    Pumpkin pie recipe:
    Ingredients:
    - 1kg / 2.2 pounds Butternut Squash
    - 150g / 3/4 cup brown sugar
    - 1 can coconut cream
    - 3 Tbsp Corn starch
    - 2 Tbsp Cinnamon
    - 1 Tbsp Cardamom
    - 1 Tbsp Ground ginger
    - 1 Tsp Ground clove
    - 0.5 Tsp Ground nutmeg
    - pinch of salt
    - 1 Tbsp neutral oil (like coconut oil)
    - 250g / 1.5 Cups Flour
    - 50g / 1/4 cup sugar
    - 120g 1/2 cup cold margarine
    - 4 Tbsp Water
    - pinch of salt
    Recipe (Inspired by Fooby):
Mix the flour, sugar and salt in a bowl. Add the margarine and rub together by hand to form an even, crumbly mixture. Pour in the water and mix quickly to form a soft dough; do not knead. Flatten the dough, cover and chill for approx. 20 mins. On baking paper, roll out the dough into a circle (approx. 28 cm in diameter), place in the prepared tin. Prick firmly with a fork.
    Blind bake
Cover the dough with baking paper, weigh down with dried beans. Bake for approx. 15 mins. in the lower half of an oven preheated to 180 °C. Remove from the oven, leave to cool slightly, remove the baking paper and beans.
    Filling
Cut pumkin, cover with neutral oil and roast in the oven until fork tender.
Mix the pumpkin with all the other ingredients until smooth. Spread the filling over the pastry base, smooth down.
    Bake
Approx. 1½ hrs. in the centre of an oven preheated to 150 °C /300 F. Remove the pie, leave to cool, cover and chill for approx. 8 hrs. or overnight.

What a gorgeous video! Fall is absolutely my favorite time of the year. I love the colors, the smells, the chilly air. Although it is now January, I agree on keeping your body active indoors even though I do love to walk in the wintery weather as well...such beauty. One of my favorite drinks in the colder weather is a mug of nice warm spiced apple cider. Another thing I love to do is roast fresh pumpkin seeds...so delicious. What a joy to watch your videos. Thank you.

I would recommend buying a sketch book as even if you think you can’t draw it’s an excellent way to start. Taking a daily walk, easy if you have a dog, and notice the little changes in the seasons then take photos and draw a little scene that appeals to you. Maybe use pen and ink or pen and water colour or just charcoal but it’s surprising what you can achieve in a few hours. You also have a record of the minute changes in the seasons that you wouldn’t normally notice. Loved the video!

That is such a great recommendation! Honestly I have never thought about sketching / drawing as I comlpetely lack the skills to do so. But I might aswell just give it a try ☺
For me making these videos and capturing the different changes around me really boosted my awareness of my surroundings 🍁🌳
Thank you for your nice comment!

    Hi Felix,
I just stumbled across your channel and your videos are just lovely 😊 the pumpkin pie looks delicious (i'm glad i prepared some apple tartlettes earlier, otherwise i would be very jealous and hungry now, haha) and i love all the beautiful nature shots, i think you captured autumn, and the changing of the seasons, marvelously. We had our first snow recently, so i hope for another video like this for the winter months 🤗
Regarding the drinks, there is something i do every late autumn / winter: i preserve lemon and orange slices in honey. The vitamin infused honey can be used as a cough syrup and soothes a sore throat, and the honey infused fruit slices make for a super delicious tea ❤ have a lovely weekend!

      Hi Nessa!
Thank you for your super nice comment, made my day ☺🙏 I will definitely make a similar video for the winter season!
I hope the snow you got stayed for some time. Snow is always so beautiful ❄
Your honey recipe sounds absolutely great! Something I will definitely try out for myself.
Happy to have you here and also wish you a beautiful weekend ☺

It was a pleasure watching this video 😌. For me a Chai Latte is the perfect autumn drink 😋

It is -15⁰ Celcius as of this writing. 😊🇧🇻🎄🤣 I make myself a warm cocoa drink then stir with licorice stick. Licorice is an adaptogen and naturally sweet, very good for the endocrine system so I always have some in my spice cabinet. I love to watch birds during fall/winter seasons; or I wait for wild animals to pass by near my house. I also look up the sky and study a constellation plus read the mythology connected to that group of stars.

Love the fact about the licorice! Here licorice is not so popular but I absolutely love it. I like the root but also the candy 😂 -15 is already suuper cold but it must be wonderful at the same time! Love watching birds near the house too, I try to feed them as often as I can. Cheers to the cold north! ☺❄☃

I love pumpkin spice! I make it with a bit of pumpkin puree as well and instead of honey I use maple syrup (sometimes topped off with a bit of whipped cream!) Also love a good chai - I just simmer fresh ginger, cardamon, nutmeg and a cinnamon stick together for a few mins with a black tea bag, then add a bit of honey for sweetness, and vanilla or normal oat milk!
I'm not a huge fall lover, more of a summer person but last few years I've also started to enjoy it. Cozy video!! 😊

Those are two awesome recommendation! Definitely going to give those a try 🤩 Never made my own chai but your recipe sounds great!
I also used to be a spring / summer person (even though the pollen here in the countryside make it a lot harder 😅). Ever since going outside a lot more and accepting that the cold is simply a sensation on the body I like it a lot more☺

The pumpkin pie looks really good. I definitely have to make it 🤗😋 I've recently become obsessed with the "bio cocoa & oat drink" from Lidl and mix it with almost everything 😂

Be careful, this pie can be quite addictive 😄 That's very nice! Will get a carton or two on my next grocery run 🤩

I’ve recently found your channel and have been enjoying your videos, this one in particular. If you get the chance to try rose tea I recommend it. It’s lovely! I’m also wondering how your arm is? I saw on an earlier video you broke the bone. I hope it had healed well.

Thank you for that great recomendation! Next time I go by a teastore I will definitely get a bag of rose tea 🤩 My arm is healing very well, thank you for asking! In everyday life it is all back to normal pretty much and I can slowly start to increase the pressure that I put on it. I still have to be careful not to overdo it 😅 Thank you for your nice comment and being here!
