If I can make a suggestion it's better to sweat your Mirepoix and seasoning with the lid ON, very low for around 10-15 min, untouched. You get much more flavour that way. Using that method you can make a soup out of just potato, onion and garlic taste out of this world! Smashing Pot, all the same!
Made this tonight for the family (sans dumplings) served with mixed greens and cheesy toast ... BIG hit - simple simple to make and perfect for snowy evening! Even my picky brother didn't come up for conversation - my dad (86 y/o) went back for seconds! thank you!

My oven broke recently and we haven't been able to get it repaired yet, so for Christmas dinner I made this stew! It was superb; I added in some mushrooms and used rosemary instead of thyme (as many members of my family aren't the biggest thyme fans) and we all loved it. So glad I found this recipe!

I made this stew yesterday and it was fabulous! It was GF. I used corn starch for the gravy worked great and a GF multigrain flour to make the dumplings. My husband has been under the weather at 77 and he is still raving about this stew. I have a mammal meat allergy from chronic Lyme disease. I miss my lamb stew, beef stew, pork roasts. I am 76 and still love to cook. Donal this recipe is ‘a keeper’.❤️ Thank you❣️

Absolutely great dish and very easy to make. Substituted green beans for the celery, but otherwise made it exactly as recommended. My very fussy eater wife had it for dinner two nights running and lunch a further two days out. Winner.
We finally got our first 40 degree (Fahrenheit) night in Northwestern New Jersey, USA!!! Fall finally decided to show up!!! My Father and brothers a not the biggest vegetable eaters, but I can make this whole recipe and omit the veggies!! More for me and momma!!! I'm salivating!!! Made this stew, and I didn't have buttermilk. Substituted it with yogurt and water and it worked fine. Beautiful winter dinner and the kids loved it too.
I made this this evening and it turned out amazing! I like potatoes in my stew so I added five or six cut up quite small like the carrots. I had no celery on hand but had some celery seed so I used a teaspoon or so of that instead. Also didn’t have any bone in thighs but boneless. Cut those up to bite-size pieces. Other than that I followed the recipe to a t So simple yet so amazingly delicious

So much flavor and so appealing I think for anyone . We will make this again, especially when the LA days do in fact get cold 🥶 ! Made this recipe twice now Donal, first time exactly as you instructed, with the exception that I used a good strong Australian cheddar, second time I added a large clove of garlic and some chopped Tarragon… thanks for the recipe mate!
I made this for my family last night and they absolutely loved it! Clean plates and zero leftovers. I added a 2 cloves of finely chopped garlic and some chilli flakes at the onion, carrot and celery stage. Delicious!
I almost wish a big snow would come and keep us in so I could make this, curl up on the couch with a good movie and eat to my hearts content. But, alas, I’m in Texas. So I’ll just have to make this delicious looking meal and imagine a snowy winters night.

You have this thing about “stews & soups” lol The bubbling shots of the stock look amazing. I want to see how you make the dumplings- I love Irish cheddar- it has a powdery dry flavor to me. “Craggy little dumplings. “ I love that expression - lol I like that the dumplings are not all perfectly sized with the stick to your rib gravyish liquid. They look great. The dumpling idea is great- it’s easy no rolling- Nice idea- so good with a glass of wine sitting by the fire. By the way I think you and your hair looks great! You seem like you never age!

Tried this last night as I was bored with normal chicken dishes and normally use chicken breast. It was absolutely delicious and I used skinless and boneless chicken thighs. This is now a firm favourite in our house, thank you.
