Calcutta Chicken Rezala-just like Mughlai restaurants

- This is not a homestyle Calcutta rezala recipe. This is a no-holds-barred recipe-be it in the amount of oil or ghee, or the number of steps required. Our only goal was to make it as close to the restaurant-style rezala as possible.
We have been looking for a reliable rezala recipe for a long time. All the recipes we tried from the internet or books produced a rezala that tasted delicious, no doubt, but they were not close to the rezala that is served in Mughlai restaurants in Calcutta. That style of rezala is watery thin, yet rich, flavourful, pearl-white rezala with good centimetre of oil floating on the top-the kind served in Mughlai restaurants in Calcutta, such as Sabir, Aminia, Shiraz, Royal, Arsalan and the likes.
So, just like the kochuri alur torkari recipe from 2018, for those of you that remember, we went about reverse-engineering the rezala recipe.
The first step was to taste rezalas from all of our favourites. We tasted them side by side. Then sometime last year we came across this video by Mr. Nadim Amin, one of the owners of Aminia-sadly he passed away a few years ago, but you should definitely check out his channel. His video acted as the starting point for us. We cooked many, many batches, varying spices, cooking methods, using boiled onion vs raw, with and without poppy seeds, cashew, dry coconut-for several weeks all we were eating was rezala-until we arrived at this recipe which I think we are happy with. If you try it out, do tag us on Instagram.

can we use fresh coconut instead of desiccated? if yes, what would the quantity be?
If you can’t find khopra, skip it. Not going to make a huge difference.
@@BongEats thanks
That shot of the blender with milk and chillies together... literally brought tears to my eyes. When THEY can coexist harmoniously, WHY CAN'T WE???!!! Also, I come here for your videos, but stay back for the background music! The zoomed in shots need stabilization. Pls consider zooming out a bit or using the stabilizer mode or both. Great video as always. :)
Thank you for your reply @Bong eats. I learned cooking of basanti polao from your receipe
In the era when people just post random cooking vlogs and reels sharing random, wrong or shortcut recipe and destroying their souls, your research is what brings us here on the very first notification everytime without any hesitation.
Couldn't agree more..seriously this modern fusion or whatever is just so annoying ...change is good but destroying traditional recipes is criminal...😊
Finally got someone having the same problem
Totally agree!
Couldn’t agree more!
Absolutely correct.. can’t agree more..
I am amazed at Saptarshi and Insiya's attention to detail and the sheer, bloody hard work that goes into producing such wonderful recipes and professional production. More power to you.
Thanks, Sreemoy! :-)
Just FYI, I’m a surgeon and an absolute foodie and I’m only 60! I have been an avid follower of BongEats and am passionate about cooking. I made Chicken Rezala following your recipe and, it was simply amazing! Reminded me of my childhood and medical college days when we used to throng around Aminia Hotel! I soya and Saptarshi, I can’t thank you enough for doing what you do…and touching so many hearts through the palate!❤❤❤
I love your videos, I'm Bangladeshi but I'm also a Bangali, so I haven't really grown up eating Indian style Bengali dishes but watching your effort and execution makes me so proud of our combined cuisine. The heritage and culture in our dishes is truly remarkable so thank you for showcasing it in such an elevated style.
Wonderful recipe I so happy I have this channel, you brought a tear to my eyes I was born in Calcutta moved to Canada in 1967 miss the good days from my childhood ❤
Cooking is indeed an art. And you guys are amazing artists ♥️
On behalf of our unborn generations, here’s a big thank you!
The glass cup which was used to mix the milk, showed me just how much you both enjoy the Mughlai cuisine of Calcutta ❤
This is not just a video of another chicken recipe, this is a full proof tutorial on how to cook rezala ❤
Commenting without even watching the video, just seeing the colour. Finally some TH-cam channel who have done justice with rezala. Thank you for that. You just scroll you tube writing rezala, and you will be shocked that people post anything naming whatever they t want.
My goodness! Such a beautiful recipe my brothers, I will make it for my family! Sending love from Oshawa, Ontario, Canada! I want to take a minute to say how much we Canadians love India, and all Indian people. You are a beautiful nation who bring so much good into this world! Wishing peace from Canada to all our wonderful Indian friends! 😄❤
Sincerely - Brian W.
Thanks for the recipe :)
Sidenote - The bubbles we see at 7:05 may or may not be because of the silicone spatula, when I stopped using the silicone spatula, the excess bubbles I used to get while frying onions went away.
I have some intensely fond and loving memories of going with maa to buy Biryani and Rezala from a local biryani place in Asansol. Whenever we went there I just knew it was going to be a good day because biryani and rezala was for celebrations, good times or just a gentle pick me up when any of us needed it.
Even though I’ve moved and lived in 3 different countries far away from the lanes and by lanes of Asansol …To this day this is the ritual I follow to celebrate, to rejoice, to lift up a dull day
This brought back some core memories. Cannot wait to try this at home. 💖
Hats off to these people who gave their 100% to give us a wonderful recipe. They only ate rezalas for a week in every meal
The amount of sheer dedication that you put into making these videos should be highly respected. I am amazed❤
More than the recipe the amount of research that has gone in to this video is insane.
Hats off. Clearly a favourite channel.
This is the best channel in the world if you want to learn authentic bengali cuisine. I am married to a Bengali guy and you have no idea how much this channel helped me to learn and get compliments from others. When people say that no one can tell that this food has been prepared by a non-bengali person , I just and just appreciate Bong eats and give all my credits to their team ❤
I waited 5 years plus for this recipe. Thank you so much.
This is what called cooking with ultimate perfection. Apnara toh shilpi. Tar upor eto research korechen 1 ta item er jonyo. Darun Darun.
Having enjoyed Rezalas at many Kolkata restaurant, this recipe really comes closest to the real deal. At home, we'd cook Rezala basically using the technique shown, taking some short cuts. Instead of green chili juice, we'd use white pepper corn powder for that heat. Can't wait to try this folks!
This channel represents " Not the so call internet cooking videos just to earn fame and money " ❤ love the recipe.
I am amazed at the kind of effort you've put in this video and the recipe. Thank you for sharing this. You guys should really give a shot at writing a book. Not the regular kind of recipe book but a book of food story, may be. ❤❤❤
Good suggestion. Probably they'll write one day
The amount of hardwork you put in your videos is insane. Grow more . 💕💕
I remember requesting you the recipe of authentic Kolkata rezala many a times, thanks for keeping my request and finally bringing it on the table! It is definitely a treat to the eyes! Loved it! Thanks a lot!❤
This Authenticity you guys are maintaining since you started ❤
you guys are so well researcher also very specifically studied about every single recipe Hats off for giving quality over quantity
It is completely science, by looking at it I felt dreamy about the whole procedure. Truly remarkable ❤
I remember those days back in 2018 when I started watching Bong Eats. Every Friday I'd eagerly wait for your video post❤
Kudos to not just your effort to make a recipe video of Indian dish but the effort you guys have put in to make an entire market research on traditional and antique restaurants. Love and support for BongEats 💞 Your mouthwatering dishes really makes our day❣️🎉
You guys do the research and explain the methodology, materials and methods better than any Nature, Science or Cell paper. This takes a lot of effort so lots of respect, gratitude and love.❤
This is such a service to humanity!! I have been looking for authentic rezala recipes forever, and as you said, there were none so far on the internet. Even more interestingly, rezala is a dish that is made very diffrently in Bengal (Dhaka/Calcutta) and also in Bhopal, as part of the dishes of the nawabi repertoire. The Bhopali rezala is also white but has coriander, is not sweet, and fits into the qaliya description perfectly. Since I have lived in Bhopal all my life but I am a Bengali, I am extremely excited to see this recipe and to try it out. Thank you so much, Bong Eats!
আপনাদের রান্না টা খালি রান্না না।একটা শিল্প।খুব সুন্দর গোছানো,পরিষ্কার,আর নিখুঁত।❤❤❤
Personally, I've always marinated the whole thing and slow cooked till the chicken is cooked as you've already mentioned at the end of the video. Never knew such a unique and exotic way of making Rezala. Will definitely try this one.. Thank you so much
I m just got astonished. How one can put so much effort to make video like this.
Kudos to guys .
Surely try this recipe
Eto jotno kore r eto dhoijjo diye rezala bariteo banao hoy naa....darun laglo as always beautiful video graphy....❤❤❤❤❤❤❤❤❤
Such an amazingly researched recipe, so happy to have found this on the internet. My mother used to make rezala (both mutton and chicken) when I was a kid. Today when I called her up and asked her about the recipe she was able to give me an overview of the main steps, and I am so delighted to see that your recipe is aligining with hers . Love this ! ❤️❤️
This looks amaaaaazing. Greetings from Leeds, UK!

You guys just taken cooking in to another level ❤
kudos for no-holds-barred recipe, this is the only way to cook and eat, baaki duniya mithya hai. (matrix). This video deserved a comment and commendation not only because of research and authenticity but also the amount of effort put into video production and diligent commentary.

The effort you have put in a single recipe is commendable
thank you man for revealing the hardship of decoding the dishes we like to eat , though these are not made with rocket science but these processes are really hard to decode and takes too much of effort in doing it, many food lovers just leave the process halfway because of this ,for me when i tried to decode a simple east bengal dish from my mothers secret cooking recipes ,i left no stone unturn but i could not succeed. kudos to your hardwork, love n respect.
So wonderfully researched and explained !! Love this channel
আপনাদের video মানে আমার কাছে therapy, শামুক রান্না করার best recipe টা upload করলে খুব ভালো লাগবে।।❤

By far This is the most beautiful & authentic recipe of Rezala. My favourite is of Sabirs as I have eaten their rezala since my childhood. Hats off to your Fruitful efforts .
Splendid piece of work. The way they devote their time their efforts is hard to find in internet culture. The research the experience all of it is amazing. Totally worth our time and our likes!
You guys are genius!! Deservee moreee subscribers!!!!
An absolute masterpiece!! What a monumental research !!
Every time I see your videos.. I am amazed at the amount of research you guys put into it.. even for something simple and humble like khichuri or something royal like rezala❤
No Rezala video is greater than this in youtube. Last saturday I and few of my friends paid tribute to the cuisines of Kolkata at our house and I decided to copy-paste this recipe. Only thing I added is Mutton fat in oil and ghee and the Rezala turned out great as if it is straight from Aminia or Sabir. My friends couldn't believe that I made it.
My favourite Rezala is from India restaurant though and I request you to try it sometime. None the less kudos for making the greatest Kolkata Rezala cooking video on youtube.
Thank you ever so much - finally my online search for authentic calcutta rezala stops here!
I truly appreciate the efforts and detailing. Wow
Cooking is an art and you guys are the artists
You guys are simply awesome. This kind of research with a same dish just to show us that which is better or not is really tremendous job. Will try this recipe soon💓
You make us feel that cooking is also very artistic. Each recipe has its own flavor we can't mix all spices and many more things for a particular recipe.
I was looking for this recipe from your channel for a long time.. Thanks a lot.. Will definitely try it.
You guys are doing this for passion and passion only,,, kudos to you all 🙏
