I’ve made this on a regular basis but I prefer to grate the carrots. It gives more body of flavour to the soup. I also add red kidney beans or black beans to zest up the protein content. Italian seasoning is not a big thing in Canada so what I add is sweet basil, touch of oregano and Worcestershire sauce.
Hi Lisa! We have recently been saving our “cutoffs and peels” when we prep veggies. We put them into ziplock freezer bags and save til we have two full bags. Then we make our own veggie broth and store it in souped cubes. Using this broth is amazing with this soup recipe. Maybe do a video about making this type of broth.
Made this tonight and it's delish! I used frozen green beans and corn. I also used petite golden potatoes and cut them in half. They cooked very nicely.

I peel almost nothing anymore because so many micronutrients are directly under the peel and we need the added fiber of the peels. So, I soak and scrub the veggies and in they go with skins on. I also leave the skins on my tomatoes when cooking and blend the sauce before freezing. Love your book and your ideas, Lisa..

I don’t peel carrots. I always buy organic and scrub them well. As is true with most fruits and veggies, the peel contains the most nutrients. This soup looks delicious, btw. 😊
carrots being a root vegetable, don't have to be organic, they are never in any contact with any pesticides. you should buy organic fruit, but save money on carrots and potatoes
I grew up peeling carrots. But as the years go on, I’ve morphed to being more of a good scrubber and leave the peel on cook. I would love to see a creamy cauliflower soup, or even cauliflower as the base of another soup.

I duplicated your recipe and it turned out great. The only issue was the fresh greenbeans not softening enough during the 20 minute cooking. Had to cook the whole pot an extra 7-8 minutes on high boil and stirring constantly trying to soften the beans more while trying not to ruin the rest. It all turned out well. Next time, would you recommend including the beans during sauteing or steam them then add during cooking?

I just recently discovered fire-roasted tomatoes at the supermarket and OMG - GAME CHANGER!!! I now use them in almost any recipe that calls for diced tomatoes. Lovely recipe but I would consider it a starting point. In cold weather I would make vegetable-beef soup by adding stew meat and beef broth. I think I'll start collecting ingredients - I'm definitely in a soup mood.
I've never been a fan of vegetable soup but I've been having stomach trouble lately and this recipe (minus the green beans lol) looks so yummy! I have all the ingredients, I'm definitely making this one. In the winter months, I love most soups but especially broccoli cheddar, Italian wedding and the chicken gnocchi and the sausage, kale and potato dupes from Olive Garden.

Hi. To retain nutrients, veggies other than hard ones (like potato and carrots) should be introduced later. I cook green beans only for 10 secs to keep the nutrients and crunchiness, and those that are soft and rich with vitamin C are heat sensitive, so I tend to put the crushed tomato (I dont use canned ones) and the lemon juice later on after the cooking process is done.
Oh my goodness, I am going to make this very soon! So perfect for the Ohio fall weather! I have to say that I have gotten so much great mileage out of your cabbage soup which I have made MANY times. My teenage daughter LOVES it as well!
If you add one chorizo cut into coins it adds so much flavor to the soup. I don't add potatoes to the soup especially if I plan on freezing. Cook potatoes separately and add them when you're reheating

The reason behind a first course soup is to open the digestive tract with a warm, small serving of soup, to whet the appetite, and get the digestive tract ready to receive nourishment. I liked the idea that was presented with this soup. The soups were always minimal, warm and easy to eat, but not really too filling. The best one I got was a tomato vegetable soup, in which the vegetables were blended into the soup itself. I have tried to duplicate this kind of soup, to no avail! I always wind up making a hearty soup instead! lololol! I would really like to learn to make this style of soup and serve it as a first course to dinner. Anyone else ever try this kind of dinning? I hope so, so I would really love to learn just how to make the right kind of soup to begin a nutritious meal!

Tomato soup! I have such fond childhood memories of my mom serving us a bowl of tomato soup with a grilled cheese sandwich on the side for lunch on a snow day. (I grew up in the southeast so those snow days didn’t come often enough) I do currently have a delicious recipe using oven roasted fresh Roma tomatoes and using an immersion blender to “cream” it without the cream. I often add plenty of spinach seeing as soups are mostly how I consume vegetables. Also, I use green bell peppers instead of celery because celery has close to no nutritional value. I also don’t add potatoes but use lots of peas or beans to add as much protein as possible to the soup. Great vid 😊

im going to make this with all my garden vegetables:) I don't peel the carrots since they are home grown and I heard that where a lot of the vitamins are, I just put egg muffins in the oven.
I always use some Chuck roast cut into cubes, buy at $3.77 lb. I brown my meat with onions and then add a can of rotel and a package of dry beefy onion soup mix and 1 cube of bouillon cube and add water, cook on low for 1 1/2 hr. Then add my veggies
I definitely will be trying this soon. I have some veggies I dehydrated from my garden I want to use. I’ll use a mix of fresh and dehydrated. If carrots are from my garden I leave the peels, however I peel the occasional ones I buy from the store.

I do both, sometimes peel sometimes not my carrots. I do however cut them in the middle for smaller pieces. I love any kind of soup. I am vegetarian so naturally I’d like soups with no meat.

I started to add garlic when a soup is almost ready. It feels more vibrant if you have not been boiling it for half an hour :) I really like garlic, and it was a small revolution for me. 😅

I will be trying this vegetable soup for myself and my neighbor who appreciates soups of all kinds especially as we're starting to experience fall weather here in the northeast. Tomato soup! I have such fond childhood memories of my mom serving us a bowl of tomato soup with a grilled cheese sandwich on the side for lunch on a snow day. (I grew up in the southeast so those snow days didn’t come often enough) I do currently have a delicious recipe using oven roasted fresh Roma tomatoes and using an immersion blender to “cream” it without the cream. That recipe is my go-to in the winter but would love to see what you come up with?

This looks delicious. I’m also thinking could add quartered Brussel sprouts, parsnip, radishes, mushrooms right at the end before serving, some kind of lentils
I often add plenty of spinach seeing as soups are mostly how I consume vegetables. Also, I use green bell peppers instead of celery because celery has close to no nutritional value. I also don’t add potatoes but use lots of peas or beans to add as much protein as possible to the soup. Great vid 😊
There's plenty of room for other vegetables in this soup as well 😊
I'm definitely pro peeling carrots haha. For no other reason than it's satisfying and it makes them more appetizing (imo).

You can always buy gluten-free crackers or bread! But at the moment, I don't have a recipe for gluten-free bread.
I decided to give your soup a try Lisa, with a few substituted ingredients. I replaced the potatoes with collard greens and broccoli. I'll let you know how it turns out.

im going to make this with all my garden vegetables:) I don't peel the carrots since they are home grown and I heard that where a lot of the vitamins are, I just put egg muffins in the oven.

I always use some Chuck roast cut into cubes, buy at $3.77 lb. I brown my meat with onions and then add a can of rotel and a package of dry beefy onion soup mix and 1 cube of bouillon cube and add water, cook on low for 1 1/2 hr. Then add my veggies

Looks good. I like to add some beans - chickpeas, kidney beans or both - to add some protein. That makes it feel like a satisfying meal to me.
I definitely will be trying this soon. I have some veggies I dehydrated from my garden I want to use. I’ll use a mix of fresh and dehydrated.
If carrots are from my garden I leave the peels, however I peel the occasional ones I buy from the store.

I'd recommend adding more broth rather than reducing the veggies. It's just a bit easier that way. :)

I do both, sometimes peel sometimes not my carrots. I do however cut them in the middle for smaller pieces. I love any kind of soup. I am vegetarian so naturally I’d like soups with no meat.

Adding some dry Vermouth or White Wine also zips up the flavor instead of the lemon juice. Also a tablespoon of Miso adds a lot of Umami!

I started to add garlic when a soup is almost ready. It feels more vibrant if you have not been boiling it for half an hour :) I really like garlic, and it was a small revolution for me. 😅
