I just made a batch of these, and I'm truly amazed. I'm new to low carb and was a bit skeptical as I've tried a couple of recipes with almond flour and they've been a bit,.. unpleasant. These however, were delicious! I put unsweetened jam and freshly whipped cream on top (like I'd have on a scone). This recipe is definitely going in my 'never lose this recipe' folder. I did add one ingredient to the batter; vanilla paste, because I love a hint of vanilla in my baked goodies. :D Thank you for this. Oh, & we used your carnivore and keto flatbread recipe as a pizza base last night. My hubby is strictly carnivore, so it was perfect for him, and there were no leftovers! So that's another keeper.
Okay, I have to say I didn't use buttermilk, but used heavy cream- that said, I followed everything else, and ohhhh wow! I can't wait to make them with buttermilk. Thank you so much for the egg white tip!
I think so. Keep in mind that buttermilk is much thinner than Greek yogurt. So I would add something to thin it up (maybe heavy cream, milk, or water).
Thank you. It's fermented milk. Through the fermented the milk sugar turns into lactic acid. It's tastes similar to buttermilk but is filled with probiotics.
Hi. Can we use yoghurt or sour cream or cream and lemon juice instead of buttermilk. I like to stay more low carb. Sometimes carnivore. Also, can I use instead of all Almond, a half chicken flour and half Almond flour blend. Have you heard of that? I like your recipes. Your such a happy, mellow person top. God bless.
Thank you! Yes, you can substitute the buttermilk. Try to give the mixture a similar consistency/thickness as buttermilk. Maybe add some almond milk to it if necessary. I haven't heard of chicken flour before.

You can buy them 9r make them by cooking chicken breast and pulverising in a blender and microwaving and repeat until very dry. Or if you have a dehydrator I guess but I don't. She has a video on how to make chicken flour on her channel as well as videos from other chicken flour bakers. What do you suggest as a substitute for buttermilk? The recipe looks good, but I would be wasting a lot of buttermilk since I only cook for myself. Thanks.
@shirleymalar304 Thank you! You could try the following: stir 1 tsp of white vinegar into 1/2 cup of heavy cream. Let sit for 10 minutes, then use in recipe. Let me know how it turns out 😃
Oh my goodness! Parchment paper is magic and a total game changer for baking. Food simply does not stick and for most things you bake, you don’t even have a pan to clean up. As a keto gal, I often make “ crustless” food like crustless sweet potato pie, cheese cake, etc. go ahead and give it a try. ☺️

Definitely hard to stop at just one,... so I had 2, with jam and cream. Just like a scone, but better. IMO :)

Can I just use almond flour and no coconut? I don’t hand coconut very well.
The coconut flour really helps with absorbing the liquid from the buttermilk.
I'm allergic to almond, what could i use instead?
You can sub almond flour with pecan flour 1:1.
