    I made it yesterday. Just changed baking powder to 1.5 tsp and added half tsp baking soda to give it a good rise.. It came out really good and light.. Next time I will add few raisins or date chunks to gv the extra sweetness. Thx for the recipe

    I like that you omitted the honey, like many other paleo recipes insist upon. There really is no need for additional sweetness.

    I made this exactly as-is, but I added 4 dates to make it a bit sweeter (I was a bit nervous that it had no added sugar), and I used a food processor to mix the wet ingredients. The loaf is delicious and so tender! My first time using coconut flour, and this made me confident to try other recipes using this flour again. Thank you!

    Not sure why but mine was a bit on the dry side. I subbed chia seeds instead of flax meal. I had to add another egg to give it some wiggle and even then it didn’t just flow into the baking pan like yours did

    I made it, very good. Nice and moist. The zucchini one I put raisins in and it gives me diarrhea. It must be the raisins. I will have to try it with nuts. I am on a low acid diet because of damage to my throat from silent acid reflux. Not coming up but going down.

    I tried it tonight and the flavor was surprisingly sweet! However, I don’t recommend using almond flour instead of the flax-meal because I did that and my bread had a very odd sponge-like texture. Next time I will definitely use flax-meal. Thanks for the recipe though! :)

    I have cooked this, but it is soft and wet on the bottom, I did not use seed butter but milk butter, and I changed the cornstarch for xanthan gum, because it did not have those ingredients and I cooked it for 50 minutes at 350º F as it says the recipe. Has anyone experienced the same? or do you know what happened? I mean this is still delicious, but with a weird texture... thank you in advance to whoever can help! Thank you Regina for your receipes, Love your channel! :)

    • @Leelalicious
      @Leelalicious  ปีที่แล้ว

      I think your substitutions are the problem. Regular butter is not a substitution for nut butter, because of the lacking fiber. You only got the fat aspect. How much xanthan gum did you use? I know it can work in place of cornstarch when thickening sauces but I am not sure it works as a substitute in this banana bread. It looks like my paleo coconut flour banana bread recipe leelalicious.com/paleo-banana-bread-recipe/ without cornstarch or nut butter that I also shared in your comment on another video will be more suitable for you

    What of i where to use regular flour?

    • @Leelalicious
      @Leelalicious  4 หลายเดือนก่อน

      I am not sure. This recipe was specifically developed for coconut flour. The amount of eggs and additional nut/seed butter are there to try and mimic a wheat flour banana bread as best as possible. So I am not sure that simply substituting wheat flour (at a ratio of 3-4x the amount of coconut flour) will have good results

  • @nursesona7227
    @nursesona7227 ปีที่แล้ว

    Why nut butter and coconut oil? Two types of fat? Also, fry flax seed (binding agent) when already have eggs?

    • @Leelalicious
      @Leelalicious  ปีที่แล้ว

      My goal with this recipe is to have a good tasting (not too dense) gluten free, dairy free banana bread. Nut butter serves not only as fat here but also gives the loaf structure and flavor. Same with the flax it is not only a binding agent. I've tried to omit it and only use eggs, but the overall texture is too eggy and a bit soggy. The flax meal makes for a more pleasant texture

      I find the texture is much better with flax meal. Without it the bread seems too wet in the center

    Can I use almond milk instead of coconut oil?

      I don't know for sure. But with coconut flour I always have the best results when using some oil in the recipe

    Can i use butter instead of coconut oil?

    • @NewtC1998
      @NewtC1998 3 ปีที่แล้ว +1

      I want to know the same thing. I never use coconut oil so didn't want to be buying any just for this recipe.

      @NewtC1998 3 ปีที่แล้ว +1

      I've just read this though - 'The very best substitute for coconut oil in baking is the same amount of butter! ... Because butter is also solid at room temperature, the properties are similar. Using butter will yield a more rich, savory flavor than coconut oil. It also gives a chewier, moister texture to baked goods like cookies'. I'm going to give it a go with butter. X

      It sounds like your oven is running too high. Do you have an oven thermometer to check?
      You can also try covering the top with aluminum foil to keep it from darkening too much

    If you’re using bananas, it’s high sugar!

    • @Leelalicious
      @Leelalicious  11 หลายเดือนก่อน

      I didn't say it was low sugar. Just that thee is no added sweetener aside from the bananas we already need. And compared to other banana bread recipes that also use added sugar this one is by comparison lower in sugar actually. It may not be suitable for a keto/no sugar diet. But then again, no banana anything would be

    How to make this eggless?

  • @Rayis4444
    @Rayis4444 3 ปีที่แล้ว

    It tasted okay but I really disliked this recipe because it went bad in just a day and a half even when it was refrigerated at the lowest possible temperature. My watermelon froze on the corners, the temperature of the fridge was so low. Still, it started smelling bad and became tangy in flavour in just a day and a half.

    ! You're saying "no sugar added" and then you add some chocolate chips? Where's the logics? Anyway, thank you for the reciepe, Im gonna try it now (but really without sugar added)

    • @Leelalicious
      @Leelalicious  4 ปีที่แล้ว +1

      The chocolate chips are optional. I always use dark chocolate which has low sugar. There are sugar-free chocolate chip options as well. Otherwise you can use nuts or no add-ins at all
