India's FAMOUS Scrambled Egg Bhurji

  • If you have never tried Egg Bhurji before, then you have to give it a go. It's incredibly easy, but will turn plain ordinary scrambled eggs into something a bit special. Serve the Bhurji with Roti, bread or even just on it's own!
    What I also love about dishes like this, is they are very cost effective. Eggs are still pretty cheap (how long for I don't know!) And the other ingredients are reasonably cheap too. Egg Bhurji is usually a breakfast dish, but you can have it any time of day really.

    To make my Egg Bhurji you will need:
    Serves 2 with bread
    ►4 medium sized eggs
    ►3 medium sized tomatoes
    ►1 medium sized red onion
    ►1 green chilli (or to taste)
    ►1-2 tsp of ginger garlic paste
    ►1/2 tsp of turmeric
    ►1/2 tsp of chilli powder
    ►1 tsp of garam masala
    ►A small handful of chopped coriander, stalks as well
    ►2 tbsp of cooking oil
    ►1 tsp of salt
    Serve with bread rolls, roti or on it's own

      I go through phases. Boiled medium soft seems to be the most often. Scrambled. Fried medium

      Either scrambled, an omlette, or a thin omlette on top of a tortilla with cheese baked in the oven.

    Yum! Will definitely give this a try. I could see making a jar of the masala in advance to keep in the fridge for making really quick breakfasts or lunches - just add eggs and you are done. Your new digs are lovely, beautiful light. You too are a grade A human! Thank you 🇨🇦

    Good Morning Mr. Adam! Thank you for the video and recipe. I think I will give this a try. I just made some roti canai, and is so good. I like my eggs hard boiled for salads, sunny-side up for brekky or on kimchee and rice, and also fluffy scrambled in butter. LOL! My Dad used to call eggs 'hen apples,' which I always thought was funny. So glad to see you getting along with your neighbors. We are very happy they are good people, as are you.       Turmeric, garam masala, coriander powder, cumin powder and a chilli powder is a great start. You can make so many different dishes with just those few spices.

    good egg's indeed.
    tip from me: move egg's on and off the hobb to control heat. it lets the hobb cool, and control's the pan! move it on when the pan needs more heat again!

    @adam_garratt this is a nice dish, I will say. However, we normally don’t go and put the tomatoes and chili nor the spices. In most restaurants, especially during breakfast, you will get only onions and the eggs fried in mustard oil (it's best, but people do use other oil depending on which part of the country they are from). And one of the most important things you missed was we fry the eggs way more, like what you did, at least 3 times of that. By doing so, it becomes small granular in shape and a bit hard, basically taking out the water.
    Then again, yours is good. I mean, yes, someone could have it for dinner, but you don’t generally see it too often.

    Ah yes quick tip I found from an Indian site, sprinkle a little salt on the onions when they're frying as it absorbs the water from the onions quickly and causes a light browning in half the normal time. I tried it, it works!! This recipe looks great so I'm going back to it now to see the second half!

    My other half (a native of Bangalore in India) makes this for me all the time, as well as a spicy omelet thing, wrapped in a paratha with ketchup, which is pretty similar to my taste buds, though she says are totally different and I’m crazy. At any rate, both very delicious for a breakfast or lunch. By the way, we have the same Kettle and Toaster Adam 😂👍

She makes it for me all the time - it's like a veterinarian spicy stew made with potatoes and various other things, garnished with raw onion and you have it with fried bread, its very delicious. Apparently it's the Indian equivalent of burgers at the beach lol

    That's different. Probably not something I'd do, but worth a try all the same. A few drops of tobacco instead of the chilli would be my preference.

    Scotch Eggs Eggs Benedict and Omelette: any stuff can go in it but here is Egg Curry so there is lots of stuff you can do with eggs from Quiche and Egg Salad Sandwich, Eggs Florentine and Deviled Eggs: Deviled eggs but i Egg Fried Rice but a good video off to get Full English Breakfast: Eggs are a key component of a classic Full English Breakfast

    Just a question, what number range is your hob? Is a 4 low moderate or high?

      My electric hob goes from 1 to 6, so I take 3 as a low medium and 4 as a high medium

    I am an avocate of eggs and heat makes scambled eggs fella and this style has always seemed to me to be more of a broken up omlette.
    However I like an omlette to, very much, even if it is broken up. 🙂
