How delicious! I adore alfajores, on my wedding we served them with coffee and tea. An Argentinian lady made them for us. My husband loves them ever since. In Honduras we call them "monjas" (nuns). Recipe: Dry Ingredient 110g Flour 140g Corn starch 1 tsp Baking Powder 1/2 tsp Baking Soda Wet Ingredient 80g White Sugar 90g Butter 2 egg Yolks Lemon Zest (optional) 1 tsp Vanilla extract Introduction 1. Sift dry ingredients together and set aside. 2. Mix on low speed Butter and White sugar 3. Add 2 yolk slowly 4. Add Lemon zest and vanilla extract. 5. Add dry ingredients to wet ingredients and continue mixing until on low speed until 6. Wrap in saran wrap and keep refrigerate for at least 2h or 24h. 7. Roll in 6 mm thickness and cut out 5cm diameter circles. 8. Place the dough on the pan with a silicone mat. 9. Bake in 300 F/150°c oven for 10-12 minutes. 10. Put caramel in piping bag with 12 mm plain round. 11. Flip cookies on one side make sure they are cooled. 12. Pipe caramel filling in centre of cookies top each cookie and flatten out the caramel filling. 13. Roll the cookies over coconut shavings or nuts. 14. Last but not least MAKE SURE TO NJOY!
