    3 eggs
    1/3 cup natural nut or seed butter

    1/4 cup flax meal
    2 teaspoons baking powder
    1 teaspoon cinnamon
    1/2 teaspoon sea salt
    2/3 cup walnuts and/or chocolate chips optional (I do 1/3 cup each)

    • 3 eggs
    • 3/4 cup pumpkin puree

    • 1/3 cup ground flax flax meal
    • 1/4 cup arrowroot powder/tapioca flour optional
    • 2 teaspoons baking powder
    • 1/2 teaspoon sea salt
    • 4 eggs
    • 1/2 cup flavorless oil, like avocado oil or melted refined coconut oil
    • 1/3 cup dairy free milk, unsweetened almond milk, coconut, etc.
    • 2 tbsp honey optional
    Topping:
    sesame seeds or other seeds of choice - like sunflower seeds, chia, flax, etc.

    For keto / low carb bread you can use xantham gum as a thickener for the batter, 1/4 tsp - one quarter tsp per every cup of flour .. if it's a little less than 1 cup still 1/4 tsp is fine if you're adding ground flax besides flour

    Such an awesome video of 4 wonderful things. I am so impressed by the suggestion of using Tahini in the banana bread!!! I love Tahini and have always struggled with interesting ways to use it. This recipie is a slam dunk and so easy. Thanks for all you do!!!!

    I used raw sprouted pumpkin seed butter, which is green in color, and it made my banana bread a light green, but it tastes good! Haha.

    Wonderful thank you very much I was over complicating things I do wonder though if you add everything together in a mixer if it will not stretch the Start and cause A sticky glue like dough? And I think I will try Without eggs as I don't have any and it's the middle of the night

      I don't think any of these coconut flour recipes work without eggs. I've never had a problem with the starch in the blender method. Most starches need heat before they start to thicken as they would in a sauce or gravy

    Greetings Leela, thank you for sharing this awesome video and teaching us in great details. This is my first time here and I thoroughly enjoyed this video. Do you have any suggestions for replacing the eggs? I normally use homemade grounded 1 tablespoons flaxseed to 3 tablespoons of water and then put it in the refrigerator to thicken up.

      I don't think the flax egg replacement works well in this recipe. It makes the bread very dense and gummy. Instead, I would suggest to try soaking the flax meal that the recipe already includes and see if that hydrates the batter enough.

    I just came across this pumpkin bread recipe on your channel I know the post is old BUT I was wondering We cannot have any seed butter can the breads you have here be made without the seed butter?? thank you and I really like your channel

    Hi 😊 can i used 3/4 cup of coconut flour and 1/2 cup ground flaxseed, since i don't have arrowroot or tapioca flour? And using same measurement to others ingredients it will turnout good texture and tastes good? Thank you in advance for your reply 😊✌️🇵🇭

      There is no need to adjust the other measurements when omitting the arrowroot/tapioca

      This is more like a quick bread recipe (since it is leavened with baking power and not yeast). So yes the structure will be a little cake like. That's why I like toasting the slices for more of a crunchy bread consistency

      I have a paleo coconut flour banana bread version without any seed butter here leelalicious.com/paleo-banana-bread-recipe/ It is still delicious but the texture is more obviously different from a wheat flour baked good. While I haven't tested the, you should be able to adjust the other flavors in a similar way with 1 extra egg and about 1/4 cup extra coconut flour. Hope this helps

    Thanks a lot...can I subtitute the flex for oat and coconut oil for olive oil...because in my area you can't find those.and still get same result.. because am working on my weight.

      I am not sure about oat in flax of flax. Olive oil may have a strong flavor unless you use lite olive oil. If you can do dairy, melted butter works or another flavorless oil

    Absolutely love these recipes! However-I seem to encounter a problem with the dough not rising high enough as in your videos. I'm struggling to find out what my problem is. My bread comes out about 1/2 inch thick. It deals with you fluffing the egg whites. I do follow your instructions to the letter, but for the strangest reasons, mine comes out rather flat.

      I am so glad to hear you like the recipes and sorry to hear you are running into a rising issue. There are a few reasons this may be happening. How large is your loaf pan? Could it be the batter is just spreading out more? Mine is 8x4 inches. How old is your baking powder? Is it still active? Have you tried checking your oven temperature with a thermometer? An oven that runs too low could cause the batter not rising much. And a too high temperature could cause it to rise too fast and then collapse.

      Unfortunately the best way to make coconut flour work for baking is by using eggs. Flax and chia egg substitute or psyllium husk are sometimes used but they all have denser results

      I wouldn't substitute coconut flour in a recipe, it requires more liquid than other flours . You can always experiment but be aware it's a risk . K

      Yes, like Katharine already says, substituting coconut flour is tricky. It behaves very differently from other flours. Every 1/3 cup of coconut flour equals about 1 cup of regular flour or gf blend. You can certainly try it with this ratio in mind, but you'll likely have to adjust the batter with either more flour or more liquid as you go along.

I first started making gluten free treats for my husband with gluten sensitivity. I realized coconut flour is cheaper and goes a lot further than almond flour. And now we have realized almond flour and almond milk doesn't agree with my husband anyway.

      I have not found a way to make big coconut flour loaves work without eggs. I have tried flax substitute and it makes the breads very dense and gummy

      Hi thanks for you interest in my recipes. The definition of a dairy product is made by milk of mammals. Eggs come from birds. So they are not dairy but certainly an animal product. If my recipes use dairy alternatives like coconut oil, almond milk… I label them dairy free for those that can’t digest dairy well (like my husband). If they are free from animal products (no dairy, eggs, or honey) I label them vegan. Hope that clears it up a bit
