You are so much fun to watch! I love ALL your recipes and these look FABULOUS!!!! My grandmother pickled so many vegetables so this, especially those banana peppers, took me back to my childhood! The pickled shrimp and zucchini weren’t familiar to me though…I’ll have to try them! I just bought red onions at the store to pickle those to keep in the fridge. So glad you included them! My husband recently had some GI issues and his doctor advised kombucha, pickled veg and sauerkraut. Can’t wait to get my pickles on this summer! Thanks!

Great video Nicole! I’ve made refrigerator pickles before, as well as pickled onions. I haven’t made them in quite a while, but I have been complaining about how I can’t find any good pickles in the grocery store. Duh! I’ll just make them myself! I thought for sure you were going to infuse vodka for your bloody Mary's.
I take a large mason jar and add sliced "serrano chili's, garlic, onions, and bell peppers, peppercorns". And then pour in the vodka. That makes the most flavorful vodka for Bloody Mary's.
My favorite pickled food I make is red onion, then pickled Italian peppers.

How long does everything keep?
In the fridge at least a few weeks if what you make last that long hahah
The cucumbers can last months.
According to my grandma last as long as you want them the last in the fridge but if you open them one day and they smell funny or growing strange stuff, throw them out.

Please follow her instructions about when to keep in the refrigerator. Don't put your hands inside the jar ever, use clean, dry, spoon/fork to remove the pickle. I sometimes remove small quantities into another jar and use that instead of taking the big jar out every day. If you follow all this the pickles should last a good 3 -4 months

I don't know the time frame. These are not properly canned/vacuum packed. The vinegar and lemon helps extend the shelf life. Most refrigerator pickles without vinegar state 1-2 weeks.
Many counties in Indiana and Ohio have a county extension office that will occasionally have pickling classes. They don't talk about refrigerator pickling as they are not very time reliable.
There is a reason that she doesn't mention a storage life for these. I plan on making some of these. I only plan on keeping them for a couple weeks. Anything longer than that I will use an actual canning recipe.

Do you ever add onions to your cucumbers? I use unseasoned rice wine vinegar (asian vinegar), honey, dill seeds and mustard seeds as a brine. Put my cucumber slices, thin slices red onion in a jar then pour my hot brine over. Cool, then refrigerate. I always wait a day to eat

Loved all the recipes. One question. Did you follow the zucchini recipe as listed in the more section - canning them or make them as refrigerator zucchini? How long in the frig before eating?
I did then as refrigerator zucchini. Overnight and you’re good to go!

Because they are pickled, can they be water bath canned for a longer shelf life ( except the for the shrimp)?
Not enough room in my fridge for all that.

Nicole, for the zucchini (and probably the other ones too), can I use a sugar substitute like Splenda or Allulose instead of the sugar? Or can I do half substitute and half sugar? That is alot of sugar for me.

I had some shawarma a couple night ago. It was served with sticks (wands?) of something red and very crunchy, looked like beets but did not taste like beets. I asked and discovered that it was turnips! I'm guessing maybe the color was from added red onions but I do not know. Any hints?

She did not she just pickled the vegetables.... She did not can them.... Everything she made needs to be refrigerated

Looking at the recipes many of them can be canned. How does the flavor and texture differ from just putting in the fridge? Also are these tested safe canning recipes?

I run them through the dishwasher- and if still an odor then I add baking soda and water and let them soak for a bit
