour? my mother only makes soy sauce braised chicken feet so i kind of only know that method when it comes to chicken feet

    • @1228cooking

If you want to boil soup with chicken feet, just parboiled would be enough no odour & then add into soup to be boil for 2 hours. I always do that.
