      Jesus, you people are annoying. I travel the damn world for coffee, just came back from Nariño (Colombia) and you're here trying to patronize me. An Italian man using standard coffee powder, using a mocha pot, in Italy, is pretty mundane.

    Ive always watched Gennaro’s videos from 5 years ago, 6 years ago etc. I saw this video 16 mins after from uploading. For some reason that made me so happy. I felt close to Gennaro :) God bless guys like him. Greetings from Istanbul.

    even though i've been making coffee in the moka pot for years, i still click to watch Gennaro do it. as many say here, this man always makes my day a bit better - especially if I'm feeling down - and never fails to remind me why making food is so good

    Refreshing to see it done by a real Italian. No fuss, no filtering the coffee through a virgins hair, no adding water heated to precisely 98F, no setting to gas mark 3.9875. Just chuck the water in, add a reasonable amount of quality coffee and apply heat and time. Brilliant- I’m going to make a cup right now

      I personally put cold water when using a moka pot because of the convenience. On the other hand I totally get why some people prefer preheating it. Waiting for the water to warm inside the pot takes a bit of time and meanwhile the coffee roasts in the filter, getting somewhat bitter.
      Secondly he put too much water inside. The level shouldn't get over the safety valve.

      Totally agree and for the amount of money you saved not buying a thousand bucks hard to clean monstrosity. Just buy quality coffee or beans and a grinder.

    I used to live in Italy a long time ago...and have been using one of these every morning, ever since. It really is the quickest and easiest way for a decent cup of coffee. Also, (pro tip) that bubbling and steam coming out from around that valve isn't supposed to happen. That's a (safety measure) pressure release valve if you accidentally forget about it on the stove or the stem is clogged...his is old and the seal is broken so the release valve won't work anymore as it's intended. The entire point is if the pressure gets too high that emergency valve blows to release the pressure. Considering the entire point of the thing is using pressure to make coffee....you probably don't want a leak like that because it's not going to work as intended for making coffee, and can (although unlikely) be a bit dangerous.

    Love this video. Some additional tips from me for a smooth brew:
    - Lavazza coffee is best in my opinion - all of their range gives great results
    - Don't over pack the filter with coffee (i.e. don't compress the chamber, let the coffee sit naturally)
    - High heat can lead to a bitter flavour, have the gas on very low and let the water boil slowly so you don't burn the coffee
    - Similarly, don't let the coffee over boil, as the last creamy bubbles fill the pot turn the gas off - the pressure will continue to release more coffee into the pot
    - FIll half a large mug with milk and heat on medium power for 50 seconds (not high power) and add the coffee to the milk for a nice smooth breakfast brew

    This guy is a legend. I've used these coffee pots for years. When you fill it with water, make sure not to fill above the little valve. He almost touched on it but not quite. Also, fill it with just boiled water to speed up the process. Makes no difference to the end result.

      If anything, I believe using boiling water to speed up the process would allow for a less burnt tasting coffee, since the grounds aren't subjected to heat as long. I'm new to the moka pot though, so I don't know

    To get even better tasting coffee, first, grind your own. Best would be fresh roasted coffeebeans (after 1 week of roasting, use before 4 weeks after roasting). Then, instead of cold water use boiled water, make sure to use a towel or something because the moka pot gets hot obviously. This reduces the time on the gas and the time the coffee is connected with the hot source, because the pot can get really hot, it's better to reduce the time this way and get less bitter/burned coffee. Last but not least, when the coffee starts pooring into the upper part of the pot, reduce the heat to a minimum. Some say you can also turn off the heat because there should be enough pressure to press the water trough the coffee but I like to put it on minimum heat to get it going. Then when it starts to make noise, turn off the heat. I then pour into the cup right away because the less time the coffee is in that steaming hot pot the better, some would say to cool it down with the coffee inside by running cold water over the bottom part, but I find it a mess and a bit dangerous so I just poor into the cup right away.
    Should need less sugar because of less bitterness as well ;)

    Everyone has their ways of coffee and there's not much to it but take it from a coffee guy - use fresh coffee ans grind it yourself. If you get ground coffee it's already lacking so much flavour because it was probably ground weeks if not months ago. Get some good beans, roasted like a week or two before, no longer than 3 months.
    Also, dont put cold water in, use 60*C (140F) water or just a tad hotter than tap hot, you'll avoid burning your coffee inside the mokapot (which makes the brew more bitter) and the whole process is just quicker.
    Go ahead and watch James Hoffmann's take on mokapot coffee if you can. Not saying Gennaro is making bad coffee, it's just some tips how to up your game ;)

      Don't worry about withdrawals. The effects are minor/negligible. You can drink or stop drinking coffee whenever you want and you'll be fine. Worst that will happen is feeling a bit tired, that's all.

    You know what I love about this? No fancy luxury kitchen in sight. No £1000 blenders. No designer brushed steel units, that look like a mortuary. No 2001 sentinel refridgerators and poncy black granite tops and LED light strips. Just simple homely living. That's what I like about Italians - you take them what they are, not what they pretend to be!

    The water is coming out of the valve because you filled it past the level of the valve. It should always be filled below it. Also, use freshly boiled water, not cold. The process is much quicker and the grounds aren't being baked while the water heats up, resulting in a less bitter cup.

A lot of people who can't even spell the word buy cheap pots and can't use them. I've read of one idiot who managed to have the thing explode because she tamped down the grounds into the filter :D

      @@MrGeorgeBleau it’s not possible to make coffee in a Moko that’s not horribly over extracted and bitter. Over: bitter- too hot/too long. Under: sour- too cool/too fast.
      Moko’s work by boiling the water over the grounds. 91-96c is the range for a proper extraction.

    I've been using these for a couple of years now and the best tasting coffee that I can get from one of these is by keeping a low flame, Just enough that the coffee slowly creeps up the centre tube and falls down like a stream instead of sputtering. When it sputters, I find the coffee to be too acidic and too bitter at the same time.

    Some advice for beginners: Get a good coffee maker, and there’s only one brand - Bialetti. Get good Italian coffee, Illy or Lavazza. Use medium heat, the slower it boils the better. As soon as is start bubbling, remove from stove. If you use to much heat you risk burning the coffee. Enjoy. BTW, this isn‘t actually called coffee or espresso, it’s mokka.

      I got one of those pots this year. It makes great coffee, but less than one cup per brew. I think I need a bigger pot.

      @@kylesalmon31 they use espresso cups for this kind of brew. Even if moka pots don't reach a pressure of extraction as big as an espresso machine the coffee is strong enough (much stronger than an americano).

    Gennaro with great love and respect may I suggest you fill the basket outside of the bottom part, a little more than it needs, then remove the excess with the finger. Once that is done, place it back in the bottom and screw the top. This way you get more coffee in the basket without leaving any coffee bits in the thread ensuring a proper seal and no mess. Try it. Love you!

    Normally I don't drink coffee (only sometimes), but oh God, I'm gonna get myself a cup. Especially its 10:48AM, so close to 11AM :D And I have the same "coffee machine"

    Bialetti says they designed the Moka to be a measuring cup so you get the perfect ratio of water to coffee when you fill the water to touch the bottom of the pressure valve and you loosely fill the coffee basket until the medium-fine ground coffee is level with the rim and don't press it down.
    The Moka does not work by boiling, the water temperature must be lower than boiling point when it bathes the coffee. That's why Bialetti recommends starting with room temperature or cold water.
    There must be enough air in the lower reservoir to expand from the heat as the water vapor also expands to push the water down and up through the pipe.

    Some tips to make a better tasting moka:
    -Use filtered water instead of tap water. Most tap water contains lime scale, which will make the coffee taste worse and lessen the lifespan of your Moka Pot.
    -Fill the water to under the safety valve, so no water runs out of it when it's heating. This way you get more pressure through the filter and the coffee.
    -Boil the water first. This will lessen the time the coffee grounds are sitting over heat, which will make the coffee taste less bitter.
    -Take the Moka Pot off the heat as soon as you hear the air bubbles, and pour it into another pot or a cup. Just like a French Press, the last bit of coffee is mostly bitter.
    -Grind your coffee right before you need it. Newly grinded coffee always tastes better than weeks old grinded coffee.

      Agree with everything here except the part about boiling the water first. I don’t think it makes it worse or better, just a personal choice.

      @@thejahanshow doesn't have to be boiling but hot. the longer the pot is on the stove the more you are heating not just the water but the coffee. This speeds up the extraction process which is a good thing for a brewer that is prone to overextraction. It's about avoiding bitterness.

      My apologies but do you wash the moka pot everytime you use it? Also I haven't used my moka pot for year's because it always taste bitter when I make coffee from it. Any advice would be appreciated. Thank you!

      @@pENjiKnoWsBeSt Rinse it under hot water, dry it off with some tissue paper, and leave it to dry completely, before you screw it back together. Don't use soap. There's not any bacteria to worry about, since you're going to be heating everything up again to boiling point when you use it.

    I would love to have a coffee break with Gennaro. Love that guy! Well, that didn’t look complicated so maybe I will buy one of those coffee makers one day soon. I did used to have a Greek copper coffee pot back in the day. Don’t tell him but I’ve been making instant espresso.

    Brought one home from Umbria two years ago and take it everywhere I go..... make coffee on a stove, open fire.. bbq :) Best tool "ever" :)

      You know that you can measure the coffee (in and out) while using an espresso machine, don't you?
      Yeah moka pots are fun but they are far from the accuracy which an espresso machine provides.

    I love this Gennaro’s presentation. Though I do you feel like there are some pretty simple tweaks and suggestions that would reduce the bitterness.
    I find that heating the water separately makes a less bitter coffee. Also running the base of the moka under cold water after it starts bubbling reduces bitterness.

    I'm Puerto Rican we grew up with this also, a bit different in shape little more rounded but same. Makes sense Spain roots so probably come over in that era, even with all the coffee tech these days I still use the good old moka pot everyday!

    Moka Pots are prone to overextraction which makes coffee bitter. There are ways to remedy this:
    Put heated water in at the start.
    Do not use dark roast, they are easy to overextract and become bitter, medium is sweeter.
    It's not an espresso machine, go a bit coarser than espresso.
    As soon as it spits, run the base under cold water, extra coffee coming out after that will usually be bitter.
