- Pandan Huat Kuih / Huat Kueh also known as Chinese Prosperity Cakes (如意发糕). Soft and fluffy with pandan and coconut milk flavor. No egg, no milk, no bake super easy vegan recipe. Just combine all the ingredients, mix well then steam over high heat, makes 6 Huat Kueh.
✿ About Pandan Leaf:
- Pandan leaves (screwpine) have a naturally sweet taste and soft aroma.

- In Malaysia, you can get it from wet market or supermarket.
- In other countries, fresh, frozen, or dried Pandan leaves can be purchased from some Asian food stores, as well as online.

Ingredients 材料:
250 g self raising flour 自发面粉
1 tsp baking powder 泡打粉
1/8 tsp salt(optional) 盐(选择性)
90 g caster sugar 细砂糖
100 ml pandan juice 班兰汁
160 g coconut milk 椰浆
20 ml vegetable oil (corn oil) 植物油(玉米油)
Steam over high heat for 20 minutes
大火蒸20分钟

Chia老师你好, I tried the recipe but the cake turned out damp in the centre though steamed for 20mins. I used fresh coconut milk but it looked thick. Could this be the main reason? I used Olive oil instead of corn oil. Will this affect the outcome too?
