Until I learned how to make a stupidly tasty vegetable stock (Vegetable broth if you're in the US), nice soups needed chicken or beef stock. The 'secret' ingredients that make a genuinely delicious vegetable stock are parmesan rinds and roasted veg (esp roasted tomatoes), these add lots of umami - so vegetarian but not vegan.
I would never have thought of putting that raw egg and yogurt mix into the finished soup, can't imagine how it tasted but it sure made the soup look creamy! Love the simplicity of this channel - not talking or pushing yourself as a TH-cam personality, just simple, honest cooking, You deserve all your success and more!
The egg and yoghurt mix does cook slightly with the residual heat of the hot pot after it is removed from the heat, and thickens the soup into a creamy consistency . However, It is important not to reheat the soup on the cooker as it would make the broth crack into small lumps ( i.e. the eggs will scramble).
@@natashacollier5248 I you really have to reheat it, then do so on very low heat stirring consistently with a wooden spoon until warm enough to eat, never bring to boil or the eggs will scramble and the soup will "crack" into lumps..
i used vegetable broth instead of water. I added a lot of cracked black pepper since it was a bit bland. I added some turmeric to keep it yellow. Yes it was delicious.
Made this today and it was tasty! The entire house smells incredible. After reading through the comments I cut all cooking times down by half, used broth, omitted the green pepper (upsets my stomach)and increased the yogurt to one cup. The bread was tasty too! Thank-you for the incredible recipe!

I love your recipes and have tried many of them.We’re in our 70s and though I love cooking I get tired easily.Made this today but swapped parsley to coriander as neither of us like parsley. I make my own chicken stock so used that instead of water.This is absolutely delicious. It made a lot of soup so I froze the rest in single portions to have another day. I’m in the UK.
I made this tonight. Perfect for damp and chilly autumn night. Came together easily. The chopping was the most time consuming, but it really was fast work. I used chicken stock instead of water. For someone who wants to keep this meat free, the egg and yoghurt add plenty of richness. Not sure if the stock was essential. I also included a couple of cloves or garlic with the onions, and pinch of cayenne pepper at the end. This recipe yields a largish pot of soup. If you are cooking for one, like me, you may want to half the recipe. I appreciate that your recipes are truly designed for a home cook. You demonstrate that delicious does not have to be expensive.
I just made it and felt it lacked flavour so I added a couple of teaspoons of vegetable bouillon before adding the egg mixture. Then it was delicious. I will definitely make it with stock instead of water in future.

I made this soup yesterday, and followed the recipe exactly-it was delicious!! My son, who is *super* picky, loved it! I thought he wouldn’t like it because he’s not used to the herbs and he hates yogurt( I didn’t tell him yogurt was in the soup)🤭 Very wholesome and the addition of the eggs and yogurt is fantastic. Next time, I will make the little toasts as well. This soup I will make again & again for sure! 😊
Yes, it seems to have cooked, as the soup is very hot. I was a little worried about that, but everything turned out okay. I’m not much of a cook, but I think there’s a lot of soup recipes that call for raw egg such as the Greek soup (avgolemono) and some Asian recipes. Anyway, it’s really good!..

What a fabulous recipe. I have an egg intolerance so I mixed 1 tblsp of cornstarch in with the yogurt instead of the 2 eggs; it worked out just fine. Even though this is supposed to be vegetable soup, I also used 4 cups of homemade chicken bone broth plus 4 cups of water, and added some diced leftover roaster chicken breast at the very end, enough to heat through. I'll be making this again for sure.
Try it with sour cream instead of egg/yogurt, add chcken broth and cheese and you will go nuts! This is how I made my veggie soup mix for years--and I use wild spinach instead of the herbs.
The egg adds the protein to all the veg so no need for meat. Looks so pretty too. I make a lot of soup; my trick is to add a can of baked beans or can of chillie (if I am splurging) to any combo of veg. I don't ever heat my big oven since it costs too much in electricity but do bake everything in the microwave that I can't do on my 1 burner. My other burners are covered over at all times to create 'counter space'. I'm a one pot cooker, very organized as to what order things are cooked, ladled into storage containers, cook the next lot of meals...end with cooking rice or pasta to absorb any flavours or vitamins or water left behind, from say cooking potatoes or greens. All peels go into newspapers lining the 1 sink. Gather up, kitchen is clean, hens are happy for scraps. When i had a dog, I cooked all peels for him. Loved it!. Not enough to earn the dollar, you have to stretch it with every choice you make. You seem to belong to that club of smart homemakers.
@@connieolsen1628Never tried that but leftover tea caused mold on the soil. But since soup is my meal at any time of day, rarely eat just cooked vegetables. So if I make salads, the stems & leaves of say Cauliflower, broccoli etc all get used. As do the core of sweet peppers, cabbage etc. Like to tie up a bunch of green onions tops off big onions into soup, then can lift out to eat or feed to animals. And w. water, always let the tap run into a pitcher kept by each sink while waiting for hot...that waters plants, flushes toilet etc. Yes 'no waste' is a good life habit. Stretch those $$$ rather than complain or suffer. People forget it costs them to get water to the tap itself for instance. Like leaving things sucking power...i use garden lights in pretty glasses on my inside windowsills. Rarely ever turn on lights inside to go into a room for anything. And when the power goes out, as often in my province, I still have lights that don't burn down the house like candles & other things people do. I blv that you can eat well from simple things but need the $ for healthy ingredients. Even the marked down pink stickered ones can be made into soup, jam, compote, marmalade, bread pudding if used up intentionally. Good cooks aren't born, they get there thru practice, like sport or music or literacy. Gotta do it, then repeat. Fun usually comes when some skills have been developed. You could see that our host cook here has a love of cooking.

Just made this soup! I chunked my peppers! I added a can of precooked lentils for some extra protein and it is scrumptious! I used Tinkyada brown rice spaghetti I didn't have any herbs de province at the lake so I used herbamare which was fantastic and I made 2 chia seed eggs to use instead of eggs along with dairy free yogurt and just kept adding seasoning to taste as well as crush red pepper and it is fantastic! Can't wait to dive in!
I made this today and it was delicious!! What an unusual thing to do to vegetable soup, to add a mixture of yogurt and eggs. It gave it a really nice flavor and body. My grandmother also always taught me to add a teaspoon or 2 of sugar to any vegetable soup, a habit I keep to this day! It does enhance the flavor of the vegetables, in my humble opinion. Just a wonderful meal on a cold autumn day.

I made this yesterday for our lunch for the next day. Yesterday I also baked some milk chicken and served a cup of this veggie laden soup along with the chicken, mashed potatoes and a gravy. Both were delicious. Since the milk chicken makes such a flavorful gravy, after the chicken was deboned and our meal completed, I added the leftover shredded chicken and gravy right to the soup. I also added a few of my own spices for taste and used water with bullion for a richer flavor. In the end, it was a home run. Hubby commented several times on it and he rarely does that. Use this soup as is or add your own mix of veggies as mentioned; shredding the carrots is what made this soup so fantastic. Thank you for our new favorite chicken soup.
@@doumkatekz Milk chicken is my favorite chicken dish. There is an enzyme in milk that help tenderize the chicken. I usually sauté chicken thighs and leg parts or a small chicken in a Dutch Oven, then sauté an onion and fresh garlic in the same pot, add about 2” of milk and cover the way you would a pot roast. I cook it in a 325°-350° degree oven until done. If the milk curdles, no problem. The flavor is what you are after. When the chicken is done, cover while you thicken the gravy after removing any fat. I use cornstarch and milk for my thickener. I got the idea from watching videos. It is so succulent and full of flavor. I usually save the leftover and add them to a homemade soup or make a chicken stew. It is unbelievable.

Just made this soup and the cheese garlic bread. Added minced garlic and herbs de province to the sautéed vegetables. Also substituted chicken broth for the water. Delicious. Even my husband who does not like vegetarian food loved it. Topped soup with shredded Parmesan cheese, which took it to the next level. The crusty cheese bread paired perfectly with the soup. My only suggestion would be to have a link to website where I can print the recipe ( with a list of ingredients and then separate directions). It was difficult to follow the directions. The presentation looks nice, watching you slowly prep and cut more veggies in between sautéing, but my friend who is still learning to cook tried this and ended up burning the onions and carrots. I told her it is always best to prep everything before hand and have your ingredients at the ready. Prepping as you cook takes years of practice.

What a beautiful soup. My favorite way to add carrot to soup is to grate them. My husband hates carrots in chunks, and will pick them out. When I add them as grated rather than sliced, he never complains. Some of the carrot is absorbed into the broth enhancing the richness. So delicious and healthy.

@@oppsendless3814 I do use raw egg. I never worry much about that, honestly. I get my eggs from a friend with chickens and clean them well before I use them. If you are nervous, though, just cook the soup for a bit after you've added the yoghurt/egg mix.

Ellerinize sağlık 👏👏👏 as I'm on keto diet I'll substitute potatoes with celeriac and skip the vermicelli or add Konjac noodles (0 calories). Before keto, I used to cook a similar soup with sweet potatoes instead of regular ones. Give it a try, it will be even more delicious 💕👋 And my dressing was egg yolk whipped with milk, that's the substitute for cream in the french cuisine. You can add this to every soup you make.

Superb recipe, tasted gorgeous, you don't get this veg soup in a tin, after making it the second time the tweaks I made was, added all the peppers, more pasta, as I was using margheritini soup pasta, to bulk it out more, as there is plenty of liquid, to boost flavour 2 cloves garlic grated, and 2 knorr vegetable stock pots, the eggs and yoghurt make this soup special, never would have thought about adding that to soup, but it works and adds a nice consistency to the finished soup,

In txt description you forgot the loaf of Baguette or other toast you use for the baked herby cheese snacks. Love the principle of an autumn- soup- would prefer personally to use more Celery instead of capsicu.- and maybe use a handful of frozen garden peas!
I like everything about this, including the potatoes - I would use either chicken, beef, or my preference - vegetable stock instead of plain water. What would soup be without a large head of fresh peeled garlic finely chopped and sautéed along with onions - keep an eye - they burn quickly. A very creative recipe and will try yogurt along with it next time. Stew is such an artistic, as well, as a culinary adventure in the kitchen. I prep all the vegetables the night before as well as either sautéed chicken pieces or beef chunks also. Put it all together the next day and smells great and tastes even better! It can be frozen for later consumption if needed! Although I'm single, retired, and "poor" - it's fun to make and more fun to eat!

Good suggestions I need to replace peppers too. I would use a salt substitute like Mrs. Dash - also no eggs. I only use non fat dairy yogurt.
I am not a potato eater, so will have to substitute something else. I will do celery as well

I make a lot of soup; my trick is to add a can of baked beans or can of chillie (if I am splurging) to any combo of veg. I don't ever heat my big oven since it costs too much in electricity but do bake everything in the microwave that I can't do on my 1 burner. My other burners are covered over at all times to create 'counter space'. I'm a one pot cooker, very organized as to what order things are cooked, ladled into storage containers, cook the next lot of meals...end with cooking rice or pasta to absorb any flavours or vitamins or water left behind, from say cooking potatoes or greens. All peels go into newspapers lining the 1 sink. Gather up, kitchen is clean, hens are happy for scraps. When i had a dog, I cooked all peels for him. Loved it!. Not enough to earn the dollar, you have to stretch it with every choice you make. You seem to belong to that club of smart homemakers.
On a different site they said to use leftover water from cooking veg. to water plants. So no waste..nutrition for plants too.
@@connieolsen1628Never tried that but leftover tea caused mold on the soil. But since soup is my meal at any time of day, rarely eat just cooked vegetables. So if I make salads, the stems & leaves of say Cauliflower, broccoli etc all get used. As do the core of sweet peppers, cabbage etc. Like to tie up a bunch of green onions tops off big onions into soup, then can lift out to eat or feed to animals. And w. water, always let the tap run into a pitcher kept by each sink while waiting for hot...that waters plants, flushes toilet etc. Yes 'no waste' is a good life habit. Stretch those $$$ rather than complain or suffer. People forget it costs them to get water to the tap itself for instance. Like leaving things sucking power...i use garden lights in pretty glasses on my inside windowsills. Rarely ever turn on lights inside to go into a room for anything. And when the power goes out, as often in my province, I still have lights that don't burn down the house like candles & other things people do. I blv that you can eat well from simple things but need the $ for healthy ingredients. Even the marked down pink stickered ones can be made into soup, jam, compote, marmalade, bread pudding if used up intentionally. Good cooks aren't born, they get there thru practice, like sport or music or literacy. Gotta do it, then repeat. Fun usually comes when some skills have been developed. You could see that our host cook here has a love of cooking.

I chunked my peppers! I added a can of precooked lentils for some extra protein and it is scrumptious! I used Tinkyada brown rice spaghetti I didn't have any herbs de province at the lake so I used herbamare which was fantastic and I made 2 chia seed eggs to use instead of eggs along with dairy free yogurt and just kept adding seasoning to taste as well as crush red pepper and it is fantastic! Can't wait to dive in!

I made this today and it was delicious!! What an unusual thing to do to vegetable soup, to add a mixture of yogurt and eggs. It gave it a really nice flavor and body. My grandmother also always taught me to add a teaspoon or 2 of sugar to any vegetable soup, a habit I keep to this day! It does enhance the flavor of the vegetables, in my humble opinion. Just a wonderful meal on a cold autumn day.
I haven't tried it yet and tbh I was a lil confused with the mixture add too, but it does look good and I'm sure it is

I made this yesterday for our lunch for the next day. Yesterday I also baked some milk chicken and served a cup of this veggie laden soup along with the chicken, mashed potatoes and a gravy. Both were delicious. Since the milk chicken makes such a flavorful gravy, after the chicken was deboned and our meal completed, I added the leftover shredded chicken and gravy right to the soup. I also added a few of my own spices for taste and used water with bullion for a richer flavor. In the end, it was a home run. Hubby commented several times on it and he rarely does that.
Use this soup as is or add your own mix of veggies as mentioned; shredding the carrots is what made this soup so fantastic. Thank you for our new favorite chicken soup.
What is milk chicken? I have never heard of this.
@@doumkatekz Milk chicken is my favorite chicken dish. There is an enzyme in milk that help tenderize the chicken. I usually sauté chicken thighs and leg parts or a small chicken in a Dutch Oven, then sauté an onion and fresh garlic in the same pot, add about 2” of milk and cover the way you would a pot roast. I cook it in a 325°-350° degree oven until done. If the milk curdles, no problem. The flavor is what you are after. When the chicken is done, cover while you thicken the gravy after removing any fat. I use cornstarch and milk for my thickener. I got the idea from watching videos. It is so succulent and full of flavor. I usually save the leftover and add them to a homemade soup or make a chicken stew. It is unbelievable.

I made this today. Was a bit bland for me, so I added chicken stock powder and fresh minced garlic. Poured it over grated cheese in the soup bowl. Now it's yummy.
Soup looks delicious. But i get scared abt the raw egg in anything. Can i skip the egg or toral egg mixture, or yse yougurt only?

Just made this soup and the cheese garlic bread.
Added minced garlic and herbs de province to the sautéed vegetables. Also substituted chicken broth for the water. Delicious. Even my husband who does not like vegetarian food loved it.
Topped soup with shredded Parmesan cheese, which took it to the next level.
The crusty cheese bread paired perfectly with the soup.
My only suggestion would be to have a link to website where I can print the recipe ( with a list of ingredients and then separate directions). It was difficult to follow the directions.

Because your soup wasn't vegetarian. You added chicken stock which makes it non-vegetarian, and you admit it impacted the flavour.

The presentation looks nice, watching you slowly prep and cut more veggies in between sautéing, but my friend who is still learning to cook tried this and ended up burning the onions and carrots. I told her it is always best to prep everything before hand and have your ingredients at the ready. Prepping as you cook takes years of practice.
I just made the soup and the bread....WOW, I love it! Tastes like real home cooking - because it is, but I don't cook very often - and so easy to make. I added 3 cloves of garlic for a little kick. :D I didn't have mint and I would have added cilantro if I had had some. Thank you so much. xo

What a beautiful soup. My favorite way to add carrot to soup is to grate them. My husband hates carrots in chunks, and will pick them out. When I add them as grated rather than sliced, he never complains. Some of the carrot is absorbed into the broth enhancing the richness. So delicious and healthy.

@@oppsendless3814 I do use raw egg. I never worry much about that, honestly. I get my eggs from a friend with chickens and clean them well before I use them. If you are nervous, though, just cook the soup for a bit after you've added the yoghurt/egg mix.

Ellerinize sağlık 👏👏👏 as I'm on keto diet I'll substitute potatoes with celeriac and skip the vermicelli or add Konjac noodles (0 calories). Before keto, I used to cook a similar soup with sweet potatoes instead of regular ones. Give it a try, it will be even more delicious 💕👋
And my dressing was egg yolk whipped with milk, that's the substitute for cream in the french cuisine. You can add this to every soup you make.

Love adding sour cream to soup too, adding just to the portion being served, to cool it a bit and make it creamy. Yesterday was the first snow this season here in Denver. look forward to some warm delicious soup 🥣
Superb recipe, tasted gorgeous, you don't get this veg soup in a tin, after making it the second time the tweaks I made was, added all the peppers, more pasta, as I was using margheritini soup pasta, to bulk it out more, as there is plenty of liquid, to boost flavour 2 cloves garlic grated, and 2 knorr vegetable stock pots, the eggs and yoghurt make this soup special, never would have thought about adding that to soup, but it works and adds a nice consistency to the finished soup,

In txt description you forgot the loaf of Baguette or other toast you use for the baked herby cheese snacks. Love the principle of an autumn- soup- would prefer personally to use more Celery instead of capsicu.- and maybe use a handful of frozen garden peas!

I like everything about this, including the potatoes - I would use either chicken, beef, or my preference - vegetable stock instead of plain water. What would soup be without a large head of fresh peeled garlic finely chopped and sautéed along with onions - keep an eye - they burn quickly. A very creative recipe and will try yogurt along with it next time. Stew is such an artistic, as well, as a culinary adventure in the kitchen. I prep all the vegetables the night before as well as either sautéed chicken pieces or beef chunks also. Put it all together the next day and smells great and tastes even better! It can be frozen for later consumption if needed! Although I'm single, retired, and "poor" - it's fun to make and more fun to eat!
