Update on the tiramisu cake: it's amazing how you managed to get the textures and flavors of a traditional tiramisu without lady fingers or coffee syrup. It's so much more practical to make this way and waaaayyy much tastier! I just used mascarpone instead of cream cheese and for the frosting I used half of the eritrithol as it was sweet enough for me. I'll be repeating this one for sure. Mocha cake is a mix of coffee and chocolate so the ingredients may be somewhat similar to tiramisu cake. However, this mocha cake uses meringue so it's much lighter and softer. Also, the frosting for tiramisu cake uses cream cheese whereas this one use whipping or heavy cream. So glad that you're going to make the tiramisu v2.0 cake. Please let me know how it turns out. Other than this, everything has been perfect! Today I made again your lemon mousse but tried a twist on it putting strawberry flavored drops because every week I've been making it. I have made the lemon version and tried with coconut flavored drops and today was strawberry. Very very good 👍

Just take crumbled pieces of cake and layer it with berries or chopped fruit and whipped cream in a cup or bowl, super easy and tasty!

I almost attempted a chocolate salami thing or a no bake biscuit cake using not biscuit but cake leftovers/or failed bakes. I don't want to waiste food and sometimes it's just a matter of creativity. Yes you can do that provided the amount of liquid does not exceed the recipe to prevent the cake from being too soggy. I am not sure how much of coffee flavor you prefer but most people prefer it a little on the stronger side.
Just out of curiosity, what is the depth of cake when it's done baking? Just have it cooling, but it doesn't seem very 'deep/tall'. Smells amazing though, and super easy to make :)
Yes, you can use espresso or any suitable coffee. The reason why instant coffee powder is used is that it dissolves easily with no residue. If using non-instant ones just ensure that you sieve it before adding to the batter.

I will try this mocha cake and just gently fold the meringue from scraping outside then dropping in the middle. hope this works because i want a cake texture to this recipe and not a brownie texture.

The height of the cake is only about 1 inch and frosting about 1/4 inch. If you want the cake to be taller, you can use a smaller pan maybe 8x8 inch.

when i made this the yoghurt berries cake it deflated.
That could be due to the meringue deflated either during mixing or whisking process. The folding method is very important.

I am making this case using coconut flour (weighed everything) and the batter looked so thick and dry. Doesn't seem to be rising either. 😢
