Even when notch was at mojang Minecraft was already on other platforms it was just outsourced to other developers like 4J studios, pocket edition was created by notch in 2011 and it the base that mojang used to create bedrock edition

I feel like if 1.13, 1.14 and 1.16 still existed with Notch behind making other Minecraft updates, and elements from Microsoft updates would also get added, Minecraft would still be pretty good. It's not outright bad, but I think you get the point.
if notch didn't give up the game I think we'd see a lot more content than just one mob and new block type being added in. if he (for example) added the story mode content in. it would change the e game largely. new bosses to fight, new enemy/ ally types, new weapons, new crafting recipes, new building ideas, new worlds, basically anything you could think of. I like story mode because of the amount of things it has that regular Minecraft doesn't dare to add for some reason. I think the only good thing I liked after notch left was the addons/marketplace because you could basically get things that can enhance your world but it would cost minecoins (I hate them to be honest). then again everything would be notch's decision
Id assume we would get stuff that is a LOT wilder and more extreme than what we get now. Microsoft seems to be content with mojang making very “safe” updates that build on the existing game, but dont add anything completely new and different. And thats worked fine,. But notch said “hey what if you could go to hell” and added an entire second dimension just for the heck of it. If notch hadnt made the nether, it probably wouldnt exist today. The concept of other dimensions would be too game changing for microsoft to approve if notch hadn’t established the idea prior to the sale
If I'm not wrong Notch also planned once to create some sort of Aether,considering how popular that mod and idea became for players. Unfortunately it never came to fruition. He even planned to add red dragons.
Check out the mod called "Better Than Adventure", I think it does a good job at capturing what Minecraft would've been like if Microsoft had never acquired the game

The new biomes and world height changes were good, but what players really wanted was new ores and minerals like more metals, all with different uses, such as lead which can be used in combination with dye to make paint, or tin and silver being used to make alloys with other metals Not just 1 new metal which has no uses outside of decoration, although even then, copper could have been so much more, it could have been used to make wires and electrical components which can act as a more compact and stronger form of redstone, at the cost of being more expensive and difficult to craft.

For the coding community, including those creating plugins, mods, and datapacks, the game has become much more versatile and accessible. Additionally, Microsoft’s version of Minecraft has been far more profitable than Notch’s original game.
Though the recent updates might not be perfect, the fact that Minecraft still receives regular improvements is a positive for fans and creators alike. Microsoft’s stewardship has, in many ways, taken Minecraft beyond what it could have been otherwise.

Microsoft did NOT port minecraft to Virtual Reality, they DID however added subpar VR support to PC and PSVR to the bedrock edition of the game, but it wasn't even with support of VR controllers and was just a way to look into the world of minecraft through a headset while controlling the game with otherwise default controls. If you really want a VR port of minecraft, you play the java edition mod Vivecraft. Microsoft has already dropped VR support on PC, and is soon dropping PSVR support.
