He was a great chef and approachable but I wouldn't say he had a gentle heart. He would get frustrated quite easily and one of the few examples was when he cooked with Gennaro.

@@team3383 that’s not true especially for his generation, most of them had to learn English very late so have that strong accent despite their language knowledge. Nowadays, Italians learn it from the kindergarten so there are more Italians who speak with a more neutral accent but you always can hear that accent.
I had the pleasure of meeting him at the opening of one of his restaurants about 10 years ago now. I told him how my Mum makes spaghetti bolognese and he just shook his head haha. He then wrote down a recipe for ragu bolognese - the genuine way they make it in Italy - and it blows what we in the UK think spag bol is out of the water. He even gave me a couple of packs of his own pasta to go with it. Such a nice guy and brilliant chef. RIP...
With his casual yet elegant manner, I felt not only kinship to his authentic persona but grateful for having given us something akin to a cultural experience. It's quite beautiful when artisans allow their craft to not scare us by their underlined complexities but simply to invite us to engage in it. When I was like ten, my family visited Rome. On a special evening my father decided to make Spaghetti ala Cabonara but the Italian way, so we did it. Cooking this together is one of my happiest memories and we still pull up his video every time we make it. Thank you Antonio for sharing your culture with us🙏

try once only to avoid the oil for cooking the guanciale (since it already has a lot of fats that melts with the heat, in wich the guanciale itself is fried)

den galvez yes, ingredients are homemade and the food is fairly easy. A lot of them were poor man's dishes so quick to make and yet of high quality, because they had to feed hungry workers/family fathers/the whole family after a day of work!
I just made this for dinner then. WOW. Carbonara has always been my favourite pasta. Now, cooking it myself has been a huge deal. I feel very emotional. Molto grazie, Maestro Antonio- you legacy lives on!
What's the most important here is that Antonio not just loved cooking, but loved people... the ability most essential for humanity to thrive in harmony with this world. Which is also, sadly, the very same ability today's kids rapidly lose [if not lost already].

I have seen this video dozens of times, and yet I never tire of watching it. Now, whenever I cook pasta, I hear the phrase "no oil, please" and I smile fondly and remember this legendary gentleman.

I like a very little bit of boiling water of the pasta or cream or milk with it..I mean a "very" little bit..the eggyolk wil bind it if it comes at 70 C. It gives me just a bit of extra sauce and I do not change the idea of the dish in my mind.
I've literally had 100s of meals at Carluccio's (and buy so much food from there, especially around Christmas) and have probably been to every single one of the restaurants in London. This is the first time I've watched Mr Carluccio himself cook and it made me smile so much until I realised 3 minutes into the video that he passed away a year ago. RIP! :(

Thank you Chef Antonio, RIP. Over the years I tried many recipes and this is the best so far. I just made some modifications on my own: 1. I drain the pork oil fully before adding pasta; 2. I add a cup or two of spaghetti water to the sauce gradually and depending on serving size. Thank you and love this channel ❤

Ate this tonight. Such a simple dish that so many people get wrong. It doesn't need over complicating. It can be cooked in 10 minutes. Love it. Italian food is delicious.
I recently went to Rome and had this dish and it had no cream at all! I have had this dish here in America many times but it always had cream. Both ways are delicious. But yes this is the authentic way to make it with no cream. If you like it with cream then eat it that way. Not sure why people act like its a bad thing, enjoy food the way you like it!
Danny Simion it tastes like Alfredo with bacon. It tastes different than the real Carbonara that I tried in Rome. But like I said they both are delicious to me!
I followed this recipe to the letter, and it Exploded with flavor from such simple ingredients. This man shows the true art, talent, simplicity and love that goes in to making great food.
I’d say the defining characteristics are the egg yolk. Using that as a base, you could add your own spins to the classic carbonara. “carbonara with ____”

Marc Van Masten you don’t know what the hell you speak of. this is the legit version. Secondly, it was USA GIs and USA bacon and egg rations, + local Italian ingenuity, after ww2, that gave rise to this dish in the first place!
Not really. Guanciale and pecorino are around in Italy long before WW2. Carbonara pasta is a dish born as an evolution of pasta cacio e pepe and pollotte cacio e ova from the sheperd travel to Rome from Abruzzo. In ww2 simply more bacon and powdered eggs was around so the dish became more common than before.
Just during lockdown I discovered all the great recipes I am sticking to since they always work out great. Antonio taught Gennaro and Gennaro taught Jamie and they are perfecto! Now I start buying their books to keep at my counter top for every day reference since I found great recipes I am using on a daily basis for every occasion. Just accidentally saw Jamie Oliver on TH-cam, attracted to simplicity and it worked and subscribed and discovered his two awesome Italians.
I met Antonio a few times, The last time I spoke with him was outside his restaurant on Neal Street, London, He was taking a break from teaching young budding chefs, he was really pleased with the enthusiasm of them. Such a real and rare Gentleman. I was always having problems with my Pizza bases and he told me how to do it properly, don't knead to much and he added I always follow my mothers advise and bless it before cooking,
Just found out that he passed away, and I thought I would watch this video again, just because he taught me to cook carbonara in a correct way. RIP. I really shed my tears :")
When you take Guanciale, you don't really need any oil in the pan beforehand. I prefer to take one more egg so that it gets really nice and creamy. The hardest part is getting to the exact time when adding the sauce so that the egg doesn't turn into scrambled eggs. But once you get the hang of it, it's one of the best pasta recipes I know. den galvez yes, ingredients are homemade and the food is fairly easy. A lot of them were poor man's dishes so quick to make and yet of high quality, because they had to feed hungry workers/family fathers/the whole family after a day of work!

I like a very little bit of boiling water of the pasta or cream or milk with it..I mean a "very" little bit..the eggyolk wil bind it if it comes at 70 C.
It gives me just a bit of extra sauce and I do not change the idea of the dish in my mind.

I've literally had 100s of meals at Carluccio's (and buy so much food from there, especially around Christmas) and have probably been to every single one of the restaurants in London. This is the first time I've watched Mr Carluccio himself cook and it made me smile so much until I realised 3 minutes into the video that he passed away a year ago. RIP! :(

Thank you Chef Antonio, RIP. Over the years I tried many recipes and this is the best so far. I just made some modifications on my own:
1. I drain the pork oil fully before adding pasta;
2. I add a cup or two of spaghetti water to the sauce gradually and depending on serving size.

Ate this tonight. Such a simple dish that so many people get wrong. It doesn't need over complicating. It can be cooked in 10 minutes. Love it. Italian food is delicious.
I recently went to Rome and had this dish and it had no cream at all! I have had this dish here in America many times but it always had cream. Both ways are delicious. But yes this is the authentic way to make it with no cream. If you like it with cream then eat it that way. Not sure why people act like its a bad thing, enjoy food the way you like it!
If you have it with cream then it is NOT a carbonara, it is 'a la creme' or a liason
I've only tried it with no cream and its so good. If you add the cream in, does it have the same taste and consistency of say, alfredo?
Danny Simion it tastes like Alfredo with bacon. It tastes different than the real Carbonara that I tried in Rome. But like I said they both are delicious to me!

They can add garlic and cream. It’s just not the traditional carbonara when that happens
I’d say the defining characteristics are the egg yolk. Using that as a base, you could add your own spins to the classic carbonara. “carbonara with ____”
People can cook how they wanted to. Stomach would not reject it because it has cream on it

Carbonara pasta is a dish born as an evolution of pasta cacio e pepe and pollotte cacio e ova from the sheperd travel to Rome from Abruzzo.
In ww2 simply more bacon and powdered eggs was around so the dish became more common than before.
This good old man is a lover of food. You should see the sparkle in this eyes when he tastes his masterpiece.

Just during lockdown I discovered all the great recipes I am sticking to since they always work out great. Antonio taught Gennaro and Gennaro taught Jamie and they are perfecto! Now I start buying their books to keep at my counter top for every day reference since I found great recipes I am using on a daily basis for every occasion. Just accidentally saw Jamie Oliver on TH-cam, attracted to simplicity and it worked and subscribed and discovered his two awesome Italians.
I could watch him make carbonara all day.

I met Antonio a few times, The last time I spoke with him was outside his restaurant on Neal Street, London, He was taking a break from teaching young budding chefs, he was really pleased with the enthusiasm of them. Such a real and rare Gentleman. I was always having problems with my Pizza bases and he told me how to do it properly, don't knead to much and he added I always follow my mothers advise and bless it before cooking,

When you take Guanciale, you don't really need any oil in the pan beforehand. I prefer to take one more egg so that it gets really nice and creamy. The hardest part is getting to the exact time when adding the sauce so that the egg doesn't turn into scrambled eggs. But once you get the hang of it, it's one of the best pasta recipes I know. Thanks Antonio!
It depends on how fatty your guanciale is, if it's nice and fatty you don't need oil but if it's not then you need a little bit oil
