I just tried something inspired by this video which might be useful for those not wanting to use the soy flour: 50 gms coconut flour 50 gms almond flour 20 gms oat fibre 40 gms melted coconut oil Half tsp baking powder Almond extract A few drops of Stevia 4 tbs of Lakanto/erythritol Pinch Sea salt Almond milk Almond flakes I mixed all the ingredients together and ended up adding a lot more almond milk because the coconut and oat fibre need it. Way too impatient to wait ... so I pressed the dough into silicon muffin tins but less than 1 cm thick and pushed in sliced almonds. Baking time approx 20 mins ... tasted great but a bit too crumbly so I think maybe too much oat fibre and not enough coconut oil.
I'm Italian and if you add orange zest and anise seeds also use sliced almonds and pistachios it will taste more like Biscotti and be easier to mix up.
Cant wait to get my oven working and make these. I make really good regular biscotti so I'm excited to try them keto. Thank you for all your wonderful vegan keto recipes!
Update, these are fantastic and very easy to make. I add some sugar-free Lilly's chocolate chips and almond extract. I'm experimenting on how to make them crunchier. So good!!

One with chopped Brazil nuts and Lily’s chocolate chips ( as you suggested) and the other with 10 grams coffee flour/70 grams soy flour (to replace the 80gr ) ; almond extract instead of vanilla, and pumpkin seeds as nuts. The coffee flour turned them a nice chocolate colour! I used swerve in both ( not as sweet) so added a few drops of English Toffee Sweet Drops. I adore your recipes! Happy Christmas, Fan! 🎄😘

John: Did you try the Flax and how did that work? I just came across this recipe and I wondered why it didn't have flax seed meal (egg substitute). The recipe from years ago I have was to make them Gluten-free, not keto, and it was twice baked. This recipe is single baked and wants to be crispy. She says in the Focaccia recipe that flax help keeps it moist and supple.
Is there an alternative to the soya flour? I have oat fibre (not bran) which is a resistant starch. I'm wondering if I can use that instead? Or there's another mix? Coz I have low thyroid and have been told soya isn't suitable for me. Thanks x
Heavenly Fan it is not the carb count that makes it not Keto it is the fact that Soy is so badly grown (with pesticides) and so processed... it is not human friendly!
Please help with measures by telling us in terms of cups, 1/2 cups, 1/4 cups et al. I look at measurement translate charts and they don’t make sense. You might consider speaking in grams & then saying that is x number of cups, et al & we are able to be included. I enjoy being here, then become excluded.

Vegan sugar free chocolate chips would also work beautifully.

I think Truvia is a mix of erythritol and a very small amount stevia, so it should have a lot less stevia taste.

Thank you for your videos .but steady soy and see that how bad it is ,never use any soy also stevia .stevia is very bad for people with thyroid issues
