    150°C is 305°F!
    Also, the Alfajores definitely need to be baked longer. If your mixture is dry and shaggy, take parts of it and mold it in your hand. The butter will homogenize the dough.
    Icing sugar can also be identified as Powdered Sugar.
    400 grams of butter is 1 3/4 US cups.

    I made these for my Mum for Mothers Day and they were absolutely delicious. So short and crumbly and the dulce de leche is so lucious :D And they're so easy to make too! I will definitely make these again. Another way you could portion out the biscuits is to weigh the ball of biscuit dough and divide the weight by the number of individual biscuits you want to make. Then using that figure you worked out, weigh equal size portions of dough, roll them into little balls and flatten them into disks to the desired thickness with the bottom of a glass. This is how I make melting moments. While it might take a little longer, I personally find this easier to get roughly equal size biscuits than rolling out the dough and cutting them out. This is just my personal preference, obviously either way is fine - they're still going to be delicious!

    This recipe inspired me to make my Dulce De Leche Macarons. I mean the alfajores and macarons were almost the same. 2 biscuits/cookies being sandwiched with a filling in the middle. Gracias. I hope that I said it right. 😄

Peru was colonised by the Spanish and they introduced various ingredients like limes, cattle, milk, etc. Our main influences are the indigenous Inca peoples, the Spanish conquistadors, African slaves brought by the Spanish and large waves of Chinese, Japanese and Italian immigrants who became integral components of the cultural and culinary framework.

      Hi Brandon! I like tu use a 4.5 cm diameter one but you can use absolutely any size, shape or form you want!

      Hola! Please do make them and let me know how they turn out. You can store the unfilled cookies at room temperature in an airtight container for up to 5 days. Filled cookies are best eaten the same day they are assembled, but can be kept at room temperature for up to 2 days.

    I'm so happy that you shared this recipe with us, Andy! Especially because it is so close to your heart :D I think I might make some of these for my Mum. She's coming over to my house on Mother's Day. I just had a couple of questions for you - When you said 150 degrees, is that for a fan forced oven? I have a fan forced oven, but generally I reduce the temperature by 20 degrees if the recipe is written for a conventional. Also, is it a recipe that halves okay? 45-50 would be too many for just the two of us, so I was thinking of halving the ingredients.

For recipe quantity: You can half this recipe with no issues at all as there is no rising agent. You can triple, double, quadruple it if you like too! Best of luck and can't wait to hear how they turn out.

      Kate M Hi! You can half or double this recipe with no problem as there is no rising agent (baking powder or soda). The best way to store them is in an airtight container at room temperature. Filled cookies are best eaten the same day or day after and will last store in an airtight container for 2 days. You can also store the unfilled cookies in an airtight container for up to 5 days. Just pop the Dulce de leche in a Tupperware at room temp. I would love to see a pic when you make it please tag or send it to me on Insta/Facebook @eating.with.andy

    Can make a Piping bag with a Ziploc. Fill from one corner and clip off a small amount at an angle.

    I came across your channel today. I previously tried to make alfajores and followed a recipe with extra ingredients such as corn flour, baking powder, baking soda and yolks from 2 eggs. It went well until after 10 minutes in the oven and ended up like dome shaped biscuits!! basically the biscuits did not hold their shape. I wonder if it was to do with the ingredients? So i will try your method and see how it goes :)

      Hi lovely! No, I don’t add any orange zest as this is the really traditional recipe (have a look in the description box for the full list of ingredients) but as I always say, you can experiment in the kitchen and add things you like. If you like the flavour of orange zest then give it a try although it will change the flavour of the original recipe completely. I’ve had people add things like salt after spreading the dulce de leche and coconut too.       Dulce Bakehouse in Melbourne has differences types of alfajores. The owner are from Argentina where spanish alfajores are very popular like the rest of Sudamerica

      Something like powdered sugar, finer than caater sugar. For what it likes, its like sweetened flour

    Can someone please help me… when I bake my cookies at 305 for 20minutes they still come out raw. I’m afraid if I leave it any longer the cookies will dry out. Please help.

      Hola Stephanie! Your oven must run a bit colder than mine. Try baking at 180C for 12-15 minutes. The cookies won't dry out as they have so much butter in them! As long as they don't get any colour (they don't turn dark brown) they will be perfect! Please let me know how you go :)

    Hola, en peru yo tuve mi negocio de alfajores y la textura era suave se derretia en mi boca, me salia como la casa del alfajor, que son muy exquisitas. Cuando e preparado aqui en EEUU no me sale igual, me sale como galleta, te soy sicera e preparada muchas recetas mas de 20 veces y aun no me sale la misma textura que en Peru, pense que era la harina y probe con todas las harinas del supermercado, y tambien probe con todas las mantequillas, ya te imaginaras cuantas veces e hecho los alfajores, a la gente le gusta el sabor ellos dicen que es una galleta, pero mi esposo y mis hijas sabemos que mis alfajores en Peru era perfecto, con ponerte a la boca ya se desacia y no era una galleta. Mi pregunta es: nunca me saldra como en Peru verdad ??

      Hmmm., Deberias de encargar Los ingredients desde Lima. Hay una muy Buena receta en yanuq. Tambien. Aqui en USA lo consideran sandwich de galleta. Busca El alfajor de Martha Stewart Tambien es bueno, al gusto Americano.

    Hmm, You don't use any corn starch, I find it helps them have a more melt in your mouth feeling like short bread.

      Kevin Pereira no I don’t use corn starch in my recipe as that would require letting the dough rest in the fridge for at least 1 hour. I like this recipe because you don’t need to rest it. I also add more butter to make it extra crumbly. You should give it a go and see how it compares to your recipe 😊

    In theory, wouldn't it be hard to overwork that dough because its got hardly any water content and all that fat in the butter is delaying gluten development?

    Andy, I love your channel. However, I followed every single instruction, and it all crumbled and fell apart. They taste bland, and were extremely under baked. I’m very sorry, but I will now stick to cooking, instead of baking. 😔

      Hi Miguel. I'm really sorry to hear that. With baking, if you're off with measurements just a bit, it can affect the end result. A few things that might have caused crumbly cookies: 1) the use of too much flour. When measuring flour, use a knife or other straight edged utensil to level the flour across the measuring cup. 2) the butter didn't mix through properly. To check the correct texture, you want to press the mix, if it holds its shape its ready. 3) You might have rolled them too thick and that's why they under baked, having under baked cookies will make them taste really bad as there is still raw flour 4) every oven is different, make sure your oven is pre heated and avoid opening the door until the last minute. I hope you don't get discouraged and keep persisting, once you nail these cookies, it will all be worth it! Hope this helps :)
