Don't move door and windows you'll appreciate the light later and being able to see outside much better
I'd say leave those windows and door where they are. They are perfectly installed, properly sealed/taped and do let some light in and can serve as a way to condition the mudroom somewhat. And yes, they may be a bit overkill in terms of insulation when they become semi-interior windows, but you do keep the option to let the mudroom be as cold/hot as you want without having that leak into the house.
Here's an idea. You got 3 kids & animals. If you don't want that to turn into a catch all junk room you're going to need closets for coats and storage cabinets for shoes/boots (up to the ceiling). Remove the right window (looking from living room) and put all enclosed storage along that wall. Change the door into an all glass one (move old door to outside). This will bring more light into the house.

I was thinking full-length open cubbies for each person. A bench inside the cubbies to sit on and put shoes on or take them off and footwear storage below. A hook to hang jackets. And a small cubby on top with a basket to hold gloves/mittens, hats, and scarves.

Just a suggestion, the east side of the mudroom to have 2 transom windows at eye levelish, so you can hang all the coats & gear below it on hooks. Looking good!

Love the new addition. I'd leave windows for now. But I hope when doing your mud room you think about a small bench built in for easier shoe removal . It will help as you grow older.

Just a thought, might want to make the risers on the steps rather shallow. Much better for older people. I made mine 6” risers. Very nice. Someday you will like.

Good Morning..SLR ..Speaking from Florida ..The hurricane Helene went thru our state and our coastline is pretty torn up .. Counting our blessings. It just skimmed my area 30 miles inlet..RIP to the folks that lost their lives.approximately 100 so far..I’ve never been so scared ..native to Florida and it was Cat 4 and climbing. I have always been curious, why do you & Mel have no help from Rox & Anthony, who obviously live so close to you, & vice versa? Is it an agreement you made when you both have UT channels? Having a close family , I can’t imagine not being there to help one another., but I know this UT generation is different, and obviously living so close, you can hear when one family is working on their homestead. 😎
That mud room woke be mg kitchen. The mud room would be in the basement. Keep all clutter down stairs.with the size family you have now and future grandkids around I would want a bigger kitchen

If Melissa wants the light its best to leave the windows where there at. You bring up a good point about the heat by just opening the windows. I like that thought. Without the windows you would maybe have to use a mini split system to get heat and cool in there. Your the boss, well Mel is. Do what makes you all happy.
Gary's has a good idea about leaving the front house windows as is. He has also clarified that the mud room will have wider horizontal windows that will provide plenty of light.
Another bonus of the mud room is that the extra door thwarts robbers because any commotion gives Gary time to get in motion to load that deer rifle as he says, "Oh deer, a trespasser wants some "buck" shots.

If the mud room is completely enclosed and insulated, couldn't you move the windows but still leave the openings they came out of and just put some beautiful trim? Like you would a pass through? You still get all the light pouring through but don't have to buy more windows for the front of the mudroom
If all you are using for the flooring in the mud room is stud material, you might have turned the board's edges into shiplap edging. That way you have some overlap and it would not be so cold in the winter. If you did not want to go the route of the shiplap routing then a roll of 90# tar paper would keep the critters out and create an air barrier. I am glad to hear you are putting down butyl or zip tape across the joists. The open ends of the joists are a magnet for water. This way they will last a lot longer. Just remember the importance of rolling if after. This activates the glue. A nice rubber mallet does a good job of rolling in a pinch... Congrats on progress!. I see you know the trick of using the speed square as a spacer.

For the door and windows. They could save you that money if you moved them. You could just "finish" the windows and door frames to be a simple opening (for windows) and then an "archway" for the door! Saves money (can return the 2 new windows purchased and the new door) and still maintain the light into the living room! Downside would be the heating/cooling . . . the current windows and door allow you to keep the mudroom at different temps and not impact living quarters. But which ever way you decide, it is coming along great and will be awesome when finished!
If you want more natural light coming in perhaps you could install a sun tunnel in the areas that need more natural light. They are amazingly effective. Have you considered a wraparound set of steps up to the entrance?
Maybe take door and windows out and put in slider or French doors but French will take up floor space when opening !

Gary, I'm thinking that you don't need two front doors. Why not move the existing front door to the mud room front door. Then you can mold out the entryway between the two rooms. If you want even more light in the mud room

As far as moving windows... put sliding glass door or French doors where the door and windows are now. Then, put the existing door and windows on oute walls of the mud room.

personally i would insulate the hell out of mudroom including the the floor especially because you don't plan on heating the mud room it will be cold enough from window and foot traffic any thing left in mud room coats and shoes will take time to dry if they do dry in mud room
Transom windows on the house and some transom windows on the mudroom that line up with your home.
Ceiling fan to move the air in the mudroom.
