Struan Bread Recipe

  • Struan is an Irish harvest loaf that makes delicious toast. It's a great way to use up any leftover grains or seeds you have in your kitchen; I've tried it with oats, grits, brown rice, sunflower seeds, flaxseed meal, wheat bran and lentils, and I always love the results.
    In this video I set out to make struan for the umpteenth time, but got frazzled after I somehow strayed from my notes and used too much water.     Hi, Gabrielle! I’m making Struan for the first time after having a slice toasted & buttered that my twin brother made a couple of days ago...it was delicious! I made my soaker of mixed grains that will ferment overnight, and went looking for a video to see how folks make their struan loaves...there are only two videos that showed up, so I watched yours first. I thoroughly enjoyed watching you recover from your over hydration error, and I kept hoping that you wouldn’t use too much flour in your recovery effort...you didn’t let me down 👍👍 I'm 70 years old, and have been making ALL of our breads for about 14 years. The past couple of years I’ve been working with high hydration doughs, and now all of my bread formulas are at about 60-65% hydration. I get a lighter crumb and a taller rise, with relatively no change in the balance of the formula. Wet doughs can be your friend if you learn to work with them.
    Here’s a little tip if you haven’t already figured it out on your own...buy a steel blade bench scraper, and use it to "tuck" your wet doughs under itself while drawing the dough towards you, while adding a bit of flour as well. It will keep your hands free from sticky dough, and is an alternate way pull and stretch the dough.

    The bread does turn out fine. If your watching this you'll have to watch it to the end. For those that ask, "can my bread still turn out after you have made a mistake," the answer is yes. Just watch the video.
