Hi, after I mixed all the ingredients, the batter is somehow so thick (sticky). It's not similar consistency with the one you made in the video, so I added extra oil & milk. After I steamed it, it was blooming well. It is very fluffy too. The only thing it tasted bitter. Could it be the amount of baking powder in your recipe is too much (4 tsp) ? Is it possible to reduce it when I cook again next time?. I look forward to hear your reply, thanks in advance !

Hi, this recipe use 12 gram baking powder as a rising agent. Do you fill the steamer with enough water and steam over high heat? Must bring the water to a rolling boil over high heat before steaming, do not open the lid during steaming process. Steam longer for bigger mould size.
I tried today, following the instructions. Turns out well on the outside, but inside some parts didn't rise. Was the batter to dry? Please advise, thanks.

Actually, 4 tsp of baking powder enough to make the Huat Kueh rise and split on top. It works for both slightly thick or watery batter. Here some tips: 1. Ensure you fill the steamer with enough water, prefer using bigger steamer so that it can cater for more water. 2. Ensure to steam over high heat, the highest heat of gas stove, the water must be roiling boil to make Huat Kueh bloom. Steam for longer (25-30min) if you afraid the center part didn't cooked thoroughly.
