I made this recipe this morning and they are so delish! They’re moist and flavorful. I doubled the recipe because coconut flour doesn’t really rise. I filled the muffin tin all the way to the top and then added an extra little mound of batter to the tops. So, I got 15 good sized muffins from the doubled recipe. I used allulose as my sweetener so when I doubled the recipe I also doubled the sweetener but also added another one third of a cup of allulose because allulose needs 1 ¼ cup to equal 1 cup of sugar. I also added walnuts and a little cinnamon. I love this recipe because the bread or muffins are really moist but the recipe doesn’t use a ridiculous amount of eggs like some of the other recipes do. Thanks!
Hey. I made this without any sugar and added some walnuts and a full 70% cocoa chocolate bar. It is perfectly sweet without sugar...great recipe. V economical.
Made this today, didn't have coconut sugar so used regular, but put only about 1/3 (~30g), came out quite good, although I think this could work with no sugar. Thanks for the recipe.

I had to come back and comment again because I just realized I can sub out the bananas and the cinnamon for pureed apples and apple pie spice blend and can also sub out the bananas for pumpkin puree and pumpkin pie spice. Whee! One recipe does them all.
I want to bake mine in a regular 13" cake pan and use as coffee cake....I have a gf recipe from using coconut flour and never made it because it calls for a fantastic 8 eggs. And this one used only 2 eggs, like a 'regular' banana bread. This one looks fantastic....and easier than book recipe.
My family enjoyed this version! I used regular brown sugar & I'm wondering if regular vegetable oil will work instead of butter? I noticed that letting the banana bread cool completely helped to release it more easily from the pan. (I didn't use parchment paper, but sprayed the non-stick pan with oil.) Also, it seemed really wet at first until it cooled down, & then the texture was perfect. I used the recommended 3 bananas, but believe one more would might have helped. I would make this again!

For me, I think 3 bananas is sweet enough. I added sugar free chocolate chips, and next time I'll try walnuts. What a tasty and healthy snack!
So I wanna use your basic recipe for muffins but only have 1 banana but thinking I could use some crushed pineapple. Instead of cinnamon I wanna use cardamom. What do you think? I know coconut flour soaks up a lot of liquid so should I add a couple tablespoons? Or more?
Sounds interesting, it could work with pineapple instead. Maybe add the coconut flour a little at a time, slowly,give it time to absorb liquid and see how you go!

Butter to Coconut Oil (56ml)
Coconut Flour half cup is 56gm so that's why I'm using same amount of coconut oil to Coconut Flour
I substitute the coconut sugar to 1/3 powdered Erythritol
I add up spices for more flavour 1 TSP Cinnamon
1/2 TSP Ginger Powder & 1/2 TSP Nutmeg Powder
I also add 3 TBS of sugar free dark chocolate Chip because I love chocolate. That's it and u can bake at 180© for 45 minutes. It taste heavenly!!!

Indeed, it will be salty, cut back or eliminate salt for the salted butter.
