In Windows 10, all you have to do is drag and drop the file in the taskbar to create a shortcut there. Windows 11 suck ass.

If you're struggling to pin a Word document to the taskbar, then apparently the way to do it is to open the file in Word, go to Word's Home screen, and under the recent section, hover over the document and pin it. I'm not sure if it'll start showing-up in the taskbar right away under the Word app, or if you have to like close and relaunch Word before it shows up.
Some other kinds of documents like PDF's and Notepads aren't such a headache to pin. You can just open them, and then click on the app in your taskbar and pin it from your recents.
In either case, it's a design flaw that Windows 11 doesn't support the ability to right-click a file in File Explorer and select "Pin To Taskbar."
