Ube Babka Rolls | Ube Swirl Bread Rolls | Purple Yam Bread

  • Babka bread reimagined. This is my take on Ube Rabka Rolls. Been wanting to try a babka bread recipe so I thought, why not use ube jam?! Ube jam is a sweet Filipino dessert made from purple yam. This recipe did not disappoint! This is probably one of my favorite bread recipes now. Try my recipe below and let me know in the comments section what you think! Don't forget to like and subscribe!
    Ingredients:
    2 1/4 cups bread flour
    2 1/2 tbsp sugar
    3/4 tsp salt
    1 tsp instant yeast
    180 mL milk
    1 1/2 tbsp butter
    160 g or 8 tbsp Ube Jam
    Powdered sugar for dusting
    Directions:
    1. Combine yeast with warm milk (30-40 °C)
    2. Combine dry ingredients in a bowl
    3. Stir milk into the dry ingredients
    4. Knead dough on a work surface until well incorporated
    5. Incorporate butter into the dough and knead
    6. Do a window pane test to check if the dough is ready
    7. Let the dough rest in a warm place for 1 hour
    8. Scoop 20g or 1 tbsp of ube jam and shape them into balls (a total of 8 balls)
    9. Chill the ube balls until firm
    10. Degas the dough and divide into 8 equal pieces (you may use a scale)
    11. Shape each piece into a ball then flatten with a rolling pin according to the video
    12. Shape each ube ball into logs
    13. Wrap the ube with the dough and flatten it with a rolling pin
    14. Cut through the dough vertically and twist one end according to the video. Tuck each end towards the middle
    15. Let the bread rolls rest in a warm place for 15 minutes
    16. Bake at 350 °F for 17 minutes
    17. Dust powdered sugar on top

    The hydration should be at 63%. 180 ml milk with 285.75 grams of bread flour. I never use measuring cups because they are not consistent. Great recipe.

    thanks for this video, this is the easiest version so far, i've brushed mine with butter after baking to make it look glossy instead. God bless you more.

    hi! when i tried making the dough, it was very dry and not similar to the consistency in the video. i had to add much more milk, do you know why that might’ve happened?

    Would the ube jam from Good Shepherd have the right consistency to be formed into balls? I just had some ube jam a while ago and it looks like it would just stick to my hands if I try to form them into balls 😬

      I use any brand I can find in a Filipino store here in the US! Any brand you prefer will do, but if I were in the Philippines, I would use Good Shepherd ube jam from Baguio! ☺️

    Tried this, but why is my dough so dry? The consistency is not like yours shown in the video. I did the same measurements

      Did you use bread flour? When I try another brand of flour, I also get inconsistencies. Also, when you measure flour do not pack your measuring cup. Fluff up your flour and scoop it into the cup using a spoon then level it using a knife. If still dry, start with 2 cups then work your way up to 2 1/4 cups.

    ABSOLUTELY WILL NOT TRY THIS BREAD/DOUGH. YOU WHERE STRUGGLING ALREADY! SO STICKY AND TOO MUCH MESS!

      It is a high hydration dough. It will be messy, but the purpose of kneading the way she did was to help incorporate air into the dough, which will help it form into a smoother ball. I've done my pizza dough with high hydration and the slap and fold method. Its amazing! Dont knock it till you've tried it ;)
      Check out Richard Bertinet. He explains it waaayy better than I can.

      did you use bread flour? add more butter if it still dry, hope this will help.
