    when you add milk in the Cocoa mixture how it become Thick immediately Because in the last sence it was thin and liquid mixture

    Hi, I've never made a castella cake with oil (I've always used butter)...is there is difference in how moist and spongy the cake is when you use oil? Or can I substitute the oil in this recipe for butter? Thanks.

    Buona sera volevo chiedere una cosa, dopo che ha versato il latte a temperatura ambiente l'impasto si è rappreso. Ha saltato un passaggio nel video? Cioè dopo che ha versato il latte ha fatto addensare l'impasto sul fuoco??

      Hi,cake flour is more delicate than all purpose flour. can try to make,
      for every 1 cup of all purpose flour remove 2 Tbsp of flour,and replace 2 Tbsp of that with cornstarch

I have been successfully baking this cake for 2 over months but I am not sure what goes wrong recently that I have a layer of rubbery texture at the bottom of my cake🤔? I try not to over mix the flour batter or ensure the oil at the right temperature, but it fail! I would like to seek help, thank you!

      Do not use convection oven. Use conventional oven and place tray at lowest rack

    Does my hot water pan must be less than 2in deep?

      Hi, the outer baking pan needs to be larger than the inner baking pan, and it can be put water until high to 1-2 cm

    Before you added milk, the mixture is quite watery but after that i think the mixture becomes to thicker. I wonder why??

    Why it is always a soggy layer at the bottom ?

      Hi, there are many factors for this, baking temperature, excessive stirring causes defoaming or insufficient beat egg whites

      you probably using convection (fan) oven instead of a conventional oven....

      Hi, because the temperature of each oven is different, can might try when the cake done, remove the water tray and continue to bake for 5-10 minutes
