Omg...this recipe is THE BEST 😋 I made this for Easter & I used fresh strawberries in the middle of the cake & fresh raspberries & blueberries on the top. It was absolutely amazing. So light,fluffy & DELICIOUS. I made it in a much bigger pan so I almost doubled the recipe(1 +1/5). After I baked it,I cut it in half & filled the middle with frosting & strawberries. This cake is fantastic for any occasion either plain or with fruits. You can be creative. Thank u Elsie for this wonderful recipe. It's definitely a show stopper as u said ❤❤❤❤❤
I made this last night and it was delicious! I’m new to keto baking and have learned a very important lesson: Do not overcook! I watched it like a hawk, I baked it until the center was spongy to the touch, inserted a toothpick for good measure, then took it out of the oven and onto a wire rack immediately. 100% successful with this recipe. Just made this, but coconut flavour! Used a can of coconut milk instead of whipped cream and added 1/2 cup of toasted coconut to the batter + more toasted coconut on top for decoration. It took much longer than 15 minutes for the cakes to bake in my oven. You are probably using fan/convection, so I'll take that into account next time. It's a dense cake, so you don't need a big slice, but moist and delicious!
Took me 20 min @170 in normal oven so wasnt too bad! Just made this tonight as it is my husbands birthday tomorrow and he is on keto! Waiting to cool at the moment, and i have high hopes he will like it

Keep your pans ready before you make the cake batter because the reaction of the baking powder and backing side are fast. Number 2, the frosting cream still chunky.. But tasty.. I added whipping cream to it since for me it was sweet and not holding it's shape. I will make it again. I loved it. Put your oven on fan option. I wonder if I want to make the same but in chocolate.. What will be the recipe.. I loved how it is so light.. ❤❤❤❤❤❤❤❤❤❤❤❤❤❤

Yes, it's based on that recipe except that I used a combo of almond and coconut flour so that the layers are firm enough to transfer. Was afraid the coconut flour version may be a bit delicate. Also, I reduced the baking powder as I wanted the layers to be flatter and not bulged out at the center. Yes, this cake can be a show stopper for any celebration 😊 And yes, you could bake it whole then cut into half or 3 layers if you have steady hands hehe..

If you wish to eliminate the whipping cream and use more butter, perhaps you can consider doing butter cake; th-cam.com/video/il6Sw4IHkws/w-d-xo.html Alternatively, you can replace the whipping cream with any keto friendly milk (such as almond or pea milk) by reducing the cream by 15% and increasing the fat (butter or oil) by 70%. For e.g. the whipping cream is 380 ml so less 15% = 323 ml milk. Butter is 120 g increase by 70% = 204 g

Luckily, there is a solution. You can make a "paste" first out of the powdered sweetener before adding it to the butter 🙂 I usually make Swiss or French buttercream, but the American is a bit quicker.

The batter is quite shallow so should cook a lot faster. Since yours took 30 minutes it must be the oven. Hope the cake turned out well 🙏

The texture is quite similar. I usually use unsweetened Greek yogurt.

The ingredients are different and yes you can try using egg whites but the texture will be drier.

Absolutely! It's using low carb flours and zero calories natural sweeteners. If you see the nutritional info, per serving is only 2.5 g net carb
