Ok, this soup is D-lish!! I must admit, I'm not a vegetarian or vegan, but after watching this video, I rushed to the store and got all the ingredients for this and also the pumpkin/ricotta shells! I'm super excited to try that as well! I'm a single 47 year old guy zesting lemons for a Gremolata!?! Who am I?? 😂 Needless to say, thank you for inspiring me to step out of my comfort zone and try something new! 🙏💕
As a carnivore, I can say with sincerity that this dish is sooo good that I made this recipe twice in 2 days and haven't even had meat cravings! I'm now a fan of your channel, thank you for sharing your yummy and healthy recipes with us!

Im making this yet again lol and I gotta say, I genuinely cannot believe just how much clear, concise instruction you packed into 9 minutes without being overwhelmingly over-detailed. So many good tips! This is such a great video and recipe! Love this soup, well done :)
I made this with less than half of the ingredients (no fresh herbs or kale, just used dried herbs and spices and frozen spinach, and used a teaspoon of flour instead of potatoes) and it came out tasting like a restaurant meal. So delicious! I imagine the original recipe is phenomenal.
I’m sitting here, full and satisfied by this wonderful soup. My dad said whatever you’re cooking smells amazing, all the other vegan meals you’ve cooked don’t smell good (lol), to clarify, this is the first of your recipes I’ve made so safe to say I’ll be making more. Thank you!!
Leah your dad sounds like my son😂😂😂. He’s always making crazy comments about my dishes. He fights me tooth and nail on eating healthier. I cannot wait to make this TODAY. I have everything except kale. I will use spinach instead hopefully it will taste great.
Literally just watched this video and realized I had all ingredients I needed and hopped up to make it. I didn’t have white beans so I used chickpeas instead and threw some red lentils in for some extra protein and it was INCREDIBLE!!! Such a good cold weather soup now that’s it’s getting cold here in Chicago! Thank you for the recipe!!
Just made this today and followed directions to T with one exception. I used baby spinach instead of kale because it is what I had on hand. SO GOOD! It will be one I repeat often. Thank you!
You are really coming into your own voice. I have been watching your channel for a while now and this video really shows a nice side of your personality. Soft soothing voice with a touch of down to earth playfulness.
This one deserves a comment. I have been tired of eating meat all the time and was looking for a simple vegetarian soup. I stumbled upon this recipe and honestly thought that it may be way above my skill level but I decided to try it. After trying this recipe, I now thinking of cooking as a true art! I would never think that pairing some the ingredients would produce such a rich flavour. My mind is blown and after binge watching your videos, I may be on my way to becoming a vegan. I want to try everything! Thank you for sharing this dish and taking the time to thoroughly explain the process.
I just made this tonight. It is SO GOOD! Even my kids that are not fan of veggies said it was yummy! We just added a garlic bread on the side. Thanks for teaching us more tips on how to flavor our food!
I made this soup a few nights ago and it was PHENOMENAL! It’s my new favorite comforting soup. Thank you so much. The artichokes were such an interesting and flavorful addition. Will be enjoying this soup for years to come. :))
I must've known I would be making this because I coincidentally bought all the ingredients yesterday at the supermarket. When I watched the video, I was so happy! Definitely going to make this for dinner tonight. Even my omni boyfriend will love it, because of the creamy fall flavors! :)
I made this today and substituted collard greens instead of kale. It is delicious!!! I didnt do a bouquet just threw the herbs in lol. Gremolata takes extra work but totally worth it!
I had a can of artichoke hearts at home (my ex bought it, so at least for 2 years), never knew what to do with it, so I decided to use it in this soup. What a beautiful way of freeing up space for new and better memories! Thank you :)
Just wanted to thank you for the tip on preserving my herbs longer. This week I had to throw away my rosemary and thyme- I only got to use them once or twice! It hurts to throw it away.
Low moisture fresh herbs like rosemary and thyme should never be thrown out just because they dried out before you could use them. Even dried, they will still pack a lot more flavor than store bought dried herbs which may be up to a year old before they're packaged and sold.
I made this yesterday (Sunday)...and I will enjoy for the week. So good. Thanks for the inspiration. I changed it up a bit. I added more greens -- kale and spinach. The idea to cream 1/2 of the beans (I mashed with a potato masher) to make it creamier -- YES! Love this recipe---it's my new soup for winter. Thank you!!!
I used spinach and kale in mine, still really good. On a cold winter night like tonight, I wanted a hearty, warm, yummy, nutritious soup and this hit the mark.
Thanks for the video! I made this tonight, and it came out great, even with several substitutions: extra carrots and potatoes for celery and artichokes I did not have; spinach for kale; marjoram for rosemary; dried basil and parsley for fresh, and a teaspoon of lemon juice for lemon zest. I also cut up and tossed a few small mushrooms that were around. I sprinkled a little organic virgin olive oil on the first bowl, but don't see the need for adding that extra fat to an already tasty soup. Looking forward to the leftovers, and making it again but with all the original ingredients. Note: your written instructions don't actually state when to add the Gremolata to the soup.
Amazing, a herald of a new generation of soups. For the first time in my life have I found celery so much in its natural habitat, in no way overpowering but mingling with the senses. Superlative.
Awe! That's so cool that you support other vegan cooks on here, Yeung! WOW! I made this for dinner tonight and served it with toasted sourdough bread…it was a hit! Don’t skip the gremoIada. I wasn’t expecting such a delicious roller coaster ride of flavors and textures. Another fantastic recipe from Nisha! Follow the recipe and you will not be disappointed!
You are a champion for still creating videos in the middle of a move. I know all I wanted to do was sleep after all that unpacking. Thanks for bringing us tasty recipes!
This has become my favorite soup!!!! I’m not fully vegan, but we’re trying to incorporate more vegan meals throughout the week little by little. Thank you for all the delicious recipes 😍
I usually make vegan soups once a week. I have my staple recipes, but love trying out new ones. This was hands down the best soup I've ever had. It was so simple, easy to make and bursting with flavor. I did add a few other seasonings - some tumeric, onion and garlic powder, nutritional yeast and mushroom powder seasoning and I did skip the artichoke hearts. The blending at the end is a must for that creamy texture. I made the gremolata only because I had the ingredients already. I didn't think it was going to add much quite honestly, but it was a game changer for this soup! This will definitely be going into the rotation!
I don't use garlic nor onions of any kind because too harsh to digest and interfere with my meditations, and I don't consume oils anymore after learning that damage the arteries (Dr. Esselstyn's study), but all the rest looks amazing! Love this recipe, I am going to make it today, thank you! (P.S. It is possible to sautee the veggies in little or no water 😘) 💚
i've made this twice, and every time i forget how delicious it is! i don't use the fresh herbs. just bay leaves and whatever dried italian herb mix i have in my pantry, but it turns out perfect anyway. i like to grate some lemon into the pot and squeeze in just a dash of lemon juice as well. it comes out soooo good, i could eat it at every meal! my husband is a huge meat lover and he's always asking for a second serving! thanks, nisha!
This will be on my menu next week since I just got done meal prepping for the week. Thank you for providing a way to preserve and up cycle fresh herbs. I have always been hesitant to use them because they usually go bad before I have a chance to use them again, and it was just a waste of money. I appreciate you Nisha.
This turned out amazing! I made it twice in the last 10 days. I love the creamy texture without coconut. And those flavors! So good. One more of your recipes added to our new healthier lifestyle cooking. Thank you, Nisha!
I made this for dinner today and I. Am. In. Love. Best soup I've ever made and the first time making anything entirely plant-based. I'm SO STOKED! What a soup! The gremolata was so incredibly worth the few minutes of chopping. My partner could not stop remarking on how good it all smelled while it was cooking and how YUMMY it was once we were digging in. Absolutely heavenly, thank you for the recipe, guidance, and tips!!!! I'm excited to keep coming back to this channel as I keep on building plant-based habits and meals.
I'm in love with this soup and making variations of it. My favorite so far has been adding cremini mushrooms sauteed until brown with chopped fresh thyme, which was a test replacement for pancetta that I saw someone use in another recipe. Also riced cauliflower is an excellent addition especially the texture it adds. I like to sautee or roast everything whether I add a potato or cauliflower, getting some color on it gives the soup such a rich flavor.
Thank you so much for the idea of freezing herbs in oil, I needed that. My daughter is vegetarian while the rest of the fam is not. I will make this soup as my base and then split adding ham for the rest of the family. This is a beautiful soup that I know will taste great - she will love it.
This soup is so delicious but also straightforward! I especially love the little flairs that makes it feel so luxurious. I think I'll add a gremolata to everything I make now!!:)
I never comment on videos but this recipe was amazing. My husband who is (reluctantly) joining me on my vegan journey even said it’s amazing. You surprised him! Thank you so much.
Oh wow just made this soup may 2022. It’s divine, creamy and do flavoursome. I even made gremolata which really enhanced it. This will be a winter regular. Thank you from australia
I'm not vegan or even vegetarian in fact I'm a Hunter but I love the taste of vegan dishes. There is so much thought put into them and the flavor is amazing. I support your lifestyle not because I join it but because you're just being Who You Are and that's great.
Congrats on the new house! I learned some things in this video, and that's part of why I love this channel. I'll be trying this soup next week! Your recipes and flavour profiling skills are the best! Thanks so much!
Just made this soup for dinner and it was a super hit with everyone! My friend says she could eat it everyday and even for breakfast. The gremolata topping, which I have made before for one of her other soup recipes, was the kicker. I do add the lemon juice as well. This is a sure-fire winner to add to the regular repertoire.
If you want to use parm cheese on top, skip the red pepper flakes because it is heavy on the stomach. I have tried this with parsnips for extra vegetables and it also came out really delish.
Oh, I'm going to make this tomorrow! I just cleaned up my garden earlier today and have all the ingredients (minus the beans) freshly harvested, even the herbs yum! Love your new kitchen set up, congratulations on the new house!
I prepared this soup for the first time today and it was such a delight! It has a hearthy warm flavor and the gremolata gives it a bright zing. I actually discovered at the end that I had forgotten the parsley and basil. However I'm so glad I didn't skip the gremolata which I prepared with some fresh thyme instead. It turned out delicious! I'm in love with this soup :)
I always enjoy her recipes and presentation. When I cook with onions, I keep the peel as whole as I can and cook it as well. It gives off much flavor as well as some salts to the dish. Keeping it intact allows you to pull it out at the end of cooking.
Tried it for Thanksgiving. Everybody loved it!! Thanks a lot Nisha for actually introducing me to so many ingredients 🥰. Also loved that extra saving tip too. The thing I like about ur videos is that there is no show off. Nisha does her thing and the videos does show her as she is..embracing her perfections and imperfections. Well now that’s complete. 👌 All the very best Nisha 👍
SOOOOO DELICIOUS! I added broccoli and spinach 🥦 at the end with the kale. Amazing. Between the beans, potatoes and veggies… hits mostly all of the nutrients and vitamins
This soup is delicious! It did take me longer than 50 minutes to make, but totally worth it! I will freeze the left over soup for the upcoming week. Love, love, love! Yum😊
I have had this in my list of recipes forever and I finally tried it today! It was a lot of work lol but it was worth it! It's so good 😋 I cut my prep time in half by using a vegetable chopper
Just made it and the whole fam loved it. The gremalada was a great flavour boost. I ended up using rice instead of potatoes since we were out and used Swiss chard instead of kale. Still turned out great
One of my first vegan recipes I tried. Some of it I was questioning if I'd like it or not. It was very tasty. My wife enjoy the broth before I blended half of it to thicken it up. Thank you for this delicious recipe. This will feed me for the next week.
I cannot wait for a house tour! This is a favorite soup! Thanks for the reminder. I’ll make it this week! I’ll be gifting your cookbook to a friend soon💕
Excellent soup. I deglazed with a white wine and used cilantro instead of parsley. It was a wow event at the kitchen table tonight. Super easy process too. Thanks so much!
Love this soup!!❤ I made it three times over 5 or so months, and I will be making it again tonight. My teens and I clean then pot every time so no leftovers to freeze lol. Thank you!!
Yum! This looks so hearty! Can I use some other greens or a combination of two greens? I was thinking collard greens because I'm calcium deficient but not sure how it will change the taste.
I virtually never comment on videos but wanted to say that this soup was a hit with my family (and none of the rest of them are vegan!) So flavorful and satisfying, we will definitely be enjoying again. Thank you for the recipe!
Made this tonight, I added chopped Roma tomatoes. It was absolutely delicious and that kick from the red pepper took it over the top! Thanks for this recipe
This was so awesome and it was the perfect close to a day of smoothies, so warming and hardy! I added great northern beans to the cannilini, because I trippled the recipe and didn't have access to fresh herbs, so I used dry. So delicious!
This is absolutely an amazing soup! I made it last week and we just could not believe how much flavor it had! I’m actually going to make it again tonight and serve with a ninegrain bread. Thank you 🙏
I found this while looking for something new to make myself for supper. I am newly vegan and in need of ideas. I'll be having this for supper tonight! It's fantastic to see a creamy meal that doesn't involve nutritional yeast or really anything extra to make it creamy!
Made this last week and sooooo glad I did. I ate on it throughout the week for breakfast and dinner and not once did I get tired of it. Plus it's so nutritious, definitely going to be making again very soon

Any link for how to freeze the soups? Thank you
@@RainbowPlantLife I cannot find the link for the freezing
I'm not vegan or even vegetarian in fact I'm a Hunter but I love the taste of vegan dishes. There is so much thought put into them and the flavor is amazing. I support your lifestyle not because I join it but because you're just being Who You Are and that's great.
Congrats on the new house! I learned some things in this video, and that's part of why I love this channel. I'll be trying this soup next week! Your recipes and flavour profiling skills are the best! Thanks so much!
That’s such lovely feedback! I’m so happy you learn new cooking and flavor skills from my videos. That’s what I strive for!
I wish there were 2 comment sections where one was for people who actually tried the recipe to review it and notate anything they did differently.
If you want to use parm cheese on top, skip the red pepper flakes because it is heavy on the stomach. I have tried this with parsnips for extra vegetables and it also came out really delish.
So glad I'm not the only one who doesn't love celery... thanks for sharing! Great recipe, going to try it out tonight
1. this looks delicious
2. you're absolutely gorgeous!
3. you're SO likeable!!!
I’m sicker than a dog, yet after watching this, I can’t wait I to get better just so that I can make this!!! Thank you!!!
Oh, I'm going to make this tomorrow! I just cleaned up my garden earlier today and have all the ingredients (minus the beans) freshly harvested, even the herbs yum! Love your new kitchen set up, congratulations on the new house!
That's so lovely to hear that you have everything freshly harvested - I can only imagine how delicious it will taste!
This is so yummy! the gremolata just takes it next level (i was initially super skeptical, but glad i took the "risk"). thank you for sharing!
I always enjoy her recipes and presentation. When I cook with onions, I keep the peel as whole as I can and cook it as well. It gives off much flavor as well as some salts to the dish. Keeping it intact allows you to pull it out at the end of cooking.
I'm making this today! When you said 6 cloves of garlic, I actually thought, "only 6!?"
haha I forgot to mention there’s more garlic in the gremolata 😂
OMG right? You can never have too much garlic. Yum!!! 😋
@@hotmessmissy-artnrving998 I completely agree
Thank you for not unnecessarily rambling on in the beginning. Looking forward to making this recipe!
This came out so good! It’s WAY more delicious than I ever imagined. Thank you!
Yay! So nice to hear that, Charlene! Love when a recipe surprises you like that.
Cooked this, for my mom and she fell in love. New household fave.
Aww Riya. You are too kind. I am so glad you and your family loved the soup, and that you love my videos!
SOOOOO DELICIOUS! I added broccoli and spinach 🥦 at the end with the kale. Amazing. Between the beans, potatoes and veggies… hits mostly all of the nutrients and vitamins
Congrats on your new crib 😁. I love to see new recipes everytime, they're easy and always tasteful vegan 🤗🤗🤗. Thank you for sharing 🙏
You’re so sweet! I’m so happy you enjoy my recipes :) and thank you!
This soup is delicious! It did take me longer than 50 minutes to make, but totally worth it! I will freeze the left over soup for the upcoming week. Love, love, love! Yum😊
This sounds/looks so delicious!! Thank you for all the extra tips!
You’re so welcome! I’ve picked up so many cooking tips over the years so I love to be able to share them :)
I have had this in my list of recipes forever and I finally tried it today! It was a lot of work lol but it was worth it! It's so good 😋 I cut my prep time in half by using a vegetable chopper
So glad for you and your new house. CONGRATS, enjoy!!🎉🍾☺️👍🙏🏼
Thank you, dear Vivian! You’re always so sweet!
Thank you for including tips on what to do with beans so they will be easier. I appreciate the tips because I have a hard time digesting them. Thanks!
Just made it and the whole fam loved it. The gremalada was a great flavour boost. I ended up using rice instead of potatoes since we were out and used Swiss chard instead of kale. Still turned out great
I just made this today for Halloween night and it was amazing with bread!
That's great to hear! I agree about the bread part - it's so satisfying to scoop it up with some good bread!
I'm so happy you love this soup, Marie! You are too sweet.
Thanks for the recipe & demo. And double thanks for not having mid-roll ads.
The barefoot contessa cameo made me laugh out loud. So cute!
Haha she was my idol growing up!
me too, great memories :))))))
Excellent soup. I deglazed with a white wine and used cilantro instead of parsley. It was a wow event at the kitchen table tonight. Super easy process too. Thanks so much!
This looks so good! It's nice to get some creamy recipes without nuts or coconut, since those are allergies in my house!
I'm glad you like this idea! Hope you and your family will enjoy this recipe!
Hi Priya, yes that should work, you probably want to simmer the collard greens for a bit longer since they're tougher than kale leaves.
I used spinach & it was sooo good
Just cooked this recipe and it is delicious! I also added kale for more greens. I’m definitely putting it in rotation.
bloody hell, this actually looks like something I want to eat. e
Me too
I virtually never comment on videos but wanted to say that this soup was a hit with my family (and none of the rest of them are vegan!) So flavorful and satisfying, we will definitely be enjoying again. Thank you for the recipe!
Just made. Very hearty👍Dont skip the lemon zest really adds extra to it! I love that healthy feeling after 😁
Made this tonight, I added chopped Roma tomatoes.
Thank you 🙏
Thanks so much for sharing, Maria! so happy you enjoyed this soup so much :)
