@@mrbump28 the "problem" with adding cream is...you're not eating spaghetti carbonara! You may of course enjoy your food, but give it another name mate. 🤷🏻♀️
I like a very little bit of boiling water of the pasta or cream or milk with it..I mean a "very" little bit..the eggyolk wil bind it if it comes at 70 C. It gives me just a bit of extra sauce and I do not change the idea of the dish in my mind.
Thank you Chef Antonio, RIP. Over the years I tried many recipes and this is the best so far. I just made some modifications on my own: 1. I drain the pork oil fully before adding pasta; 2. I add a cup or two of spaghetti water to the sauce gradually and depending on serving size. Thank you and love this channel ❤

I followed this recipe to the letter, and it Exploded with flavor from such simple ingredients. This man shows the true art, talent, simplicity and love that goes in to making great food.
Just during lockdown I discovered all the great recipes I am sticking to since they always work out great. Antonio taught Gennaro and Gennaro taught Jamie and they are perfecto! Now I start buying their books to keep at my counter top for every day reference since I found great recipes I am using on a daily basis for every occasion. Just accidentally saw Jamie Oliver on TH-cam, attracted to simplicity and it worked and subscribed and discovered his two awesome Italians.

I met Antonio a few times, The last time I spoke with him was outside his restaurant on Neal Street, London, He was taking a break from teaching young budding chefs, he was really pleased with the enthusiasm of them. Such a real and rare Gentleman. I was always having problems with my Pizza bases and he told me how to do it properly, don't knead to much and he added I always follow my mothers advise and bless it before cooking,
I still come back to this video to remind me how to cook like he does, the pace, the style. Its not rushed for the camera and it's not complex either so i need to not get carried away with other styles of cooking that are fancy when this is the best.

Never had a dad nor a grandad but i can already see myself being a grandfather like this wonderful old man!!! I already cook for my family quite often and spend some time cooking good and quick food for college so i guess i am heading there lol...
Perfect since he allegedly had no kids
I just made this, after being on my "I want to cook this" playlist for 5 years. It was heavenly. Thank you!
I wanted to make this for years. Will make it tonight. Also RIP Antonio
@@Pestilence86How was ist?😊
@@jasonbrody8957 It was delicious! I made it a few times now, and it has become one of my go-to recipes.

I made this tonight and it’s the nicest Carbonara I’ve ever made! Thank you Antonio. RIP 💙

»No Cream, absolutely forbidden« legend. R.I.P.
Absolutely forbidden!!!lol!😆
If you like it, what's the problem? Just enjoy the food you like.
@@irinalu3484 Meh‚ it's still basically carbonera‚ just not really refined. It's like thickening a clam chowder with flour.
RIP Antonio Carluccio, this is my first time watching you and found out in the description that you already passed away.
Thank you Chef Antonio, RIP. Over the years I tried many recipes and this is the best so far. I just made some modifications on my own:
1. I drain the pork oil fully before adding pasta;
2. I add a cup or two of spaghetti water to the sauce gradually and depending on serving size.
Thank you and love this channel ❤
I come and watch Antonio Carluccio every so often just to relax, RIP legend.
Chef Antonio - I just love you ... and the real Spaghetti Carbonara!!! I like how you emphasize "NO cream" which is a mistake many make or a belief which many have. Viva l'Italia and viva Chef Antonio!!!! Grazie mille e ... buon appetito!
Living legend :-)
one of the most elegantly demonstrated recipes i've ever seen.
well said! i thought the same. Best demo ever! simple.and easy.
Very true.
this guy made my day I'm glad to see a truly happy person
Never trust a skinny Italian chef
I recommend a skinny italian chef
Luca manfe, mc us s4 winner
Never trust any chef that is skinny!
Massimo Bottura
Gino D'campo is skinny and is an incredible chef and he was close friends with Antonio.
LOL
I admire Italians for their love and care for food. Old man was a great cook, RIP Antonio
I watch this whenever I make carbonara... it never fails. Watching his love of cooking warms my heart and makes me smile. Such a loss. AC is magnificent.
I need to watch this vid at least once a week... It calms me down...
+J Yunha It is like a therapy or what? ;-)
+J Yunha cook it yourself, it's even better!
I added this to my menu in my restaurant and wrote bellow it: “in loving memory of the pasta maestro Antonio Carluccio”
try without adding oil in the guanciale (since it already releases a lot of fats that melt)
Giuseppe Germanà this is also what I am thinking
In honor of Signor Carluccio, I took an axe and destroyed all the cream in the supermarket.
I thought you are dead.
😂
William Shakespeare xD
William Shakespeare Wow 👏 bravo
you cultured swine... i like that
I miss you Antonio 😭😭😭 you were always so humble and an amazing chef, your recipes are delicious and so easy, Grazie Signore 🤌🏽🇮🇹
Camera man, everyone, you should taste this!! What a wholesome guy
My God first time I watched his video and just realized how much he and my father look, dress, talk, and cook alike. Must be an Italian thing.
Both have passed as well. Miss you dad, but I have your recipe book, half-written in English and Italian so your cooking lives on.
This good old man is a lover of food. You should see the sparkle in this eyes when he tastes his masterpiece.
Best pasta video ever. The pope of italian kitchen at his best!!! Too bad that he left us already. 😞
THIS is the real carbonara! Love the recipe, cook it for 2 years now. More from Antonio please!
I followed this recipe to the letter, and it Exploded with flavor from such simple ingredients. This man shows the true art, talent, simplicity and love that goes in to making great food.
Buon viaggio caro Antonio! Grazie é mille!
For such many years, this video is still legendary and classic, thanks Antonio.
Aww I like this grandpa :) And also a very relaxing type of cooking video. Love his instructions.
A true legend. A man of his time, seeing him and Gennaro together on two greedy italians always brings me so much joy.
So sad that this wonderful, tough and gentle soul is gone!! He seemed to have a deep, soulful connection to the food he helped promote to the world. I made this for my parents tonight and it was wonderful!
When old man from italy cook pasta..dont ask anything just eat
Edit: Woww! 2k...thanks guys..love u all..peace and love food

"Don't ask anything, just eat".
Those were the exact same words I heard coming from the other side of a glory hole.
exactly
@paolo Rossi link one then.. This is pretty autenthic 😃
@@-Vitalis- Did the voice have an Italian accent?
This video haunted me for weeks!! I finally got all the ingredients, the pig cheeks and the Pecorrino cheese and just made it today!!
I can't believe I never had pig cheeks before!! It is so tender, yet full of flavor!! Just incredible!!
I only messed up the temperature of the pan, turned off the heat but didn't wait long enough so the sauce did form some chunks of egg here and there, but next time I'll make it perfect 😁
Well done!
U can actually put a bit of pasta water on the pan. It also adds volume for the sauce.
The 4.5 k people disliking this video are the ones putting cream in their carbonara haha. Great recipe ❤️
🤣
Oh man 🤣🤣🤣
Exactly!
No oil with guanciale. Dislike
Or the ones that put green peas. VOMIT
I met Antonio a few times, The last time I spoke with him was outside his restaurant on Neal Street, London, He was taking a break from teaching young budding chefs, he was really pleased with the enthusiasm of them. Such a real and rare Gentleman. I was always having problems with my Pizza bases and he told me how to do it properly, don't knead to much and he added I always follow my mothers advise and bless it before cooking,
Do you remember the deli almost next door to the restaurant, happy days indeed (90s).
@@brummie9205 To be honest I don't, I always seemed to pass or eat there when it was night time after work
I always make my carbonara based off his recipe. He still lives on in our cooking! Thank you for this great recipe, Mr. Carluccio! :'(

Finally, the only and real recipe...

Wow, this was fantastic. More Carluccio!
I approve this message. His gentle manner full of personality was truly endearing
and i support this message lol he makes it look so easy and good
I still come back to this video to remind me how to cook like he does, the pace, the style. Its not rushed for the camera and it's not complex either so i need to not get carried away with other styles of cooking that are fancy when this is the best.
You can tell the man had so much passion for what he did absolute legend, may he rest in peace.
Rest in peace, glad that this amazing recipe is here in your honour.
Just tried making this today -- it's the best one I've ever made, and it's so unbelievably easy! Thank you for sharing, sir!
He made it sooo simple and easy to do just the way it must be .... naturally delicious .... 😊 ❤🙏🏻
So many experts here, astounding. Those actually from Italy who are qualified chefs with a chain of restaurants, multiple cook books, and their own cooking show/series please raise your hand.
Yo dude, have you ever been to Italy? I dunno where do you come from, but here it's not like in America, where you grow up eating shit and processed food, here anyone has a food culture, everyone here knows that if you put cream into the carbonara, you're just fucked up in the head
I am from Italy. I was criticizing the people who think they are experts and that they know better than people like Carluccio who makes sure he cooks the authentic way like in the region the dish originates from.
he even asked the cameraman to try his pasta at the end of the video, R.I.P my friend.
Today a friend of mine invited me for some carbonara with cream inside. He's not my friend anymore
El Kheysitas bruh
