@sl-bodhi maybe you have old yeast? I personally only own plain dry yeast (not instant) so instead of 1 hour I let it stand in an oven with oven light on (the oven light raises the temperature just enough for the dough to start rising) for 2 hours. If it's cold where you live or even chilly temperature the yeast won't activate, if you turn on oven or heat source the bread will slowly start baking which is wrong... so the way I do it, is turn on oven light and let the dough sit in a heavy pan with lid on for 2 hours. I also warm the milk to be warm and add yeast to the milk, while I prepare other ingredients the yeast sort of slowly activates in the warm milk then I pour the yeast and milk as the recipe says.
I made it! Came out great, I used all purpose flour, now this is my go to bread. The condensed milk and salted butter glaze at the end just perfect. I'm going to make little rolls to make sliders 🙂

@@CrochetNotKnitting my problem was that I used cold milk! Mine didn’t rise as much either but it was edible, my relatives loved it, I also smashed mine a lotttt, but it turned out just fine! Maybe you used the wrong kind of milk, like cold milk (just like me) or wrong calculations with your ingredients? :3
I have done so many times Japanese soft milk bread with Tang Zhong method , so I tried this method , not bad , bread are very soft. Save my time to prepare the Tang Zhong. Thanks

I'm so happy that my bread turned out well. I made this in a pressure cooker on medium flame and it was a delight. Just that I guess my dough turned out a tad bit gooey so I had to add more APF.
baked this bread today! my dough was also very very sticky prior adding butter, otherwise it was ok. my wet ingredients were all cold, not sure if that caused the stickiness? the taste is okay, but I wish it was sweeter. perhaps I'll add honey like the other comments said, and I'll use a fuller cream milk for that richer taste. will update when I try the recipe again :)

Love this recipe. Have been searching for a good recipe that doesn’t have an overpowering flavor of yeast and this is perfect to my taste. Just one question. Can I prepare the dough a night before and bake it early morning before breakfast? Love the taste and smell of freshly baked bread.
I used this recipe and the bun turned out soft and fluffy like it was shown on video. However, the top layer became quite hard the following day. Is this normal? I covered the leftover bun with cloth and stalled it in room temperature (humid Singapore). Is there a way to keep the top layer soft like how it was freshly out from the oven?
When it comes out from the oven, cover it right away with the cloth, the heat will make it steam and will make the top softer. I do that with all the breads that I make except the French baguette and the French bread because I like them crispy from the top, and you’ll have the quality of the bread that you want. I do that with my pita bread the flatbread so they could stay soft and they could open like sandwiches specially, the pita bread, Good luck.🙏🏻❤️

Yes I knead for 45 mins to nearly an hour it’s still sticky. I’m in the process of doing. Hope it turns out alright later. 🤞

Updates: Did not turn out quite well though still edible. It didn’t rise much, probably I ‘smash’ it too much :D

I think you should try covering the bread with a damp cloth for 1 hour when it's hot. This will help keep the bread soft.
I put a thin layer of butter while my bread is still hot to keep my crust super soft
