    Made this pasta with 1 little twist and that is to cook the pasta in leftover porcini water. This gives the tagliatelle an extra savory dimension. I’d like to cook your recipes in the afternoon for lunch to overcome winter depression.

    I am making the same recipe with fresh porcini, and I put butter and sage as a base in the sauce, and dilute with stock.

    I'm doing that dish very often since years. Sometimes I'm adding a little fish or some white wine instead of stock. Works brilliant. That dish is always hitting and takes just 10 minutes - pure Gold!

    I like the way he does a rough chop on the garlic, be proud of the ingredient don't mash it into a paste and try to hide it.

    everyone freaking out bc gennaro is entertaining but they didnt even notice he boiled mushroom instead of frying. They had no color at all. You can tell personnalities of chef sell over the quality of the food.

      Yes, "hydnum repandum" is the latin name of it. Good choice for beginners (if you're out looking for them) as there's no poisonous lookalike
