We call this mkate wa mchele in Dubai and Zanzibar but we added coconut milk instead of water and we mix it up with cardamom and we bake is really nice.

Finally it was a success third time. First attempt, it didn’t raise much and it was so dense, the second attempt, it shrunk after taking out from the pan. Third attempt, it was successful and it’s delicious 🤣.

This steamed sponge sweet rice cakes are very tasty and mostly made by Chinese. I wonder if there's a substitute for Eno which I can use.
Looks delicious. I have tasted a similar very staple food in India called idly. Also, a tip: eno can be used in place of yeast, It's fast! And another one, for those who don't have ENO, add 1 tsp of baking soda to the batter and when about to cook, add 1 tbsp of vinegar or lime juice and mix quickly and pour in tin and quickly cook as co2 produced which makes it rise fizzes out quickly.

Adding mashed plantain to this before steaming gives awesome aroma and taste. We call this as vivikaa (sweet idli!)

It is good to avoid aluminium containers can leave harmful chemicals.. We use banana leaf in India to stem.. 😉
