I put a wrench into things, I have a nut allergy to all nuts. So this recipe is a God send! I've worked with almond flour before (allergy is new). But finding it hard to get into coconut flour. I really want the chicken parmesan or stroganoff tonight.

You're welcome. You can substitute the xanthan gum for psyllium husk powder. So why not use the whole egg but just yolks? Would this dough work with one of those pasta presses (the kind that you load dough in a tube) that makes spaghetti noodles? Thanks for the video.
You're welcome. This dough is thick so it will not work in a pasta press. I only use the yolks because I want the binding power of the eggs without too much extra moisture. The key to this pasta is getting the flour to liquid ratio just right.

You can add the psyllium husk the same way you would the xanthan gum in this recipe. Just make sure it's psyllium husk powder not the whole husk. The powder blends much better
It definitely does not taste the same as traditional pasta but still tastes great with sauce on it. I like to stir dry herbs and seasoning into the dough before I shape it into noodles. This helps balance out any coconut flavor
I have not tried an egg substitute for this and I am not sure if one would work. This dough needs to be a more dry thick dough. If I was going to try an egg substitute it would be flax or chia eggs.
If you're sensitive to coconut flour taste you can add yeast or dry seasonings to balance out the flavor. Personally I don't taste a strong coconut flavor

I have not tried to dry these in the oven. My only concern is coconut flour does not dry the same as traditional flour and it might become too brittle and disintegrate when they're put in the water. Maybe some day I will try drying them in the oven and see how they turn out

ugg i messed up somehow and threw the whole thing in the trash . tried the ratio, then tried a llittle more flour, then even adde3d another y9olk at somet point this is more like leevel 2 or 3 out of 10 for me. and im still level one cooker.
Yes this can be tricky. It took me quite a while to get it just right. The whole key is getting the liquid to flour ration just right and rolling the dough out to the proper thickness

No unfortunately coconut flour can not be replaced by any other flour. It is extremely unique in how it reacts to liquid

You can try but I have not had a lot of success with using a manual pasta maker. This dough is very thick and tends to get caught in the pasta roller

Whats the use of xantham gum
The xanthan gum is what binds all the ingredients together. Without it the pasta would fall apart as soon as it hits the water
