My grandma always told me to use at least two different kinds of apple for some texture and different tastes. One sweet apple and one tart apple. I like to use Honeycrisp and Granny Smith when I bake apple pies.

Best pie hands down!! I took the leftover pie to work and my boss ate the last piece off the pie plate! I just finished making my a pie again tonight! My boss asked me to bring it for our company chili contest tomorrow!! It’s going to steal the show!!
The caramel on top seems weird. Personally, I would put the caramel inside with the apples (and also have chunks of apple, rather than slices) or have it as a sort of sauce .
I make a delicious apples pie where I pour a very simple caramel sauce over the crust (preferably with some lattice work or at least a few cutouts) prior to baking. It makes a nice simple sauce inside the pie but also deliciously caramelizes the crust as it bakes. So good.

You can also use semi salted butter instead of unsalted. Much better taste imo and you don't have to put salt crystals on top.

That looks great! Except the only thing I would change would be to add the sauce on top after you cut a slice per person! It makes cutting the pie A LOT easier!
