I've made this several times after making the breakfast burrito recipe. One recommendation I'd make is to make a lot of the seasoning at once and store it in a jar or container. Then you can just scoop some out and add some milk and tahini to make the sauce.

The best trick for tofu is to freeze it a minimum of 4 hours or overnight. then either defrosted in the microwave or put it back in their frigerator if you have time to wait. then you can cut it in 4 pieces and squeeze the water easily right out of it and it has a much better texture.

As a former vegetarian (now vegan) and someone who ate scrambled eggs, I cant tell you how delicious your recipe is! My son loves your recipe! I hated eggs for the smell but loved the taste. Your recipe tastes so similar to eggs minus the nasty smell.
To all those folks who think vegans are starving or eating grass, recipes like this prove otherwise because they not just have flavor and taste but also provide vital nutrients like vitamin b12, calcium, protein and so on. ❤ big thanks and hugs!!!

My recipe for indiany eggs uses cumin seeds, mustard seeds, coriander seeds in mustard oil (game changer), onions turmeric, garlic, ginger, garam masala, tofu, kala namek, pepper and some oat milk. All fried together, bloody delicious! Topped with fresh coriander and green onion.

I made your burritos over a year ago for the first time. My family LOVED them! My oldest daughter never liked eggs when we ate them (organic, homegrown from our own chickens), but she is completely addicted to tofu scramble! However, I HATE putting the spices together every time, so I put together all the dry ingredients in bulk. Then I just add 2 tbsps of the dry mixture, 1 tbsp of tahini, and however much I want of oat milk in a bowl, mix and add to the 2 packages of tofu. YUM!
Yours is the BEST spice mixture ever! Thank you, gorgeous!!!!

I have made this several times and with more experience it just gets better and better. This morning our tofu scramble was superior. Instead of paprika I added cumin, a bit of dried pepper for a little heat, scrambled onions, peppers, zucchini and added a TBS of olive tempenade w/oil - fantastico! Plated and topped it off with crumbled vegan feta, about 1/4 cup of thinly sliced bok choy for crunch, and a quarter of avocado, sliced. Much better than any we've ever had in vegan restaurants. I would not hesitate to serve this to any of my non-vegan friends. Thank you so much for this recipe. I make notes at the top of all my printed recipes and this one gets a BEST!

I made this for sunday brunch for my vegan daughters. They liked it a lot. Made an extra trip to find the black salt, and yeah, it is different enough from regular to make a major difference in the final outcome.

My favorite scrambled tofu. I have made this recipe multiple times now. There is so much flavor, very different to what I am used to. I am from the Caribbean and these flavors are like a dance in my tongue.

I tried the black salt with extra firm tofu and yes, the tofu was a little too firm and dry, but I loved the black salt completely. I only used the black salt and nothing else, just to get a feel for it, and I personally didn't think it tasted that eggy, but, I still loved it so much that I know it will be a staple in my household now. I will try the spice/sauce ideas you have to make a more flavorful tofu scramble, but, I'm still so shocked at how yummy the black salt really is with tofu!! Your extra spiced and flavorful version for your parents sounds like a real treat, too!!! God bless, and I want you to live in a castle, for all that you bring from your heart to yummy vegan cooking!!!

Nisha all your recipes I have tried are wonderful and I have been vegan multiple times and gave it up, each time returning to dairy / meat I was missing this vegan lifestyle because I found I learnt a lot more about food and experimented more when cooking. Also all the super foods you consume without even realising it when vegan. 2023 is a good year to become a permanent vegan. Dont ever stop creating amazing recipes Nisha!!! 💚
