Potato Brown Stew
Ingredients
1. Potato cubed - 3 nos
2. Big onion cubed - 3 nos
3. Crushed ginger - 1” piece
4. Crushed garlic - 3 to 4 cloves
5. Green chilli - 3 to 4
6. Meat masala powder - 1 ½ tbsp to 2 tbsp
7. Curry leaves - plenty
8. Salt - to taste
9. Coconut milk of - 2 cups grated coconut
10. Coconut oil - 2 tbsp
Preparation
1. Sauté ginger, garlic & green chilli slightly followed by big onion & potato, add the masala powder & curry leaves.
2. Add salt & ½ cup of third milk of coconut & a little water.
3. Pressure cook upto 3 whistles, open when cool , add the rest of third coconut milk & boil, add 1 ½ cup of second coconut milk & boil, stirring.
4. Put off the flame & add ½ cup of the first milk, warm.
5. Add coconut oil & squeezed curry leaves. Swirl.
