We normally use long grain rice. But sometimes we also use basmati. Cooking the rice separately helps keep whatever rice you use firm and grainy. Some prefer the wetter biryani though, so it all comes down to your preferences.

I like the tomato substitute..what else besides sour milk can one use as sometimes people dont eat dairy or it's too sour. Also please show how to roast potatoes and carrots for veg breyani. Did you put the pot with the lid on in the oven? Thanks for great cooking
You can skip the tomatoes/sourmilk altogether in the recipe. The pot goes into the oven with the lid to avoid drying the rice out too much and steam. If you prefer the biryani rice to be very grainy you can put the pot in without the lid, drying out the biryani more. We will show roasting soon!

You should initially add a cup of water per cup of rice once the vegetables are cooked. You can then bring it to a boil and add the biryani to the oven. You will then have to check the biryani from time to time in the oven and add water if necessary, but carefully from the side.

Hi Kathy. That is a good question. For canned/tinned beans you will have to add the beans in almost last when you are cooking the curry, just before adding rice. This is because beans in a can is typically very well cooked already and can get too soft. For dried beans there are two options. The first is to boil the dried beans out until they are nearly soft and then add them to the curry. The second is to soak the beans in water overnight and then braise as per the braising in this recipe. We don’t marinate the vegetables. Usually we wash and soak for a little while and then use them. Vegetables will take in the flavours of the spices as they cook in the biryani

I don't have precise quantity for 50 people. For about 35 people I would use 10 cups of rice. It will require about 750ml oil and 250g Rama. Vegetables you can add according to how much you have and also how "rich" you want the biryani to be. For example potatoes will be approx 4-5kg, other vegetables will be 2kg each and you can use a full head of cabbage or leave it out, depending on your preference.
I was born in South America. I also travelled the world. My opinion is to use what you have in your country since Auntie can only use what she has in her country. I never heard of gadra. I looked it up and it is beans in a long pod. Just use what you have in your country or else you won’t make the recipe. Blessings

For gadra you can use soaked speckled beans and for the dubla butter beans/broad beans.
