I know this is an older video, but I've been making this soup ever since I discovered this video. It's my comfort soup. It's the food I make when I'm sick, or when depression takes me. I make this soup when I've had a bad day. This soup gives me something on days when I have nothing, and it's really special to me. Thank you so much for sharing it with us!

On snowy days when my daughter Brodie was little I used to make potato soup and cinnamon rolls from scratch. Brodie and her Daddy would be outside shoveling the walks and clearing off the cars while I was busy in the kitchen. Nice memories.

@yerb 1970s. My parents were part of the back to the earth movement. It was great. They bought a small acreage with a really old house, fixed it up, didn't mind that it didn't have heat or plumbing, shopped auction sales and we grew up on homegrown, home-made everything. It really was glorious.

I live in a 120 yr old cottage here in New Zealand, and while I have a modern stove - I use the original wood stove all winter. There's always a pot of soup bubbling, plus it heats the hot water and saves on the power bill. The old wood stoves are much sought after here.

Rustic vegetable soup. Yes, on a really cold day, the soup tastes especially good. Now I make it for my mother who is 101yrs old. A family favorite for generations.

My grandmother used to make something similar, but she kept the diced veg chunky and added pearl barley to thicken it. I make it myself nowadays; it keeps a few days in the pan on the stove, and actually gets better during that time; just keep ladling out a bowlful and reheat it in the microwave. My dog also loved the dregs from the pot poured over his kibbles.

I was thrilled to see the addition of the frozen peas at the end. Although the aromatic veggies are cooked, to well done, enhancing the flavor, fresh texture is so pleasing.

I'm astonished by how rapidly the frozen pea ball-bearings softened and cooked through in that non-simmering soup. I don't feel confident about replicating that part of the recipe myself because every time I cook with peas they take just that little bit longer than I imagined they would. So I think I'd add peas that had been pre-boiled for a little bit. If that sounds like it would work out, then this dish looks so delicious that I could see myself having two bowls over the course of a winter afternoon-- yum!

So I've never been much of a cook, but due to the "times" we're living in, I've found myself having to, like so many of us, get busy in the kitchen. It's colder now and we love soups. Our local Whole foods market, just blocks from home, has closed their "soup bar", and I'm not starving so I'm not down to canned soups yet (PLEASE GOD NEVER!!). I found this Veggie soup so darned easy, and it was wonderful. I love that you can exchange veggies for what you can get right now, and it all seems to work out find. I put a drop of creme fresh and sprinkle parsley on top, the family can't believe I'm cooking these soups myself. So glad I found this cooking site, because if I can do this, honestly ANYONE can. I look forward to viewing many other videos and get crackin' feeding the family.

Been holding onto this recipe for 3 years, then FINALLY made it for the family a month ago...and I have been making this weekly since!! While I had to make a few adjustments((non-dairy, so just added more plant butter, no parsnips at local stores, so replaced with Korean turnip)) and it is just sooo soooo good!! I need to make your bread recipe, but I have paired the soup with a no knead, artisan bread, and roasted chicken ...and 💋👌
Just...thank you ❤. This soup is literally the embodiment of a warm hug!!

Roasted broccoli, cauliflower, carrots, zucchini, turnip, parsnip, bell pepper, onion, celery with half olive oil and half avocado oil today for our side dish. Do up some potatoes tomorrow and add the rest of the vegetables in with some cream. YUM!! Going to be (-35) Celsius for a few days and big snow storm start of the week. Lots of soup to come. Take care everyone ❤ from Canada

Both times while visiting all through Ireland we fell in love with their vegetable soup. Our first time eating it was in March, 2014, at a pub in Virginia, County Cavan. We ordered it almost everyday wherever we went throughout the country. Couldn't wait to eat it again when we returned in May, 2019. Thank you for posting this video. Hope to make it this week for my family.

I am not Irish, but I have been making this soup all my life. I do not like to blend it, what I do is cook a couple of potatoes just cut in half and a piece of butternut squash, at the end of the cooking I blend those with some stock and add it to the soup. Then add cream, I love it with chopped cilantro on top. Looove soup, I have it winter and summer.

i would never blitz all the vegetables but maybe one third of it, i would not want to mix all the flavours in a mush. and also i would not use butter but sunflower oil. but the idea is good. i learned from an italian cook who made a minestrone, that to thicken the soup with the fine diced vegetables he used a can of small white beans- well we all have our secrets. thank you. and by the way, love your hairstyle. greetings from old lady in germany

Looks delicious and indeed, exactly what we need in these cold months. Also, since my son is vegetarian, this is a good one to have in my repertoire of recipes!
Coming from the Netherlands, I associate ‘winter-food’ with all kinds of ‘stamppot’: throw potatoes and veggies in a pot, boil them, mash them and make it smooth with butter, milk and or cooking liquid, should be like the consistency of mashed potato. Preferably served with bacon and sausages. Most famous to me are ‘hutspot’ (with carrots and onions, I like to fry the onions off separately to give it more flavour. ‘Boerenkool’ (kale), served with also pearl onions and mustard. And ‘andijviestamppot ‘, which is endive, but in that case we don’t boil the endive, but add them raw along with finely chopped raw onion and we in our family do serve it with ‘slasaus’ which is like a kinda thinned out mayo. ‘Zuurkoolstamppot’ (sauerkraut) is also fantastic, I always make an onion sauce to go with it; just soften some onions in butter, make a roux of it and at stock to your liking.
We also have those kinds of hearty soups, like ‘erwtensoep’ which contains split peas and pork and smoked sausage along with veggies like carrots and celeriac. This one is our family tradition on Sinterklaas Eve.
Well, maybe you can tell I’m excited to head onto winter -as much as I do like summer-with all our comforting dishes 😋

@@kathrynarabie9449 parsnips that have been mulched & held in the garden over the winter, then dug in the spring, are actually kind of earthy-sweet and quite tasty when briefly blanched then sauteed in a little butter. You should try them!
