There's nothing unreasonable about that. Try a Portuguese white bean and kale soup. Toss some Linguica in (or Chorizo if you can't get Linguica) for extra flavor. Phenomenal soup for the cold winter days.
I made this last night. My value to the household has gone up considerably. A really tasy recipe. I used two heads of garlic and was able to get a fresh garden sprig of rosemary. A freshly baked Italian loaf and this soup on our first chilly night of the fall. Perfect!
Definitely a winner in my book. And this is another example of a tasty meal that doesn't cost an arm and a leg, something we're all concerned about these days. And don't forget to roast extra garlic to spread on some nice crusty bread to go with the soup!

My Son visited today and I send him home with a large portion of it as he loves fresh tasty food, I will definitely make again !! A really good substitute for pancetta (if you're a vegetarian) is roasted cauliflower. First cut out the stem in the middle and cut it into quarters. Drizzle the core and top of the floret with good olive oil and dust with a mix of coriander, granulated garlic, onion powder, salt, pepper and bay leaf. Roast in the oven, uncovered with the garlic clove at the same temp until the top is a dark golden brown, and then chop into cubes. Also you can do the same thing with your vegetables and then boil to make a great vegetable stock.

This is the BEST soup I have ever made and it's thanks to you. Outstanding flavor and what a difference fresh herbs make. I wasn't really sold on the difference, always preferring dried. But tasting this soup, I was totally blown away. Great job, and thank you so much for sharing. I know you encourage us to make it the way we like it, but when making something for the first time I like to follow the recipe closely, then change up anything the next time I make it. I don't mind it for three dinners in a row and one lunch, but then it starts to get a little off. Using the slider helps me halve the ingredients to make it more manageable. I really appreciate that. I made this soup today with a slight variation and it’s absolutely delicious. I followed the directions for the most part, but since I wanted a thicker soup, I added a little pastina, and for added brightness also added spinach at the end. I wish we could post photos here, because it’s truly scrumptious.

I made this and it is so good, I can't stop eating it. Didn't have pancetta so I used bacon in its place, put some in with the beans as they were cooking (I used dry beans) and forgot the rosemary and cheese rind, followed your wife's advice and used 2 heads of garlic, otherwise followed your recipe with everything else. This is awesome! I would've given anything, while raising my three boys, to have them love something that I cooked, as much as your son loved this soup. He said that it wasn't quite as good as your Italian Wedding Soup, but he sure kept eating it! Lovely family!!

Just made this. Didn’t have pancetta, so used all olive oil. Puréed about 75% of the soup. Didn’t have a cheese rind. Used canned beans. Will use dry next time. Did stir in some freshly grated Romano cheese. This was absolutely amazing. Kids wanted seconds.
Dude, we made your lentil soup two weeks ago. My wife and I ate it for 4 dinners. I wasn’t excited about it at first, but I knew my wife loves soup so we tried it. IT WAS SO GOOD, HIGHLY RECOMMEND. Going to make this one for meal prep dinners next week! I’m sure it will be awesome.

I've enjoyed this many times in Tuscany. From Pisa, Viareggio, Florence etc they have slight differences, some add sausage etc but they all taste super yummy. This has made me realise I am overdue for a trip to Italy. Love it.

Yum! I love to add Italian kale or chard to bean soup. I made bean stew two nights ago and used organic cannellini beans. They were awesome and it was quick, super easy. I had some jalapeno smoked Texas kielbasa that I diced as my meat. I have started grating onion and fresh tomato to make a quick, light sauce. Again fast, easy, lighter than a Sunday sauce.
Madethis for dinner 2 days ago and it was simply delicious. We live in MX so we used Peruvian white beans and it was soooo good. I don’t eat pancetta so left it out. Will totally be making this again. And I did 2 heads of garlic as suggested by your wife and son. YUM! Oh and did the garlic in our air fryer on the base setting so the kitchen didn’t get so hot.

I remember going to a party at a friends house one cold and wet winters evening and when the guests walked in they were handed a bowl of this very same soup. It was the most delicious soup and exactly right for that cold weather. I’ve never forgotten it.

I have a very similar recipe (Shrimp and Bean Stew) that is a family favorite, but with a couple of additions. In a second pan sauté a pound of shelled fresh shrimp in olive oil and a tablespoon of smoke paprika, then stir into the soup for five minutes. And I also stir in a chopped, cleaned bunch of dandelion greens and finish the soup with a tablespoon of cooking sherry.

I made this the other day. I used smoked paprika instead of red pepper flakes because they’re not easy to get where I live. Forgot to put the Parmesan in but it tasted delicious just as it was. Amazed by how filling it is. Thank you so much for the recipe!
I have my first pot of this on the stove now. I cannot believe the smell. That lovely smell. Will update once the beans are done. Well beans got done and it was amazing. I used center cut bacon cause the store was out of pancetta. Next time it will be pancetta. We have a baker in the area that does a wonderful rosemary sourdough that would great with this.
LOVE IT: I’ve made this (my way - in a vat) and my family (6 boys) all love it. I use parmigiana garlic croutons which I crush in the soup separately via a blender and poured it back in. It gives the whole thing really nice texture & depth. I also use 1 leak, 2 heads of garlic and a bouquet garni (with fresh thyme and just a bit of oregano), in addition to the rosemary and the bay leaf. I take the bundle out before I add the puréed mixture back in. I finish with just a little hit of fresh chopped Italian Parsley on top….not too much, just enough to give it color. On the table I have good quality EVOO, fresh grated Parm, lite sour cream, more croutons and crushed hazelnuts for people to garnish with whatever they prefer……I personally love it with a little sprinkle of nuts. I also serve it with a huge garden salad, full of all our favorite veg and topped with feta & dried cranberries. Our bread of choice with it is cornbread made with brown eggs and 1 can of cream style corn, topped with red pepper flakes and unsalted butter on the side. Either way, however you choose to make this, it’s delicious and definitely worth a try, for sure!!!! THANKS for sharing.

My goodness, who knew something so simple could be so delicious. Sip and Feast has done it again. All of the recipes I’ve tried so far from this channel have been amazing! Edit: I also had some left over tomato paste, so added whatever I had left into it.
I’m making this soup for the 4th time. I make it vegetarian with veg broth and use canned beans so they are squish-able right away. Veg bacon gives it the smoky taste. It’s delicious and easy to make.
I do the blending this way: Ladle out a quarter of the whole pot and set it aside. Go at the remaining 3/4 with the immersion blender to make it quite smooth. Put the other stuff back in. Best of both worlds. There's something to chew but it's also kinda velvety. When serving, olive oil is great but so is a teaspoon of butter.

My mother always mashed the beans with a potato masher and I do that, too. The texture is wonderful; like you said, "rustic"❣️

I followed the directions for the most part, but since I wanted a thicker soup, I added a little pastina, and for added brightness also added spinach at the end. I wish we could post photos here, because it’s truly scrumptious.

I used vegetable stock, no meat and it was delicious! I added a mix of spinach/kale chopped up to add some green to the mix. Just perfect!

I made this and it is so good, I can't stop eating it. Didn't have pancetta so I used bacon in its place, put some in with the beans as they were cooking (I used dry beans) and forgot the rosemary and cheese rind, followed your wife's advice and used 2 heads of garlic, otherwise followed your recipe with everything else. Thanks so much for sharing this. Definitely a keeper.
This is awesome! I would've given anything, while raising my three boys, to have them love something that I cooked, as much as your son loved this soup. He said that it wasn't quite as good as your Italian Wedding Soup, but he sure kept eating it! Lovely family!!

Just made this.
Didn’t have pancetta, so used all olive oil.
Puréed about 75% of the soup.
Didn’t have a cheese rind.
Used canned beans. Will use dry next time.
Did stir in some freshly grated Romano cheese.
This was absolutely amazing. Kids wanted seconds.
Dude, we made your lentil soup two weeks ago. My wife and I ate it for 4 dinners. I wasn’t excited about it at first, but I knew my wife loves soup so we tried it. IT WAS SO GOOD, HIGHLY RECOMMEND.

I made this soup today using canned beans. Didn't need as much chicken stock. Came out great and dinner is ready before 4:00PM! Makes the wifey happy. Great channel! I give it 10 James's. :)

I've enjoyed this many times in Tuscany. From Pisa, Viareggio, Florence etc they have slight differences, some add sausage etc but they all taste super yummy. This has made me realise I am overdue for a trip to Italy. Love it.

Yum! I love to add Italian kale or chard to bean soup. I made bean stew two nights ago and used organic cannellini beans. They were awesome and it was quick, super easy. I had some jalapeno smoked Texas kielbasa that I diced as my meat. I have started grating onion and fresh tomato to make a quick, light sauce. Again fast, easy, lighter than a Sunday sauce.
Madethis for dinner 2 days ago and it was simply delicious. We live in MX so we used Peruvian white beans and it was soooo good. I don’t eat pancetta so left it out. Will totally be making this again. And I did 2 heads of garlic as suggested by your wife and son. YUM! Oh and did the garlic in our air fryer on the base setting so the kitchen didn’t get so hot.

I remember going to a party at a friends house one cold and wet winters evening and when the guests walked in they were handed a bowl of this very same soup. It was the most delicious soup and exactly right for that cold weather. I’ve never forgotten it.

I have a very similar recipe (Shrimp and Bean Stew) that is a family favorite, but with a couple of additions. In a second pan sauté a pound of shelled fresh shrimp in olive oil and a tablespoon of smoke paprika, then stir into the soup for five minutes. And I also stir in a chopped, cleaned bunch of dandelion greens and finish the soup with a tablespoon of cooking sherry.

I made this the other day. I used smoked paprika instead of red pepper flakes because they’re not easy to get where I live. Forgot to put the Parmesan in but it tasted delicious just as it was. Amazed by how filling it is. Thank you so much for the recipe!

Well beans got done and it was amazing. I used center cut bacon cause the store was out of pancetta. Next time it will be pancetta. We have a baker in the area that does a wonderful rosemary sourdough that would great with this.
LOVE IT: I’ve made this (my way - in a vat) and my family (6 boys) all love it. I use parmigiana garlic croutons which I crush in the soup separately via a blender and poured it back in. It gives the whole thing really nice texture & depth. I also use 1 leak, 2 heads of garlic and a bouquet garni (with fresh thyme and just a bit of oregano), in addition to the rosemary and the bay leaf. I take the bundle out before I add the puréed mixture back in. I finish with just a little hit of fresh chopped Italian Parsley on top….not too much, just enough to give it color.
On the table I have good quality EVOO, fresh grated Parm, lite sour cream, more croutons and crushed hazelnuts for people to garnish with whatever they prefer……I personally love it with a little sprinkle of nuts.
I also serve it with a huge garden salad, full of all our favorite veg and topped with feta & dried cranberries.
Our bread of choice with it is cornbread made with brown eggs and 1 can of cream style corn, topped with red pepper flakes and unsalted butter on the side.
Either way, however you choose to make this, it’s delicious and definitely worth a try, for sure!!!!

blending, and a swirl of olive oil on top! Oh, and good bread to sop it up with!!
I make them exactly the same way. I chop the stems and put in the stuffing. I cook on top of the stove in a big covered pot.

I LOVE this soup. I do not eat meat and just left the pancetta out. Even my carnivorous husband loved it.
I’m making this soup for the 4th time. I make it vegetarian with veg broth and use canned beans so they are squish-able right away. Veg bacon gives it the smoky taste. It’s delicious and easy to make.
I do the blending this way: Ladle out a quarter of the whole pot and set it aside. Go at the remaining 3/4 with the immersion blender to make it quite smooth. Put the other stuff back in. Best of both worlds. There's something to chew but it's also kinda velvety. When serving, olive oil is great but so is a teaspoon of butter.
