Tepung kue is tepung kek/ cake flour if you don't have cake flour, then substitute with some corn starch 130 g cake flour = 110 g tepung gandum + 20 g tepung jagung
Can I use this recipe but make a pandan flavored one. If so how much of the pandan liquid should I use instead of the brown sugar liquid. I think I would like using the rice flour and cake flour better than the self rising flour that you used in your pandan fatt koh recipe.
I never try the pandan liquid in a can and don't know how it taste like. But if you want to try other flavor, it can be substituted with same amount of other flavor liquid.
Tried your smiling huat Kueh it turns out to be a very dense not like what you made inspite of following the steps, would appreciate yr comments n how to improve n get the nice texture like yours. Not soft n fluffy. What went wrong.....?.....
Ensure the sugar syrup has been cool down completely before pouring into the dry ingredients. Baking powder is the main rising agent in this eggless Huat Kuih. Sometimes, baking powder lose it effectiveness once it has been sitting around for a long time end up not produce as much leavening action. Thus, be sure to use fresh baking powder. Steam a little longer if using bigger teacup and steam over high heat, must be very high heat. Do not open the lid during the steaming process.

if u feel the mixture a bit thick, try adding extra 1 - 2 teaspoon of vegetable oil/ coconut milk to lighten the batter. Cake flour produces less gluten and rice flour is gluten free, mixing too long will not hardened the mixture but different brand flour, the water absorption level is different.

organic甘蔗糖不比白糖甜。也会影响的。
泡打粉不可多放。多放的话,发糕虽然发得好大的笑口,不过却会有苦涩味。
视屏里整个食谱的分量是协调的,成品不会太甜,不会有苦味而是带有淡淡椰香味的。我是用新鲜的椰浆。蒸的时间长短也会影响的,大火蒸,可多蒸久一点让泡打粉充分发挥。

发糕要发得美开口笑条件是:
- 泡打粉要用新鲜的
- 蒸锅里一次加入够多的水,煮至沸腾,蒸气十足
- 下锅蒸时水已是沸腾的
- 全程大火蒸,中途不可打开锅盖
- 装入摸具里,九分满以上
- 如果摸具比较大,蒸的时间也要拉长
