ഉരുളക്കിഴങ്ങ് വൈറ്റ് സ്റ്റ്യൂ😀👌😊.... (POTATO WHITE STEW)

Potato white stew
Ingredients
1. Potato cubes - 3 cups
2. Carrot - 1 cup
3. Big onion - 1 cup
4. Crushed ginger - 1” piece
5. Green chilli - 4 to 5
6. Cinnamon - 1” piece
7. Cloves - 3
8. Cardamom - 2
9. Pepper crushed - 10 to 5
10. Salt - to taste
11. Grated coconut for coconut milk - 1 ½ cup
12. Oil - 2 tbsp
Seasoning
13. Ghee - 2 tbsp
14. Shallots sliced - 2 tbsp
15. Red chilli - 3 to 4
16. Curry leaves - plenty
Preparation
1. Add items 6, 7, 8, & 9 in oil & sauté, add ginger & green chilli, stir one minute & sauté adding big onion till transparent, followed by potato & carrot.
2. After sautéing, add water & salt and pressure cook 2 to 3 whistles.
3. Open when cool add 2 cups of 2nd coconut milk, boil well.
4. Add first thick coconut milk (about ½ cup) & put off the flame.
5. Season in ghee with items 14 & 15. Garnish with the curry leaves.
