I love pumpkin empanadas. They were a favorite at our house. I grew up on the border, north of where you are. We always loved semitas de manteca (or de nuez.) I’m not a fan of the semita which has the same texture as the concha. Do you have a recipe for semita de manteca?
You could try freezing but freshly baked is way better. Making the dough 1 day ahead is good but you could prepare dough and filling up to 5 days ahead of time.
