Easy Grilled Chicken Breasts [Charcoal Grill Vortex Cooking]

  • Grilled chicken is pretty simple. It's often made way harder than it needs to be. If you've got a charcoal grill, start up a full chimney of coals, dump those coals either in your vortex in the center of the grill and place chicken around it in a circle. If you don't have a vortex, set up two zones by dumping coals on one side of the grill. place chicken over the side that has no coals (indirect). A full chicken breast normally takes about 40 to 50 minutes. Use a temperature probe to test for doneness (165f) or probe it for the entire cook. Either way, indirect cooking is EZ mode for pretty much all the things. Steaks, chickens, venison w/e. Want some crust on at the end? Toss it over the direct coals for 30 seconds to a minute on each side once internal temp goal has been reached.

    Do you flip the chicken at any point?

      I do not. I just keep it simple and it cooks evenly by the convection

    Rotate the lid ?

      I rotate the lid when the coals are all in the center and food surrounding it to help promote even cooking as the exhaust vent draws heat up and over the food. I do the same when using the snake method. If I have coals all on one side of the kettle I don't bother with rotating.
