These turned out better than we imagined. We used Kite Hill for the vegan sour cream. We also prefer Impossible meat over Beyond so we used Impossible. The sausage flavor was great!

We made a crunch wrap version of this with bitchin sauce, hash browns, just egg, sausage, cheese, tortilla chips, avocado, lettuce, tomatoes, more sauce and salsa, used a 1/4 cut of a tortilla to seal the center part, wrap, cook on both sides. Personally, I don't peel my potatoes. The skin has a pleasant papery texture that contrasts nicely with the way the flesh gets fluffy and crispy, and that's where potatoes happen to store a lot of their vitamins. If you're shredding it all up finely anyway, peeling just doesn't seem like a good investment to me. Don't get me wrong though, it's a compelling recipe.
I don’t live near this place but if I had to guess what is in that “salsa” taking account that is is LA. It would have to be what we call “pico de gallo” which is essentially diced tomato, onion, jalapeño or Serrano, cilantro, and salt. Maybe some lime juice. It’s a common stable of Mexican households
My man, you got to wrap your hot Burrito in aluminum foil after making them and leave them fully wrapped for 3-5 minutes. It isn't just easier to eat, it has a warm baked taste to it as well that elevates the burrito. Love the recipe.

Salsa looks legit. I’d like to make one of my favorite local burritos. I have a fav from a gourmet shop that makes everything in house from scratch, the Little Red Fox in DC. They have a smoked tofu burrito with just five ingredients which also doubles as a breakfast burrito. Smoked tofu, potatoes, black beans, corn and guacamole. I have yet to make it cuz I need to get around to smoking a tofu. I was wondering if you could do a video on smoking stuff up with a smoke infuser cuz they seem to be something that is cost effective and flexible.
The reason black salt has the egg flavor is due to it containing sulfur. Sulfur is not good for you at all. I would really try to avoid that whenever possible. Sulfur builds up in the body and causes all kinds of problems. It makes me worry seeing so many vegans using it now. Sorry to share the bad news. 😢. That burrito looks fantastic though! Good Job :).
The hell is everyone’s problem with microwaving a damn tortilla for 10 seconds?! Literally just makes them easier to roll in the quickest amount of time and doesn’t ruin them whatsoever. Find something better to complain about cuz this ain’t it. Btw, this burrito looks bussin 🤤

The Corner Cottage is not worth the hype at all. Not even close. There is a better place a street down from them. My experience at Corner Cottage, I got the breakfast burrito and it was 80% potatoes and lacked freshness and flavor. I later checked and put in a review. Many reviewers on Yelp warn that they pack their burritos with potatoes.

Depends on where you live, but if you can get any kind of vegan mince, or TVP would work too, but it's a bit more work.
