    I am so happy and proud that you found ogórkowa - this is one of the best Polish soups EVER! The celery root is much more popular in Poland, we actually love root vegetables and the celery stalks I think we use only in a soup called "rosół" but only when it's season for this so between spring and summer I guess - that's when we buy both celeriac and celery with leaves and everything for more flavour 😁
    If you are such a soup person you should definitely check out other Polish soups:
    • żurek which is rye soup, traditionally served with potatoes, sausage and hard boiled egg but it is super easy to make it vegan since the żurek's base is vegan
    • barszcz czerwony z uszkami which is beetroot borscht with little dumplings, traditionally cooked on Christmas Eve so the dumplings are with mushroom filling, also super easy to veganise
    • traditional Polish krupnik - which is a vegetable and mushroom soup with barley groats (or other kasha)
    • pomidorowa which is tomato soup but in Poland it is not a cream soup but more watery version of it, usually served with little pasta shapes (creste di gallo for example)
    You should definitely check out for more Polish recipes - since we love root vegetables lots of our traditional recipes are hearty and perfect for autumn/winter season 😍

    Pickle soup❤❤❤❤ I have a soup hack for anybody who needs it. I make my own cashew milk once or twice a week for my tea. I put the freshly made milk into jars and refrigerate until needed. When the jar is almost empty, maybe an inch or two of milk left, you will notice a thick almost sludge like substance of cashew muck on the bottom. Sounds gross but it’s amazing stuff. I shake up what’s left and pour it into a mason jar and freeze it. Then I keep repeating this process and topping up the previous jar. When I have a full jar or more I use it in my cream soups or whatever I want. Free creamy soup stuff…no waste. Peace and love to each and everyone of you ❤❤❤

      It's so delish, a nicely creamy potato soup with a tang I guess you can say haha. My grandmother used to make a really nice one, now I need to make it for myself.

    Sarah, your zupa ogorkowa looked perfect! I haven't made it ages and now I'm going to 😄and you are defo right about the pickles - fermented are the ticket! Poles would never use vinegar pickles for this soup. For anybody who lives near a Polish shop - you should be able to get a jar of grated fermented pickles - saves you step 😊 p.s I recommend you try making Żurek - a soup traditionally served at Easter time and made with rye flour ferment. It's tangy, filling and rather unusual (definitely try a recipe that adds horseradish). Toodles!

    For the stew, you can do butter bean mash instead, extra protein and you get the creamy mash without doubling up on potatoes, sometimes I'll do butterbean and celeriac (celery root)mash too, you can also do a butterbean champ and add in some leeks or spring onions or butterbean Colcannon, add in cabbage or kale, just a few ideas to mix things up 😊

    I used lentils as my protein source the last time I made lasagna soup (have been making it for years). I use bowtie pasta instead of lasagna noodles. And only use the homemade dairy-free ricotta cheese instead of mixing in shredded, too. I'm going to try your recipe for ricotta.

    I love so much that you leave little details in that show not every meal you make is perfect- the cheap pickle soup, the slightly overcooked onions, the apple grilled cheese… I’m an experimental cook and it helps me feel like I could make some incredible recipes by trying new things. 😊

    The celery root is the base of eastern Europian cooking, I was surprised when I saw what you call celery to be this, we rarely use this or see it in the shops. The taste is more earthy, more similar to parsley root. I personally use the celery root to substitute our national dish for Christmas, fried carp. ☺ Love your videos, best of luck Sarah. 💚

      In (traditional) German cooking, celeriac is also much more common than celery. Celery only became commonly available the last 15 years or so. I would describe the taste as less "green" and sweeter than celery. If you ever tried carrot greens, think of the greens vs. the carrot.

    Pickle soup! I've only ever had it with beef, since Poland is VERY meat-centric, but I can imagine that without the meat, it's still just as good. Honestly, if you're looking for hearty, cold weather recipes, and you are willing to get creative about subbing the meat and dairy, traditional Polish recipes can be a goldmine.

    My favorite comfort vegan foods consists of butternut squash soup with hints of citrus and ginger in it. I also love vegan jambalaya stew as well.

    Hi, I'm Polish, I just loved that you've made this pickle soup! This was my favourite soup when I was a child (although some children don't like it because the soup is a little bit sour). It is good to add the brine in parts and check the taste every time you do it. As for the taste - with celery stick the taste is more "green" so to speak and with celeriac the taste is more earthy and (celeriac tastes more like a parsnip or potato). Now when I cook this soup I go for celery or celeriac, whatever I have on hand, no much differece in the taste really. I like both vesions.

    I made the vegan beef stew a few days ago. I was amazed to find the vegan sirloin tips at my local market. They’re amazing. I’ve always loved beef stew and love this version. I’ve eat ten it 3 times already and have frozen some for the upcoming holidays.

    One of my favourite austrian meals is potato gulasch. It's a kind of stew with potatoes and the soupy part is onion, garlic, paprika powder, tomato paste, carroway, marjoram, deglazing with some apple cider vinegar and then adding veggie broth. It's quite easy and wholesome. BUT I have witnessed countless parties where people served this because it's easy to make in big batches but it was a sad watery disaster and to me that is sacrilege. To make the gulasch more thick it helps to use floury potatoes but a hack my mum showed me that always helps without needing a roux or anything is to take out about a cozp of the gulasch and puree it and then putting it back. It makes it so much vreamier and improves the texture and can save it from being watery. I definitely wanna try the pickle soup and I would also puree a bit of it to make it more creamy. It looks so delicious!

    These all look great. As someone who isn’t vegan, yet, your recipes have helped me lose almost 80lbs this year. I’m just so nervous to eat really hearty things as they are generally high in calories and I don’t want to go back to the way I was.

    I made the pickle soup for dinner last night and pickiest son said, "can you make this again?" Now THAT is a win. Oh...and everyone else really loved it, too. We ate it with no knead crusty bread and some vegan chik'n tenders. This is going on repeat this fall and winter for sure!

    In a big pot, chop and fry 1 red onion in light olive oil for 5-10 mins, add 1 peeled/chopped sweet potato, 2 peeled/chopped carrots, 1 chopped red pepper, 1 can of chopped tomatoes, salt and pepper, and 750ml of vegetable stock. Simmer for 20 mins until soft, blitz with a stick blender until smooth, then add 1 can of coconut milk and some butter or your vegan alternative and stir through. No expensive, processed vegan fad foods needed and tastes incredible, especially with a grilled cheese or vegan cheese toasted sandwich.

    I just made and ate that beeef stew and MAN was it delicious. Now that is what I call comfort food. It was so good I ate too much and now my stomach hurts but I regret nothing.
    Made it with beyond meat burgers because that was the only thing available at my store and it turned out scumptious anyway.

    I tried the stew this weekend and omg it was amazing. My family said it was the best soup they’ve tasted! I made some substitutions, I used some more broth for the wine and added some balsamic vinegar. I make the deli slices weekly. Thanks for keeping things fresh for me!

    Ogorkowa is and alway was my favorite soup ever. Never get tired of it. I grew up on home made pickles made by my mom and we would shred pickles so you knew the quality was top notch. Very importantly. Don't use pickles in vinegar but brine.

    The soups look amazing! FYI… Celery root (aka celeriac) is very different from celery. It’s a white hearty veg that’s more like a turnip. It makes a great puréed soup!

    Aww, it makes me so happy that you made my favourite, ogórkowa, soup. And yes, your pronunciation was really impressive! We love our soups in Poland, have a lot of them. I think you would also love Polish Sauerkraut Soup - Kapuśniak. It's sour, salty,warm and superhealthy!

      I make sauerkraut soup! Probably not authentic but I use Field Roast sausage and sour cream (sometimes real sour cream, sometimes vegan sour cream). One of my favorites.

    For the zupa ogórkowa recipe, the celery root can bring a completely new taste profile to the complexity of flavors. I found celery root at my local farmers market by chance. It wasn't expensive and it packed a lot of flavor. I found it to be a pleasant surprise 😊

    I always love your videos, they give me so many ideas even if I'm probably not gonna follow the recipe exactly as it is (mostly because of the vegan meat replacements which I don't like. I'd rather just use soy curls than any impossible meat).

    I’m celiac. I really like using red lentils as my “meat” in beef stew. I soak them rinse them and then blend some of the lentils up to use as a thickening agent instead of flour. I want to try your recipe with red lentils.

    I love the cozy feel of your videos! Soups and stews are my jam. I've noticed you guys use a lot of faux meats and vegan dairy products. They're tasty but 1) expensive and 2) quite processed so I try not to use with with any regularity. I am super inspired by Eric's stew, so I'm going to experiment and make that with lentils or another legume to keep it more whole foods and budget friendly. I appreciate all of the creative recipes you deliver!

    Thanks for these - the squash soup especially. By popular demand, I made goulash yesterday with the last of my garden's tomatoes. Yes, snow - we got 6+ inches here in northern Colorado, not sure where you are in the state but you obviously got some of that as well. Welcome to winter, although it's supposed to be 60 later this week which is par for the course here.

    Celery root is used in all European recipes unless stated otherwise. As a matter of fact, celery stalks aren’t very popular in a lot of European countries.

    A Pole here - in my family we simply throw everything into the pot (carrots, parsleys, potatoes, celery root, grated pickles) and cook it together for 20 minutes. And yes, we add some sour cream (12 or 18% fat) at the very end. I'm so happy that you liked that recipe!

      Don't your potatoes stay hard when cooking them with the sour pickles? I am Czech, and while we don't have pickle soup as you do, we have several variants of sour soups using fermented cabbage or vinegar. When I was learning to cook, I sometimes made the mistake of adding a sour ingredient into the soup before the potatoes were fully cooked, and learned literally the hard way that it's problematic. :)

      ​@@JelenaBraum Hello from Wrocław! Sometimes my mum would add the pickles at the very end, so there must be something to what you're saying. So it might be advisable to do what you suggest and add the pickles at the end. We also have the fermented cabbage soup - kapuśniak :)

    Okay, I was actually SO excited to see this video of yours even though normally I am not a big soup person! Having said that, when I saw you decided to make a soup from my country (polish zupa ogórkowa) I got super curious about your take on it! You did great when it comes to pronunciation and I am super glad both of you enjoyed it a lot! Using fermented dill pickles is definitely a key as we never use vinegar ones for this soup :D
    Anyways, thanks for these great ideas! Lots and lots of love guys, I adore how this channel became a space for both of you!

    Years ago there was a Polish restaurant where I live in 🇨🇦. They had a pickle soup that was sooooooooo yummy. I need to try this.
    Im not vegan or vegetarian but I do appreciate and enjoy some of the recipes.

    I'm not a fan of fake meats, so I plan to try the lasagne soup recipe using lentils with sausage spices (salt, pepper, Italian spice and fennel). Thank you for the video. They all look yummy!

    Great content. Looking over all your soup recipes, mmmm. Look so good. I am going to be coming off a long 28 day juice/water combo fast so I have to ease back into eating gently so I went looking for soup recipes, found your stuff. Thank you for sharing. I am commenting here thought because I want to know where I might get those oversized spoons you are eating your soups with. I am trying to incorporate the use of utensils OTHER THAN this fake silverware crap. Those that you are using seemed to be just what I am looking for. Thank you in advance for your help.
