    I’ve made this recipe a few times now, and it’s always delicious! But just a little Bakers tip, if you put a smear the frosting on your cake plate, the bottom layer won’t slide around on you 😊

    I made this keto cake and it was magnificant! I made it for my husband's birthday and he was so pleased.
    I am allergic to milk, so I used cashew cream, vegan cream cheese and vegan butter. I have made traditional Italian cream cakes in the past and could not eat them because of the dairy. Thank you so much for the recipe.

Now I make the low carb versions and after Sunday dinner, they ask if that was the real thing, I ask them how it tasted and they’ll say, “oh good, I don’t know if I could’ve eaten that other stuff”! 😂😂

    Thank you for this recipe. I made it for my birthday cake and it was amazing! The combination of almond flour and coconut flour makes for a great texture for a cake. I had a bag of chopped hazelnuts so I substituted it for the pecans and it worked out very well.

    I just finished making this cake Ms. Carolyn. I sneaked a taste of the cake (from the bottom so Honey won't see it, lol) and dipped my finger in the icing while it was still in the bowl. This thing's delicious! I know he's going to ask me to make this once-a-week!
    Good Keto recipes are hard to come by. Can't tell you how much ingredients I've had to trash after mixing them up and the recipe turned out to be cr*p.

    Thank you Carolyn I love that you make delicious Keto desserts and food that doesn’t have a bunch of exotic or difficult to find ingredients just simple easy and delicious but best of all low carb and doesn’t send my hubby’s blood sugar spirally out of control!! Thank you!!
    Would you happen to know of a tart recipe called maid of honour tarts? I’ve made my own homemade chia jam so I know I can replicate that part but I’m not so sure about the rest and my husband’s granny used to make them for him and he hasn’t been able to eat the ones his mom makes every Easter because they are basically an injection of sugar and heavy carbs into his blood stream and even one bite would send his sugars soaring to very dangerous levels so I’m trying to find something that wouldn’t cause that effect. 🥰🇨🇦❤️

    Great! - first time I made it for the Easter weekend - strictly folowing the recipe. I actually found it too salty - and I usually like a lot of salt... - my family did not complain... last week I did use just a pinch of salt and the cake was perfect! I did add 40 Gramm of rasped chocolate 85% and as I do not like the taste of Erythritol I did use Canderel and for the cream half Canderel and the other half Sukrin Gold.

    This looks marvelous. I've stayed away from making layer cakes because the powdered sweeteners seem to have a cool aftertaste that I'm not crazy about when making frostings. Does this frosting have that? Is there a low carb sweetener that I can make my own powder sugar replacement with? And as always, I'm grateful for your videos.

    I make Keto peanut butter cookies without using baking powder because you can taste the powder. So, what I want to do is use the cookies as a base and however many layers I want. Im very keen to use the part of the recipe for the filling.

    I was so excited to try this recipe and (now that I’ve done it), I’m equally excited to taste the cake! My only worry is the sweetness of the frosting. I live in Canada and normally use a digital scale to weigh/measure my ingredients. I don’t measure ingredients in cups anymore. Therefore, I probably added way too much powdered Swerve because when I licked the frosting spatula, it was so sweet that it was bitter.

      I weigh everything as well. It's much more accurate and results are more consistent each time you make something. I usually weigh everything the first time I make it and write down the grams on the recipe. That way, I know each time I make it, it will just as good as the first time.

      @@knothead35 that’s a very smart idea!! I weigh all my ingredients but never thought to do that for a recipe that doesn’t call for weighted measuring. It’s sooo true that results can vary widely when too much or too little of something is used.

      @@leannekenyoung I also enter all the ingredients in my tracking app(cronometer)in grams as well. I weigh the entire end product after cooking as total weight is usually less than the total weight of the uncooked ingredients. So when I want a cookie or piece of cake and I weigh it in grams, the most accurate macros will be displayed. Took some getting used to, but helped tremendously and I wasn't eyeballing what 1/4 of a piece of cake looked like or if one muffin was bigger than the other.

    Your might put a little frosting in the center of the plate BEFORE adding the cake, it will hold cake in place

    I made this a couple of years ago and it was fantastic. I want to make it again, this time in advance and travel out of state with it. I know I can freeze the cake itself, but could I freeze it with the icing already on it?

      I always make her cake recipes in muffin tins ( be sure to use with parchment cup cake liners) and freeze, then I take out one at a time, really helps on portion control.

      Straight allulose is only 70% as sweet as sugar so yes, you need to increase it. But a few cautionary points: Allulose makes baked goods brown a LOT faster so you may find the sides and top of your cake quite brown compared to mine. It also makes things like frosting much softer so you may find it doesn't hold up as well... not sure, you will have to try.

    Boy that looks scrumptious 😋. Just curious what using room temp HWC does as opposed to cold. I’ve learned from your baking cookbook and videos when baking, everything is meant for a purpose. So I pay attention to the details now. 🤔

      It softens the fat, which helps your mixture not trap air bubbles. This is why cold is so important when whipping cream😁 You want that air trapped😉

      All you need to do is start beating on low. You don't want to mix it with anything prior to adding it to the butter and cream.

    It would help to put a dollop of frosting on the plate under the cake to keep it in place. Wouldn’t it be awful to walk across the kitchen and have the cake slide off plate and fall on the floor?

    CARBS, if you are counting carbs the printable recipe calls out per serving 5.7g carbs of which 2.4g is of fiber. Not bad. (does not specify the size of a serving).

    In the video you call for 3/4 cup of Swerve for the cake; however, when I print out the recipe it calls for 1 cup of swerve. Can you check and let me know which is best.

      Depends on how sweet you like it! I did that deliberately as I intend to cut back on the sweetener in the cake in the written recipe

    Can allulose be substituted for the cake? I don't enjoy the cooling effect at all.

      Yes in the cake, no in the frosting as it won't provide enough structure. Also... your cake layers will brown a LOT faster with allulose so please keep your eye on them.

    How important is the coconut in the batter? I don't like the consistency of coconut, but otherwise the cake looks delicious.

      It's important to consistency so if you don't want it, you need to add something to make up the bulk.

      Sorry, no. There are too many parts that require cream, cream cheese, and butter for structure.

      Swerve Granular. It's a sweetener.

      @@AllDayIDreamAboutFood , thanks, I looked it up. Apparently it is erythritol, which is a natural sweeterner (like Stevia).

      @@psandbergnz Yep, you got it. And one that technically has carbs but doesn't affect blood sugar. I know this to be true because I am pre-diabetic and test myself frequently. :)

    To me this recipe screams "Carrot Cake", so am going to add some grated carrot for an Easter dessert. 🐰

      Don't do that... carrot cake has a different consistency and needs spices. I have the BEST recipe and it has a similar frosting to this: alldayidreamaboutfood.com/keto-carrot-cake/

      @@AllDayIDreamAboutFood I've now made this carrot cake 2 weeks in a row (albeit 1/2 recipe to make a single layer since I'm alone to eat them). SO GOOD! Thanks for setting me straight! 🙃 That frosting recipe is a keeper too!
