You can also use Apple Cider Vinegar or any vinegar, even lemon or lime juice to stabilize egg whites instead of Cream Tartar. You don't taste the vinegar - I use about 1/2 Tablespoon for these three egg whites.

Love the recipe. I used actual strawberries that I puréed and add a bit more water to get the 1/2 boiling cup of the “water” that the Konjac powder was added to. Jelly turned out great and now I know how to make better jelly for my bagel also..😍

    Oh, game changer, Annie!
I used to make the cheese Danish with a very similar recipe using coconut flour and 1 more egg. It’s been awhile and I can’t wait to make your version of the dough.
But the JELLY!! That opens a whole new world! And the best part is that I just realized konjac gum or konjac powder is just glucomannan powder and I have it! I need to order some more flavorings, though, since what I have are lemon and orange. Well, I have others like corn and cornbread, etc but somehow they don’t seem suitable for Danish pastries!! 😂
    Thanks!

Konjac has a silent J. Propnounce like a Y. They make it from the konjak yam roots which grow in bogs. They make them into the konjac noodles or blocks found in Asian groceries. Miracle noodles is the US brand. I have watched somebody make homemade noodles in the frying pan on TH-cam. His kitchen wasn’t very hygienic though. It did make me think that it was a possibility to create ravioli in a fry pan using his sifting this powder and water into the pan. I think there are endless possibilities with it if it’s experimented with.

It worked out well! I'm hoping the same for this Danish! Even if it fails, I'm definitely trying that jelly on other things!

  • @littlepotato2741

If you need gluten, could you just add some vital wheat gluten to the mix? That's almost all protein so it wouldn't add many carbs to the end product and it would add the gluten to help get a flake texture.
To be fair, I haven't tried it. I did see one "rule of thumb" is to replace 1/3 of the recipe's flour with vital wheat gluten. Might be worth a shot.

I just made these!!! And did a few adjustments for my taste. I admit I struggle with no carb sweeteners!....so I went for LOW carb versus NO Carb! I just used regular sweetener to a ratio of 1:2 ...recipe called for 3 Tablespoons sweetener of low carb type, I used 2Tablespoons low carb sweetener and added the remainder 1 Tablespoon regular sweetener and I like the results! At least I find it more palatable for my taste. Now that doesn't mean I can eat the whole plate of Danish! But we should never do that anyway! 😋😂Thanks for the awesome recipe!
PS.....These are light and airy and very satisfying! I may try and freeze some and see how they turn out!
By the way the extra egg white, I just whipped it in with the three that became the pastry...still turned out great!
