Honey Dijon Roast Chicken | Brussels Sprouts & Root Vegetables

- Our family's go-to last-minute dinner, when I'm too lazy or rushed to prepare anything else. Grab any available ingredients, quickly marinade a chicken, and throw in the oven, along with root vegetables. One of our favourite combos are honey and grainy Dijon for the marinade. I trained two of my sons to make this, for days when I'm unable to cook.
Ingredients:
ROAST CHICKEN
Grainy Dijon
Honey
Garlic
Italian parsley
Lemon zest
Lemon juice
Salt and pepper
ROASTED VEGETABLES
Shallots
Brussels sprouts
Rainbow carrots
Sweet potatoes
Olive oil
Salt and pepper

1. Spice blender: Magic Bullet blender, mixer & mini-food processor
2. Meat thermometer: Lavatools Javelin PRO Duo digital meat thermometer
3. Zester: Microplane stainless steel zester
4. Peeler: Kuhn Rikon Swiss peeler
5. Cutting board: restaurant-thick green plastic cutting board
6. Sheet Tray - aluminum commercial baker's half sheet tray

Hey Vivek, easy on honey and go low and slow on the bbq. If it gets charred sooner, you can take it off the grill and finish in the oven.
